  1. Seeing as we are in the middle of a huge winter ice/snow storm this weekend. I have my wild idea to make doughnuts. I want a recipe that you don't have to have a doughnut maker to use. There is one here on the site for doughnut holes......has anybody tried it?

Quick and Easy Donut Holes (Gluten-Free)

    Ingredients:

    1 egg

  2. I know that nursing homes currently don't seem to be able to comprehend the term gluten free. I am hoping that by the time that I need a nursing home they have it down pat.

I am sure years ago they had no clue about diets for diabetic people, people with low sodium diets and so on. However, they have learned with their learning curve. I hope it is the same way for gluten free diets.

By the time my generation gets in nursing homes, they will have a jillion food allergies and intollerances to be cooking for. They had better start practicing now :P

  3. Yesterday started a winter storm that is to bring fun things for the next 3 days!! BLEH! Yesterday was sleet, ice, and snow. Today is supposed to be more wintery mix. And even more on Sunday. Booo HOooo!!!

I'm staying inside and cooking up a storm incase I loose power ha Or maybe just get hungry ;)

  5. I think this topic has been brought up before to some degree, but I can't find what I'm looking for. My kids love wraps (more than sandwiches), and I have been looking for a recipe for a wrap that is poured (like a pancake), not rolled and cut. In the Bette Hagman cookbook I have they have a roll and cut version, and a pour-style one, but it was made primarily of bean flour. Unfortunately bean flour is not a big favorite in this house. So, I was wondering if anyone has one that they have tried that turned out good that used gluten-free flour other than a bean-based one.

    Thanks!

I'd be interested if you come up with one. I've never had crepes, but would a recipe for those work? Hummmmm....you have my mind going :P

  6. Hi, Amybeth, thank you for the informative post!

I am in Pittsburgh--is a 504 the same thing as an IEP?

No they are not the same. Depending on what they are written for, they can sometimes overlap or cover the same items. However most children do not have both. They have one or the other. Here are some definitions.

Section 504 is a civil rights law that prohibits discrimination against individuals with disabilities. Section 504 ensures that the child with a disability has equal access to an education. The child may receive accommodations and modifications.

Unlike the Individuals with Disabilities Education Act (IDEA), Section 504 does not require the school to provide an individualized educational program (IEP) that is designed to meet the child's unique needs and provides the child with educational benefit. Under Section 504, fewer procedural safeguards are available to children with disabilities and their parents than under IDEA.

This individualized education plan (IEP) describes the goals the team has set for the child for the school year, as well as any special supports that are needed to help achieve those goals.
  7. So today at school one of my Kindergarten boys decides to bring a firecracker to school!!!! We were packing bags to go home and he starts showing his firecracker to his friends. I immediately grabed up the "firecracker" and said that I would be keeping it and we don't allow "firecrackers" in kindergarten.

I know by now all of you are wondering why this story is funny.........................

well to a 5 year old a tampon sure looks a whole lot like a firecracker!! Yes, that's right folks. One of my boys had brought a tampon to school, complete with applicator. I suppose the string does look a bit like a "fuse" haha

I sent it home in an envelope with a note for mom to promise to tell him the story of "the time he was in kindergarten and took the tampon to school" when he's about 20 years old :)

Hope you got a good laugh. It sure made my day today!!

  8. Tomorrow is SO a snow day!

That arctic storm coming across the Pacific Northwest came down during our commute home (and pretty much only during that). Something around 6 inches of snow during those 2.5 hours. (Note that it usually only takes 25 minutes. <_< )

Given that there are plenty of cars stranded on the freeway, and more on the street coming up the hill towards our house, and the roads were icing over at 7pm, it's probably not going to be safe to go to work tomorrow morning. :P Given that our car is parked in a parking lot 2.3 miles away and we'd have to walk through the snow (again) to get to it (at least this time, *not* up the big hill  ), it might be kinda hard to get in anyway.

So it's a snow day!

Of course, our workplace (my husband and I work for the same company, same project, same group) "doesn't shut down due to adverse weather" but we "can flex our time to make up the time later in the week or take vacation time, but not sick time".

Yay for snow day! Too bad I can't go skiing. :P

Enjoy your snow day Tiffany!! Drink some hot chocolate and sleep in.

We are supposed to get ICE here this weekend......bleh!

  9. Hi Can someone suggest a substitute for graham cracker crumbs?? I want to attempt my old favorite 7 layer bar cookies--the ones made withs weetenede condensed milk!! Thanks

I LOVE those bar cookies.......when I make mine I use pamela's pecan shortbread (like pecan sandies of our gluten filled days). Crumble them up and put in the butter like always. It turns out great!!

  10. I would not have eaten it either. But I think - and I say this on here all the time - that it is *VITAL* that you make it clear that you will not argue with him about what is safe and what isn't. You make a choice, you stick to it, and he gets to either respect your choice or not respect it. Period.

The choice is yours alone to make.

The only decison he has is respecting it.

Debate over the matter should not center around whether or not it is safe. These are decisions that you make. You may decide, at that time, that you can't be sure something is safe, so you aren't going to eat it. But you're not sure, so you research it later, discover it is safe, and then next time, you have it. That doesn't mean you were wrong to not eat it the first time; you were right because you didn't know. What changed was your knowledge that allowed you to make a better choice.

    It's all about your choice.

    Tiffany-

It's funny that you say that because that's pretty much what I said haha He still was upset :P Hopefully after a few days he will cool off and have a bit more "respect" of my decision. It wasn't a personal attack against him to NOT eat the food he made. It was a personal decision to keep myself healthy.

  11. I stopped at a different grocery store today to buy some hamburger. I was looking around and discovered they had a whole "health food" section complete with frozen foods!! WOOT!!

I ended up buying some amy's dinners, stocked up on flour, got some waffles, vitamins, peanut butter panda puffs cereal, mccains smiles, ........oh did I mention I only went in for a package of meat!! :P

Needless to say my bill was a bit more but I was so excited to find tons of gluten free stuff!! I almost did the happy dance in the grocery store.

    -Jessica
