  1. The orig recipe came from the back of a ener-g potato starch flour box. I added the pineapple and coconut and raisins because I like those things....and think it makes it even more yummy!! My family thinks this cake is great.....they love it.

    Carrot Cake

    (4 ) eggs

    (1 cup) melted margarine

    (2 cups) sugar

    (1/2 cup) Potato Starch Flour

    (1-1/2 cups) White Rice Flour

    (1 tsp) baking soda

    (2 tsp) cinnamon

    (dash ) salt (optional)

    (1 16oz can) drained cooked carrots (mashed in food processor)

    (1 1 1/2 oz box) Raisins

    (1 8oz. can ) Crushed Pineapple (drained)

    (1/4-1/2 Cup) Coconut

    (1/2 tsp.) Vanilla

    Preheat oven to 350 degrees F. Beat eggs until peaks form. Thoroughly mix in margarine. Sift dry ingredients together and add to egg mixture. Mix well. Mix in carrots until blended. Mix in pineapple, raisins and coconut. Bake in greased 9" x 13" x 4" pan for about 30 minutes or until firm when touched on top.

    Frost with cream cheese frosting

  2. Armetta-Ore-Ida is not one of the companies that has obvious glutens on their labels. They put out a gluten free list, which can be recieved by e-mail and snail mail. They have a list online, but it is not nearly as long as the one that they will e-mail out. There are several of their products that "seem" to be gluten free by reading the labels, but in fact they do not call them safe.

    I had bought their frozen mashed potatoes once, read the bag and thought "wow looks great, nothing offensive on the label" ate them and got terribly sick. Gave them a call to check, and sure enough they were not safe.......sooo moral to the story is follow their gluten free list.

  3. Hillshire farms has some polish sausage and some sausage with cheese in it that are pretty good. They go well on the grill. I also put burgers, chicken, steaks, make kabobs. Fruit on the grill like pineapple and strawberries.........veggies there are SO many options.

    We just got a new gas grill and we want to keep the grill gluten-free for our 12 year old son but my husband wants sausage and such. What good gluten-free meats do you all use for the grill. Thanks for sharing.
  4. Use the grocery store ad to plan your meals for the week. Use the products that are on sale to make your meals.

    Don't let leftovers go to waste. If you can't eat them before they go bad, put them into gladware containers in the freezer labeled with the name of the food and the date that you froze it. Use those meals for lunches, or times when you don't feel like cooking.

    Buy multiples of items when they are on sale. Many gluten free items freeze very well for later.

    Buy a deep freeze or chest freezer. This is a great place to keep all of those foods you stock up on and leftovers you are freezing.

    Buy in bulk when possible. I buy my favorite mixes in bulk and it saves quite a bit of money.

  5. Guac doritos are my fav too and I can still get them here!!! I live in Kansas. Bought a bag last night at the store. I can't wait to turn my fingers are green hahahaa

    My favorite was the Guacamole flavored doritos, unless I guess they discontinued them. Can't find them anymore. Guess that's an acquired taste =P So, now my favorite is the Cheddar & Sour Cream that Lays carries.

    First, let me introduce myself. My name is Melisa. I am a classically trained chef and am currently studying to become a registered dietician. I am in the process of being tested for celiac, but regardless of the results will be implementing a gluten-free lifestyle immediately following all testing. I am married and have two daughters, ages 3 and 5.

    I was wondering if anyone would be interested in me posting daily/weekly gluten-free meal plans, including shopping lists and recipes? Although every recipe would not work for all celiacs, taking into consideration the wide range of other food allergies & intolerances, most would work for many.

    If anyone is interested, I would be happy to post them as I create them, I just don't want to waste what little energy I have if nobody is interested.

    On what basis do you say Heniz Organic has gluten? The only thing suspecious I see on the label is viniger.... ? Did you check with Heniz or some such?

    As to Mayo, I find light mayo sometimes have 'suspecious' ingrediants. I can't say for sure it's gluten though.

  8. The labeling on Kozy Shack has said gluten-free for as long as I have been eating it. (at least a couple of years) Gotta love that!

    Just want to quickly comment... I had always known it was gluten-free, but I just looked at the ingredients list to be sure and guess what? It had "Gluten-free" written below the ingredients list! First Stax, then some other companies, now even the chocolate pudding--we're making great strides with these labels.
  9. I had just seen your post and decided to try to help ya find it!! I had been craving eggrolls some time back and made some. Actually took a couple out of the freezer today and had them for lunch mmmmmm!! Jealous?!?! :P

    Strange how we both went searching for egg rolls at the same time.

  10. Here is 2 different ways that I make enchiladas:

    First one is like a caserole:

    Layer bottom of pan (sprayed with pam) with tortillas, rip some apart to cover whole bottom of 9x13

    Next put layer of sauce

    layer of meat

    layer of cheese (I prefer velveeta)

    top with another layer of tortillas

    repeat layers until you are either out of room in pan or out of ingredients top with more cheese!! mmmm

    then bake for maybe an hour or so at about 350 or 375 to melt all the cheese

    2nd recipe:

    pour a small amount of enchilada sauce into a 9x13 pan cover bottom of pan, but do not have tons of excess

    get out a large plate pour some enchilada sauce onto the plate

    dip tortilla into sauce coat both sides of tortilla, fill with meat and cheese roll and put into a 9x13 baking pan

    continue this process until you have a full pan

    pour remaining sauce over enchiladas and top with more cheese

    bake at 350-375 until cheese is melted (maybe 30min or so)

    I usually make my own enchilada sauce:

    2 sm. cans tomato sauce (I use contadina)

    Tablespoon oil

    2 T. chili powder

    1c water or chicken broth

    1tsp garlic powder

    2T corn starch

    1C water

    In a saucepan I put in the oil and chili powder. Keep stirring it because it will burn if you don't. This gets out the oils and flavors in the seasoning. THEN add in your water or broth. and bring to a boil. Disolve your cornstarch into the 2nd cup of water add this and also the garlic salt. Keep stirring and it will thicken.

    Easy as can be to make!!

    YES, you are right he is... The wedding to Bride-B*tchzilla was [called off]. We are so happy! The band just got back a few weeks ago from a Euro-tour and daddyO flew home to spend a few weeks with him, and then the band left on Tuesday on another USA tour.

    AND, only one big problem he and daddyO are NOT CELIAC's they've been tested.

  12. I think some of the celebrities with celiac disease [are here] on this site, lurking and looming reading about and discovering many of the things we have. Remember if 1 out of 200 people have it un-DX what do the numbers say? But they the celebrities are hidden in silence afraid of what will happen to their career. They might have an agent, a family member or someone who they confide their secrets with. And they might me here posing as a Celiac.

    I've have celiac disease a little over 5 years (perhaps longer and I didn't realise it)... I thought back today of how I found this site and never signed up to joined until a couple years after. I would come to this site anonymously and read the posting and learn from all the stories and info posted here. Perhaps that is what many of these celebrities are also doing? Plus I think many of the doctors and their staff come here too...

    Isn't your brother a famous band member? I remember you posting about that some time back (his wedding drama). Possibly you could convince him to get tested, we could all HOPE He has it, and he could be our famous celiac spokes dude :) haha

    Then celiac could be ROCK AND ROLL COOL!! :lol:
