  1. As I said earlier, with the carnivore diet you don't need to count calories or anything else, and the key is quality protein and especially healthy fat. Our bodies are smarter than we are and have an amazing ability to heal in spite of what we do to them. Once again all the best and hear is to your improved health!
  2. Hector, I hope you are feeling better. Have you considered the carnivore diet? It is the ultimate elimination diet. I am on it permanently, am slim and healthy and feel really good. You need to give it a minimum of a month no cheating, and see how you feel. No need to count anything, just eat until you are not hungry, it's extremely nutrient dense and satiating...
  3. Keep in mind that about 48% of celiacs react to casein, the protein in milk as if it were gluten as they have a very similar molecular structure, so casein may be the problem rather than lactose!
  4. Be cautious and careful. Certified gluten free oats made me violently ill! I am now completely grain free.

Plants with all their anti-nutrients/toxins are very hard on the small intestine, (think leaky gut, which was my problem), whereas meat and animal fats are entirely and easily absorbed in the small intestine, contain all the nutrients you need and are much more bioavaible than any plant base nutrients.
  9. I absolutely agree, eat whole foods that you prepare from scratch, and don't buy anything with a barcode. You only need to read the ingredients on foods with a 'gluten free' label, very scary!
  10. I don't worry about fiber at all. When I removed lectins/grains, the worst of which is gluten, and also 'healthy' greens, ie spinach which is very high in oxalates, my gut issues disappeared within about 24-36 hrs., it was amazing!   11. I got violently ill eating certified gluten free oats. I stopped eating all grains and eventually my health journey led me to a low carb/carnivore diet. My labs are perfect and feel great!
  12. Cook all your meals at home. It is too risky to eat supposed gluten free meals in a restaurant. Most restaurants have no clue at all about cross contamination, and the need to have a dedicated area with equipment and utensils specific for cooking gluten free. Nothing is more important than your health and feeling vibrant and healthy.
  13. I absolutely agree Laura. I am thriving on a very low carb/carnivore diet. When I removed all plants and grains from my diet, all my GI issues disappeared almost overnight, it was quite amazing! Also my joint pain from osteoarthritis is 98% gone as well. I am not anemic and all my labs are great. The best thing is I feel amazing!
