Convection oven, will it ever be clean?
Melissa93 replied to Melissa93's topic in Super Sensitive People
Thanks for the advice Scott. I’ve been using it on bake setting with food wrapped in foil which is going well. I’m just hoping it will go well without the foil as well, as it’s hard to bake every dish or like a pizza that way haha. And I agree, it must eventually break down or sit on my food enough that I wouldn’t get a response anymore. Just knowing when is... -
Refractory Celiac?
Melissa93 replied to J Morgan's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Totally agree. Same goes with meat, thousands of years ago occasional meat from a lean gazelle was totally okay in our diet, but the way we’ve been growing animals for our consumption, the processing of the meat and the amount of intake has been proven to increase our risk of varied disease from cancer, diabetes to Alzheimer's. I myself eat 90% whole foods p... -
Refractory Celiac?
Melissa93 replied to J Morgan's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Good luck! When I first got diagnosed I wasn't able to eat any higher fructose or lactose products because it would cause me a lot of pain for hours, which included grapes, apples, mangos etc. I went back to eating low fructose fruits like blue berries, strawberries, raspberries, greenish banana. Just in case this helps as your vili are blunted! -
Refractory Celiac?
Melissa93 replied to J Morgan's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Honestly I think you both need some actual science nutritional education if you think this. Our large intestine works entirely on fiber, which is solely in plant food (not just vegetables, but all plant food). You need a healthy large microbiome in order to have a good digestive system and overall health, which you can't get from animal based products. Not... -
Convection oven, will it ever be clean?
Melissa93 replied to Melissa93's topic in Super Sensitive People
I meant 500C/850F for 2 hours. Which is supposed to be high enough to break down gluten protein. -
Hey everyone, I recently moved to a new apartment and didn't realize it had an convection oven. I'd never had one before and didn't think about how it is very difficult to clean. I feel like I've tried everything to clean it, but I still get symptoms whenever I used the convection setting (which is the regular setting). Has anyone dealt with this...

Refractory Celiac?
Melissa93 replied to J Morgan's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hey! I'm so sorry to read all the trouble you've had with your health lately, it sounds terrifying and I hope you're okay considering everything that has happened. I can't give you any advice based on all your neuro problems, but I've had long covid myself starting March 2020 and had a lot of GI problems from it as well. I think you should really... -
Hey! When I read about the respiratory infections I automatically thought IGA deficiency. I have partial selective-IGA deficiency, my levels are (too) low but not as low as your daughter. My celiac panels came back positive, even my IGA ones, but only JUST above the standard. They told me that this was because my IGA was low as well. I didn't get a scope...

are you going to take the vaccine
Melissa93 replied to DJFL77I's topic in Coping with Celiac Disease
Yes weird. You could always check with a primairy care doctor if you have one. Happy that most of the pain on your injection side has subsided, so at least that's not really concerning. I had some trouble with shortness of breath as well after my vaccination, but I had a very bad case of covid in March 2020 and it left me with a lot of lingering symptoms... -

Melissa93 replied to DJFL77I's topic in Coping with Celiac Disease
How are you doing now? Seems a bit odd to just have those pains at one side of the body in combination with shortness of breath. But side effects are very different per person. I'm fully vaccinated with Pfizer and 2nd shot was definitely something lol. I also had covid and am in my 20s, so they assumed I was going to have more response. I had a fever... -
Yes same problem here. I didn’t get my vit E levels checked, but my vit D is normal-low and I’m working on getting that into the 70s region but got a road ahead of me with that. Vitamin A is deficient and it’s especially troubling with my view I feel like, and it must have been around for a while as its stored in the liver. I am taking a vitamin A supplement now, ...

Are you allergic to this? I would definitely tell the nurse for sure! -
Allergist recommendations? Anyone?
Melissa93 replied to Lotte18's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I buy whole foods gluten free white bread, because it's the only bread I've found so far withouth sourghum or millet. But I usually just prep lunch once a week making lentils, roasted sweet potato, beets, or frittata with like broccoli, leak, peas, collard greens and cook up some fresh green veggies every day. Hoping that I can tolerate at least millet again... -
Allergist recommendations? Anyone?
Melissa93 replied to Lotte18's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Sounds stressful if you would be allergic to rice, it's definitely in a lot of processed foods at least that are gluten-free. I find myself reacting very heavily on sourghum and millet, which was hard in the beginning with trying to find a gluten free bread and cookies etc. I've definitely had trouble in the past with digesting raw nuts and raw... -
Allergist recommendations? Anyone?
Melissa93 replied to Lotte18's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Did you find an allergist? I live in NYC as well and just met with an allergist/immunologist last week. I got diagnosed this November and also new to the game, I realized that quite some naturally gluten free produce I had in my house still had cross-contamination (basically everything from whole foods). I order my beans, seeds, nuts, grains and... -
Ttg levels
Melissa93 replied to Chris-B's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Thanks Kate! I will probably do so, now that I know how that works haha, it would be great to get some extra tips and tricks about eating out. I’ve already done a bit of research to slowly prep myself, but as I’m new to the diet and also have autism, it’s great to prepare so that I reduce the amount of uncertainty or unexpected questions and risks. ... -
Ttg levels
Melissa93 replied to Chris-B's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Oh yes 😩. I tend to want to google everything as well, but my doctor gave me a link to a website with explanation about immune deficiency like mine. Which was both comforting and worrisome lol. The idea just has to settle I guess. Its good to know that my immune-diseases and asthma etc are being caused by something, but its also scary. Luckily I am asymptomatic (m... -
Ttg levels
Melissa93 replied to Chris-B's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Interesting! I live in the US as well, but my doctor does not test for DPG. He usually test TTG-IGA (was 9 and now 1 within six months). Endomysical IGA was just ‘positive’ 6 months ago and they didn’t repeat that test now. Gliadin IGG levels were 5 now, which us normal. the only thing is that I am partially Selective IGA deficient, which they just ... -

Melissa93 replied to Chris-B's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Such big improvements! Can I ask you what your IGA (immunoglobulins A) levels are? Assuming they test those levels as well when you get your TTG-IGA levels checked? -

Do those AN-PEP enzymes work well for you? I haven't really gotten into enzymes or idk specific supplements when you get glutened, but I usually travel a lot with work (not right now still). Quite anxious about food outside of the house. -
Haha yes you're right, I'm from '93 so I'm 28 years old. Good idea of maying doing a vision exam, I haven't had one in like 15 years probably. Yes I miss dairy too sometimes. In my home country the Netherlands they sell a lot of regular dairy with the lactose taken out off it. But in the US it's all plant-based, which I love most of the time btw...

Anyone else feels different in another country?
Melissa93 replied to Melissa93's topic in Traveling with Celiac Disease
Hahah I think everyone has those feelings about other countries. I'm from The Netherlands and sometimes I see what they have there and I get so jealous for not living there right now. But I know celiacs that come to visit nyc and are sooo jealous of all the dedicated gluten-free restaurants here (which I must admit, is quite lovely). But tbh, it is... -
Anyone else feels different in another country?
Melissa93 replied to Melissa93's topic in Traveling with Celiac Disease
Hahah yes they do have those products, but like Scott said, there are also healthy alternatives. I’ve mainly struggled with having naturally gluten-free products in the house that eventually had trace gluten without labeling. Like my coconut oil or quinoa from Whole Foods. But happy to report that it seems that I found the culpit in my kitchen w... -
I'm pretty sure my grandmother has celiac disease. She says that her brother and her mother had it, but she's unsure of herself. 2 out of 3 kids have diagnosed celiac disease and my mother (the last one) is being tested now. Anyway she's 82 and eats a ton of gluten. She's very underweight but she did make it this far!
