  1. This may seem like a silly question. I was very recently diagnosed and have been reading alot on the boards about having other intolerances as well as Celiac. I am still trying to figure out how to get gluten completely out of my diet and as a result am still intermittently sick. I am pretty sure I am lactose intolerant since I seem to get sick every time I have milk/cheese etc. Beyond that, for the people who have other intolerances (xanthum gum etc) how did you know? What are the common other intolerances that I should look out for? Any advice?

  2. I was diagnosed around 1 1/2 months ago. I'm not even sure where to begin really. I've just been so depressed. Some guy at work who I never even speak to really asked me what was wrong. I figure I must really seem sad if some minimal acquaintance goes out of his way to say something. I was never a big meat eater so all this meat three meals a day every day is killing me. I know there are gluten-free substitutes for bread and things but at least where I live it's all extremely expensive ($7 for a loaf of gluten-free bread that doesn't even taste good). No matter how hard I try to avoid gluten I still seem to accidentally eat something with gluten at least once a week. Only now my body is more sensitive to it so i get much sicker than I did before. Everyone I know completely invalidates my celiac and acts like I'm making a big deal over nothing. People keep inviting me to restaurants where there's nothing for me to eat and then act like I'm a big drip if I say no. Everywhere you go this time of year it's all pies and gingerbread men and christmas cookies. I went to my in-laws for Thanksgiving yesterday and am still sick from dinner since my MIL couldn't be bothered to make anything gluten-free. I know I'm rambling. I just feel like I have noone to talk to and noone understands. Did you all go through this when you got diagnosed?

  3. I totally understand. I used to bake constantly before I was diagnosed around 1 1/2 months ago. My MIL gave me such a hard time because I didn't bake for Thanksgiving. I told her I would be happy to make something gluten-free. She quite pointedly said "absolutely not" I'm sure I'll get the same hard time for Christmas. I'm just going to make some gluten-free cookies and bring them over and not tell her they are gluten-free. :)

    My really sweet boss ordered me a salad from Fatz and went into great detail about NO CROUTONS, NO BREAD... and she requested that they mix it all in a clean bowl! My goodness, I love her!
  4. I'm so jealous! We went to my mother-in-law's for Thanksgiving. Absolutely nothing was gluten free and they kept offering me cookies. :) Even though I ate very little of what I thought might have been gluten-free I still got very sick. Oh well, sounds like the thing to do is have Thanksgiving at my apartment next year. :)

    i also had a great thanksgiving, brought my own food (most of which was prepared by my mom because she is great) to my husband's uncle and aunt's house. Turkey, cornbread stuffing, mashed potatoes, green bean casserole, gravy, nad pumpkin cheesecake. Appetizers include 7 layer mexican dip and hickory farms yummy treats.

    I was just wondering. Does anyone know if all of the honest teas are gluten free. Most of them are labeled gluten free so I just assumed this was as well but forgot to check. Now I am not feeling well and I didn't even have that much. The website claims that all of their teas are gluten free but it's not labeled gluten free and this is the only one that has hurt my stomach. Does anyone know?

  6. I was recently diagnosed and I have slipped a few times esp since I was a HUGE baker before. We always had fresh baked something in the house. On the plus side my husband has already lost a noticable amount of weight since I stopped baking. :) Anyway, I quickly discovered that getting super sick after eating something tends to suck the fun out of the experience. I think we have all been there.

    Don't be hard on yourself--use this as a learning experience and go on from here.

    Shortly after I went gluten-free, I "experimented" with a snack sized bag of Famous Amos Cookies. They tasted like metal, and I was in the bathroom shortly thereafter. :ph34r: Never knowingly ate another drop of gluten since! ;)

  7. I am going this Friday (the fri after thanksgiving) :) Whatever you can find out would be great! I am going with five non-gluten-free people so we are going regardless. I am also going to Rosa Mexicano on Dec 12th. I have never been so I am hoping there are things I can eat. I am going with 9 other people from work. The girl who invited me after the fact said "well there probably really isn't anything you can eat there but we are still going" and then gave me the option of backing out but made it seem like I would be the world's biggest kill-joy if I did. You would think people would be a little more understanding.

    Well, we ended up postponing until December 1 b/c everyone was so crazy this week, so that gives me a little more time. I havent had a chance yet to ask them about the menu but i work in the building so i really have no excuse! I will try to stop by this week and ask about the menu-- are you going this fri, as in the day after thanksgiving? I will try to get some info for you before then

    Jillian, i was thinking the enchiladas had potential, but i always worry about mexican... i'm glad you have heard good things though. i'll let you guys know what they say!

  8. i haven't been there, but sambuca has pasta. it's on 72nd btwn cpw and columbus. did u just move here? coming to visit? just get diagnosed?

    I am from New York. :) I work in Manhattan. I just got diagnosed. There was this pasta place that I absolutely loved that I so miss called Don Giovanni's in the 40's by 8th ave. I used to go there all the time but never understood why I would get so sick. So I am looking for a new Don Giovanni's that I can actually eat.

    i live in nyc and eat out all the time.

    these places have special gluten-free menus available:

    risotteria (village), peter's diner (upper east), sambuca (upper west), bistango (murray hill), puff and pao (village), and there are a lot more on these pages, if you look around...

    most restaurants i have been to are really accommodating too if i explain the issue. i especially like josie's (they use wheat-free soy sauce, so we can have their stir fries, yummmmm).

    there are also generally safe choices-- like ordering steamed food at a chinese restaurant and byo wheat-free soy sauce, going out for sushi (rice, edamame, raw fish-- all fine, just nothing marinated or with crab (which is usually fake and made with wheat) or with roe (which they put wheat into also))...

    Hey honey!! I haven't eaten there, but I've heard they are very accomodating and know of other gluten free people that have had success at the one on Park.

    I was looking at the menu for the new one the other day, and the enchiladas looked like they had potential.

    Since being diagnosed I have pretty much put myself on an extremely restricted diet. It seems like all I eat anymore is eggs, fish, yogurt and cheese since I know those are safe. I need to vary my diet a bit without having to worry about getting sick. I have actually been losing weight which in my case is not actually a good thing since I am already thin. I thought a Nutritionist would help but I need to make sure they are familiar with Celiac since it'll be kind of pointless if they don't. Can anyone help?

  12. I am still trying to figure this all out. I have tried experimenting to see what hurts my stomach and what doesn't. These days it seems like unless i have fish or meat or plain dairy with no bread or condiments I get a bad stomach ache. Generally all I eat now is tuna fish, eggs, yogurt and cheese. Like today I went to Whole foods in Manhattan and got shepard's pie (cuz i was getting so tired of tuna fish) which does not have bread or flour but does have soy sauce and my stomach feels awful to the point where i am debating leaving work. I guess I don't need an actual medical diagnosis but the health risks that come with having Celiac really scare me so I would kind of like to really know but not so badly that I am willing to make myself horribly sick for three months to find out. Does that make sense?

    Welcome.

    Being off wheat for a week might have made a difference to the test results, as I know the antibody levels drop over time when you avoid gluten containing food. You might have to ring the doctor back and get a copy of your results to work out which result came back high.

    In having said that, for that week did you only avoid wheat, or all products containing gluten, as in rye, barley etc?

    At times the results can come back a false negative, but not very often will they be a false positive.

    I guess in a case like this, you will have to ask yourself how much you need that diagnosis and whether it is worthwhile eating gluten again.

    But if you feel better avoiding wheat as you have been doing, have you considered you might have an allergy to wheat, and not so much the gluten.

    I had a celiac test a few months back. I have had a bad stomach for as long as I can remember but it got so bad I went off wheat at the suggestion of a friend and went for a celiac test. I don't have the test results in front of me since the dr didn't give a copy. Only one of the categories came back high but I had been off wheat for over a week. I do feel much better since I have cut gluten out of my diet. I pretty much had a permanent stomach ache before. But I am concerned that my test results are invalid since I was off wheat. I really don't want to get back on wheat and get re-tested since wheat seems to make me so sick. Any advice?

  14. I used namaste mix last time, white cake mix. It turned out well it makes a eight inch pan. I did alter it. I was making a strawberry cake so i poked holes in the hot cake and poured a little strawberry pop on it. Its really moist and best made the day of. My husband and daughter loved it. I didnt try it but Im on an elimination diet. I also poured vanilla pudding over the top and cool whip on top of that for a frosting.

    I have yet to find one that makes a good bigger cake since most of the mixes I found only go up to 8 inches and not a full size pan, hopefully someone else will chime in with it as Im curious too. Frostings are easy being gluten free.

    Do you want a cake decorator type icing to make a design or just a typical frosting to spread?

    Here's mine I use for decorating cakes-

    ICING TO DECORATE CAKES

    1 lb. powdered sugar

    1 c. Crisco

    1/4 c. water

    1 tsp. vanilla (add vanilla to taste, I like a little more)

    Beat for 5 minutes. Will get light and fluffy.

    BUTTERCREAM ICING

    1 c. granulated sugar

    1/2 c. butter

    1 egg white

    1/2 c. butter

    1/2 c. lukewarm milk

    1 tsp. vanilla

    Put all ingredients together in small bowl and beat for 5 minutes. At first mixture will look curdled but will smooth out with beating. Spread on cake.

    I am new to the forum. I was just diagnosed last month and I'm thrilled there is actually a place I can go and ask for advice. Anyway, this sat is my husband's birthday and I always bake him a cake but I want to make him a cake I can actually eat. He doesn't like chocolate. Does anyone have a good non-chocolate birthday cake recipe? Are there gluten free frostings that people like? Since he can eat anything and it is his birthday I really want to make this special so any advice would be greatly appreciated!
