  1. If you are trying to make creme puffs. Analaise Roberts has a Creme puff recipe in her cookbook. I made it once and they were wonderful!! Terribly easy to make also!!

    I tried to make my cream puff squares recipe substituting a pre-mixed gluten-free flour mix. It's in the oven right now and I don't think it's going to turn out. Does anyone have a recipe for puff pastry or a suggestion on which flours to use? I think Bette Hagman has a puff pastry recipe in her "More.." book, but I only have her first volume. Does anyone have that one?

  2. This week we are having a pot luck breakfast. I need some ideas as to what to take. I really don't want to use a bunch of expensive flour to make muffins for people who don't need gluten free muffins. :P

    I am thinking maybe a crustless quiche? Anyone have a great recipe?

    Of course other ideas are more than welcome too!! Thanks for your help.

  3. My Dietician told me that Kellogs Corn Flakes were gluten free. I was so happy because I was really missing cereal for breakfast. I have not had any problems with it at all.

    Your dietician is wrong. They have malt. Malt comes from barley. Barley is not a safe grain on the gluten free diet. There are plenty of other gluten free cereals out there. Please don't risk eating a non-safe one just because you aren't having visible problems. You are still doing damage to your intestines.

  4. Hi there, I'm Kellie and this is my first post.

    My 6yo dd was just dx with celiac and I sure made her smile

    last Friday night. Friday night has always been our family

    go-out-and-have pizza night. And she was so upset that this

    may have to end. BUT, I discovered a homemade crust she

    really likes. I took the Gluten Free Panty's French Bread and

    Pizza mix and made the dough. Then I par-baked (half the time)

    it on a 9 x 13 in cookie sheet. We then went to our local pizza

    haunt, and they topped it with sauce and cheese. She was

    DEE-lited to say the least.

    The nice thing is that this way they did not have to mess

    with rolling out the dough and risk cross contamination.

    They popped it out of my baking pan and onto a

    clean serving dish.

    I have to say, I felt like a hero... at least for 5 minutes :D

    Oh, I meant to say that after they topped off the

    pizza, they then baked it for an additional 10 minutes or so.

    Be SUPER careful with doing things like that. There is flour all over in a pizza place. Also the toppings are at a huge risk for cross contamination. The workers dip into the toppings and then onto the gluteny crust. They could also be contamined with flour that is hanging in the air.

    If you are going to do that on a regular basis, I would sit down with the manager of the place and talk seriously about cross contamination. Maybe they can make sure they clean an area for her pizza and use some freshly opened toppings for her. I would really hate to see your little one getting sick.

  5. I think that the formal thank you was the right move. Another option is to use that gift cert. and take THEM out to eat and use it together. That way you are both getting some joy out of the gift and perhaps it will make you feel less guilty. Good food and good company go together right :)

    Okay - we went out to eat last night with dear friends to one of our new fave places Wildfire Grill. It was my fourth time there and their first. They were there upon our arrive as we met there and the female of the couple was holding a little bag but it wasn't that noticeable so it slipped my mind and we went in to enjoy a fantastic meal. After we all paid the server my friend handed me the bag and said Merry Christmas - slightly odd since this couple doesn't celebrate the season as they are agnostic. I tried to put the bag on my chair but she insisted we open it right then. Now I'm really feeling strange since we have known the guy for about 10 years and his new wife for three and we have NEVER exchanged gifts of any kind with them. Okay, I reach in and there are too small calendars - Monet for me and Dali for DH. Okay - these are not pricey and I like lots of calendars so I can use them. Next there is a long linen envelope........like something that would hold a gift check or card. There is no writing on the outside so I open it up and it's a $50 gift card to Wildfire - where were are still sitting. Now I'm mortified.........we have nothing to give them since we've never gotten a gift from them, we'd never think to get them anything and remember - they don't really celebrate Christmas like we do anyway. We thanked them profusely but DH never knew the amt. until we were in the car alone and he was perplexed when he found out. This couple is very conservative when it comes to spending money so they are the last people we'd ever suspect doing something this extravagant.

    We still don't know what's up but I mailed a formal TY note to them today. It was the most thoughtful gift I've been giving since my dx last Jan. but still.......I don't think it was appropriate given our history. What do you think and how have you handled the same situation?

    Jessica, I am signed up for email and this is my story as to why it's best to use the Promotional Codes and order over the phone instead..

    The website warehouse is different than the phone ordering warehouse....the website warehouse runs out of stock almost immediately as soon as they publish their catalog or put the item on the site. I have ordered items over website and found out that the item is "permanently unavailable" then took that same code number and ordered over phone and got the order in.

    The phone ordering requires a Promotional Code in order to get the discount that you'd get on the website. My feeling is that Penney limits the stock that they want to sell on the website - meaning that they aren't really interested in giving a discount on all their merchandise - only selected styles/items.

    My feeling is that when you order a lot, like I do, they will provide you with the Promotional Code in order to keep your business. I believe they discriminate between regular customers and those who only buy once in a while over the website.

    If the stock over the website is limited then Penney is controlling the sale terms, and the only way around that is to know the Promotional Code for the discount over the phone.

    As soon as I get a postcard I'll post what the code is & its expiration date.

    For me, getting a 30% discount can be more savings than free shipping...but thanks anyway.

    I am a big JC Penney mail order shopper and always use the promotional code in order to get their current mail order discount. However, most of the time I do not get my "post card which states the code" until after the sale expires. :angry: Either they mail out too late or my post office is lazy - no way to tell which is the reason.

    Anyway, I thought that if me and other JCPenney mail order shoppers would pool our resources we could alert each other when we know of a new "code" for their discount; this would help if someone else has the misfortune of missing the code name or number.

    right now I do not have a current code for them, but I had to order anyway. So if anyone knows a current code please share it along with its expiration date.

    This will really help those who are still Christmas shopping.

  8. Yep they are gluten free. They are SOOO yummy if you put them ontop of a batch of gluten free pantry's chocolate truffle brownies JUST as they come out of the oven. They melt over the top. Then frost with chocolate frosting.......OMG!!!! Sinful!

    Does anyone know right off hand if the Junior Mints are gluten free. On the box it says Allergy information manufactured with same equipment as milk products. If anyone knows for sure I would appreciate it. Thanks.
  9. Actually a couple will do, make a great gift for my dad for his birthday and Christmas. He's a great chef, so skill level doesn't matter. He's been to cooking school and even owned a resturant, but stopped when he moved.

    I looked at amazon .com and there are so many.

    In my opinion the best cookbook is Annalaise Robert's Gluten Free Baking Classics. Amazon carries it for 11.53 and it is a WONDERFUL cookbook. Everything I have made turns out perfect and gets rave reviews.

  10. I am seeing Soybean oil in a lot of foods. It this ok to eat? I know that soy sauce is bad and soy is ok...HEL :blink::blink: P I am so confused!

    In terms of having celiac disease there is nothing wrong with eating soy. The problem with soy sauces are that many contain wheat which IS a problem on the gluten free diet. San J makes a wheat free tamari soy sauce that is great. I believe wal-mart great value brand soy sauce is also gluten free (check the label for the words "gluten free").

    Many people, both celiac and non celiac, have allergies to soy. If you happen to be one of those folks, then stay away from it. Otherwise on the gluten free diet it is fine.

  11. Did anybody else happen to catch the segment on Celiac this morning with Dr. Emily Senay? It was a pretty good segment. Short, but informative. Great to get the word out there......hopefully we will keep becoming more and more mainstream!! YEAH!
