  1. Since it's Kraft I'm assuming it's okay, but just checking to see if any of you use Kraft Miracle Whip and say it's okay?

    I have a Nacho Beef Casserole I'm making tonight and the recipe specifically calls for Miracle Whip and not mayo...

    Yep I use Miracle whip with no problems. As with any kraft product all you have to do is read the label for any gluten containing ingredients. Kraft is a great company that clearly labels!! YEAH KRAFT!!

  2. I've had two posts deleted. Nothing obsene - just one was to get rid of flour and one was to contact another member about autism (which is why I'm on this board - thank you to everyone for the help that I've received about the gluten-free/CF diet).

    Is there a way to send a personal message to someone on the message board?

    I would imagine that the post selling the flour got deleted. I'm pretty sure I remember it being reported. It isn't allowed on here to sell items. If you read the board guidelines it says that posts for personal gain are not allowed. Selling things =personal gain.

    I'm not sure about the post for autism. The best way to find it would be to click on your name and look through your posts.

  3. That is pretty ironic that Dr. Green is on an Oprah produced program. A year or two ago, the satelite sisters, who had an oprah magazine column got themselves into a stink in the celiac community for something dumb they said They made some comments about the parents of celiac children which of course upset everybody and had them writing into the magazine. Just funny that this segment is also an oprah production :)

    Hang in there Victoria. It DOES get much easier. This is a great place to learn and ask questions. Things are very overwhelming in the beginning. You will quickly learn to be a label reader. For now stick with whole foods (fresh veggies and plain meats) until your tummy heals.

  6. Dave mowed our grass on Friday, I think it was. Every year we wonder if we'll have a White Christmas. It's been quite awhile. I WANT SNOW!!!!! Lots of it -- like when I was a kid -- and we would get to go sledding . . .

    This is great -- when my kids were younger, it snowed, and I said that I knew of a hill that we could go to that was PERFECT -- and no one really knew about it! So, I pack up everything, and we head out . . . . about 20 minutes into our play, my father shows up -- with the thermos in hand. And a bag of mini marshmallows. When I was a kid, he would always make sure that we had hot chocolate whenever we went sledding or ice skating. Wasn't that sweet? It made me cry.

    I'm trying to figure out a way to put rudders on my wheelchair -- I think I have a plan, although I MAY have to invest in a seat-belt for my chair! If you guys thought they got out of the way for me in Vegas when I was tipsy, just imagine me on a sledding hill in a rigged wheelchair! HA! :lol::lol::lol::lol::D

    I do believe that you will need two things

    1st a helmet

    2nd a video camera so you can tape this and send it into america's funniest home videos and win $10,000

    This whole idea sounds like something off of a National Lampoon's movie LMAO!!

    I drink ocean spray cran-raspberry with no problems. It is pretty good and not as tart as just plain cranberry.

  8. atleast i think hillshire is the company im thinking of, im wondering about there beef logs, like those things u buy in the tubes that most people cut up and put on crackers, ilove those beef logs anyone know if they are gluten free tis the season for them to be on sale

    The only things that hillshire farms says are NOT gluten free are their corndogs and beer brats. Otherwise eat up. I love their products. I've never had any trouble with them.

    They make a beef log and it is good.....I eat it with cheese mmmm

    We had our first snowfall before Halloween, and it hasn't left. Got a lot of snow over the last couple of days, and even after using the snowblower yesterday, we still had deep drifts and had to shovel the walk and (long) driveway again today! Got to a high of -8C today...should warm up to 2C tomorrow. Ugh...6 more months of this to go!

    It isn't supposed to accumulate or stick. However even the sight of snow means that real snow is on the way someday soon. It will be cold and slick and burrrrrr did I say cold??!!!

    Snow is beautiful if you can stay inside until it melts. UGH!!

  11. This recipe is from Open Original Shared Link submitted by Amy entitled Gluten free yellow cake. I've only ever made this as cupcakes and it is phenomenal, absolutely the best... Don't be scared off by the mayo, you can't taste it in the recipe. Be sure to use full fat mayo, no light stuff or it won't turn out.

    INGREDIENTS

    * 1 1/2 cups white rice flour

    * 3/4 cup tapioca flour

    * 1 teaspoon salt

    * 1 teaspoon baking soda

    * 3 teaspoons baking powder

    * 1 teaspoon xanthan gum

    * 4 eggs

    * 1 1/4 cups white sugar

    * 2/3 cup mayonnaise

    * 1 cup milk

    * 2 teaspoons gluten-free vanilla extract

    DIRECTIONS

    1. Preheat oven to 350 degrees F (175 degrees C). Grease and rice flour two 8 or 9 inch round cake pans.

    2. Mix the white rice flour, tapioca flour, salt, baking soda, baking powder and xanthan gum together and set aside.

    3. Mix the eggs, sugar, and mayonnaise until fluffy. Add the flour mixture, milk and vanilla and mix well. Spread batter into the prepared pans.

    4. Bake at 350 degrees F (175 degrees C) for 25 minutes. Cakes are done when they spring back when lightly touched or when a toothpick inserted near the center comes out clean. Let cool completely then frost, if desired.

    That is a good recipe. Much like a twinkie consistency..mmm good stuff.

  12. My husband just got off the phone with one of there bakeries and she says they use a dedicated area and what not for these cakes. I guess hy-vee themselves don't make the cakes they just decorate them. We live in eastern Iowa and they order them from gluten free bakery in DesMoines and they deliver them to HyVee. Not every hy-vee in the area does this though. My problem is that niether of the hy-vees could tell me if the cakes tasted good or had a decent texture.

    That is great that they are "aware" enough to have a dedicated area. In reguards to the taste, If you slap enough frosting on anything it tastes good :P

  13. Both of our daughters have a birthday party this weekend. I called HyVee and they do make gluten free cakes in there bakery. I don't know of anyone who has tasted one and wondered if any of you had? If you have what was your opionion of it.....what is the comparison to a non gluten-free cake as many of the people there are used to regualar cake but we do have ourselves as well as a few other family members who are celiac including one of our daughters that will be there. I don't want to waste $25 on a cake that will end up in the trash!

    Wow, very interesting. I had no idea that Hy-vee offered that. I guess I would be paranoid about cross contamination though. They probably use the same icing to frost gluten filled and gluten free cakes. I would be worried about their work surfaces being full of crumbs. Unless they had a dedicated area with dedicated tools and new frostings I would just not be able to buy it.......
