As usual, your wisdom is considerable! However, this article just struck me as too "us against them," or even smacking of tribalism, something the world DOES NOT need any more of. I know. This is not the place for politics, and I love that about this site. Sorry.

Can't believe this topic was worthy of a PHD dissertation. Eat what you need to eat, don't eat what you can't, and shut up about it. Better yet, laugh along with everyone else. A good laugh is gluten free.

What a hideous ordeal you have been through! As a retired RN, C-difficile comes to mind. This is severe persistent diarrhea that is only treated by antibiotics. Guest Laura, that struck me as so sad that you dislike eating food more everyday. Eating is supposed to be one of life's always dependable self gratifications. Should Celiacs Worry About Microbial Transglutaminase, aka 'Meat Glue'?

Just did some quick online research on transglutinase. Apparently, it is only in about .3% of the food we eat, and must be listed in the ingredients. Also, any food with transglutinase in it must be labeled "formed." The research on transglutinase and Celiac disease is not conclusive, but it is recommended that celiacs avoid it. I certainly will. I was pleased that The Olive Garden has an acceptable gluten free menue. I had the chicken parmesan, which came broiled instead of fried. As a newly diagnosed celiac, I am fairly appalled by the high cost and hideous taste of most baked goods. I did come up with a simple pie crust that, at least, does not distract from the enjoyment of a piece of pie. Thanks for the concern. However, since my numbers seem to be dropping so nicely,I think I will continue what I am doing, and make stricter changes if the TTIGA does not continue to fall rapidly. I am sure your nutritionist has calculated the calories you are taking in and made sure that you are getting adequate amounts to cause weight gain. In my experience it is sometimes hard to get enough daily calories when you are eating only whole foods without dairy. Also, what do I know, but I thought that that diarrhea implied poor absorption, and constipation...

Thank you so much for your lengthy reply. It is always encouraging to get advice from people who have seen good results from their gluten free diet. As I have mentioned, we live full time in our RV, and kitchen/counter/cabinet space is minimal. We do the best we can, and as long as my numbers are going down, that will have to be enough. We bought our toaster at Walmart! The problem is we live in a RV and counter space is minimal. I tried those toaster bag things, and could not get the bread to toast. It just got very hot. As an "old celiac," diagnosed at age 69, and basically asymptomatic, I can not imagine not being given the option of education about, and treatment with, the gluten free diet. My grandmother died in 1949 of "wasting." She was younger than I am now, and in hindsight, she probably had celiacs.- 15 comments
