  1. I like the Ener-G granola bars. They do come in a large package, and you would just have to sandwich baggie them for take alongs. I also sometimes have the Kraft southbeach diet meal replacement bars. There are a couple that are gluten free, just read the labels.

    -Jessica

I'm looking for some good "granola" bars. I often stop in at health food stores and try to pick one up when I'm hungry. Since they are each close to $2, I hate to buy a new one, take one bite and decide I can't possibly eat it. I don't like things that are too sweet. What are your favorites? Are they any "mainstream" bars that are gluten-free, like cliff, luna?

So far, I like Gertrude & Bronner's Magic Alpsnack, Coconut, Pineapple & Mango (one flavor), and I've tried the Larabar Apple pie.

  2. I buy the chicken nuggets and the fish sticks on occasion. They aren't anything that I buy on a regular basis. They are more of a "treat" junk food for me.

    -Jessica

has anyone had these? are they good? I need things for a quick / snack lunch. I've been going all day till supper without eating because i can't find anything quick, I spend enough time making supper everynight lol
  3. Is there some reason that you aren't eating chocolate?? Hershey's bars are safe. Have some chocolate and cure that craving. Enjoy!

    -Jessica

HI, I"ve been craving chocolate like it's going out of style for the last two months now. Wowzers, what's that about?

That is the link to the old board. I was on the old board for quite a while also before Scott moved us over to this new updated one. Lots of good info.

    -Jessica

I joined three months after the creation of this board.

Before that there was an old board with an outdated layout, and it is still around--I can find the link if you want it--but it's no longer used, obviously.

I know Mariann (gf4life) was on the previous board, though I'm not sure how long. There are undoubtedly others.

  5. I tried one once, it wasn't bad at all. It was a chicken something with broccoli. I looked at their new asian inspired ones, of course all contain wheat (soy sauce). bleh! I would try the chicken one (can't remember the name) again. It's good in a pinch.

I also like their meal replacement bars. A couple of those are ok also. They are sold in the slim fast/weight loss section of the stores. I eat them for breakfast on the go occasionally.

    -Jessica

Ok, so on these frozen dinners that my hubby eats all of the time, it always says whether it has wheat or not and I know Kraft will clearly list wheat. However, does anyone else eat them? I'm not sure about cross contamination, although I enjoy many Kraft products with no problems whatsoever.

Anyway, if anyone does eat the South Beach Diet frozen dinners that do not have wheat, would you let me know? I'm dying to try one! Or, let me know if you have any info.

  6. I got the idea from top secret recipes, then changed the recipe to suit my own needs/tastes. Like they had a cup of water in their recipe, I put in milk because it added more nutrients. I also didn't add in egg whites because the thought just grossed me out! I'm one of those people who tweaks recipes to make them what I think sounds good! ha Enjoy.

    -Jessica

    Jessica,

Did you find that off a specific website. If so what was it because I would like to get into this smootie thing. :P

They sound so good. I have to go shopping today :D

  7. Orange Julius

    1 ½ c. Orange Juice

    ½ c. Milk

    1 tsp. Vanilla

    ¼ c. Sugar

    1 ½ c. ice

Mix all ingredients together in the blender leaving out the ice. When sugar is dissolved add in ice and blend until frothy. Makes 2 servings.

I made this one for breakfast this morning. It tastes like the orange julius you can get at those shops in the mall. Good stuff!!

    -Jessica

I'm fairly new to all of this and have been relying heavily on homemade fruit smoothies as both a breakfast beverage and an after-dinner dessert. These have been a lifesaver for me. They are filling, somewhat satisfy the urge for sweet, and seem to be soothing to inflamed and swollen intestines.

I make them with frozen, organic fruits (pineapple, mango, blueberry & banana), some rice or almond milk, and a little frozen juice concentrate. Delicious! But I’m getting bored with them too, as they pretty much seem to taste the same no matter what fruits I use. I wondered if others here liked smoothies and had any good recipes or combination suggestions. (Hopefully without egg, dairy or honey) :)

  8. I somewhat know how you feel. I used to LOVE to bake yeast breads. I could make some beautiful things!! Everybody loved them and begged for them often. Gluten free baking is a WHOLE different world.

Hang in there, as time goes, your taste buds will change and you won't think that it tastes like crud! Breads like banana bread with fruit in them actually turn out the best. I think that the fruits give them moisture and make them yummy.

I remember on a couple seperate occasions I REALLY made some nasty things. One I tried to make bagels. That was SUCH a disaster. It was SO much work for these nasty little circles that I just threw out! The second one was trying to make cinnamon rolls. The dough stuck to EVERYTHING but the pan haha Both of those experiments went into the trash. OH well, I still laugh about them.

Just keep experimenting, that is 1/2 the fun of cooking sometimes.

    -Jessica

Let me preface this by saying that I am an excellent baker, fabulous. I was looking into pastry programs at culinary schools, I even applied to one. Everyone raves about my cooking, and especially about my baking.

I can say this in all honesty, and without modesty, because I did all of this fabulous gourmet cooking with wheat flour. <_<

I made my first attempt at true gluten free baking this evening, with a simple banana bread. I figured my mourning period over wheat was about over and I had some bananas sorely in need of bread making, and I hate wasting food.

So I found a gluten-free BB recipe on the celiac site and decided to try it, I used Bob's Red Mill flour blend or whatever it is.

Was it a failure? No. It rose beautifully, is nice and springy, and is a perfect golden brown.

It just doesn't really taste like anything, and my husband spit it out because the texture and aftertaste were wierd. I just don't know if I can emotionally handle gluten free baking, but I can't make wheat stuff, just deglutening my kitchen and walking down the bread aisle at HEB made me sick!

It's just that baking is my talent, my calling, my true love. Even if I suck at everything else, baking is what I knew I could do better than pretty much everyone I knew.

The bread isn't bad, really, but it's not my bread. :(

  9. Make sure that toys and such are washed on a regular basis. Even preschoolers can still be very oral (meaning they like to put everything into their mouths). With all of the gluteny snacks the other kids eat, their gluteny hands all over the toys, and then one goes into your kiddoes mouth and POOF!!

Do they brush their teeth at school? toothpaste and closeness of everybody elses toothbrushes.

    Crayons

paints (regular not just finger paint, kids still dont' use the brushes ha )

Just make sure that they have him wash his hands very well before snacks and meal times.

    -Jessica

In an effort to be as through as possible, can you suggest other non-food items in addition to the list I've started below that I should check out at my son's preschool in terms of possible harmful gluten-containing sources?

    paper towels

    napkins

    paper plates

    hand soap

    playdough

    finger paint??

    glue??

    other art supplies????

Am I missing anything? Am I going overboard with worrying about the above.

    Thanks again for your help!

    Rebecca

  10. McDonald's says it french fries do not contain gluten. The company said Dr. Steven Taylor of the Food Allergy Research and Resource Program of the University of Nebraska conducted tests in recent days and found no gluten in the chain's french fries or the cooking oil used by the restaurants.

That little snip came from the link above. However, I would think that more than one article would have picked up the info, so I'm wondering how they got the info without everybody else knowing too!?!

    -Jessica

  11. Here is a quote from their website

Bob’s Red Mill stone grinds flours in a dedicated room for the production of its gluten-free line and performs batch testing before processing and after packaging. The company adheres to the Codex Alimentarius standard – the international gluten-free food standard for manufacturers. While the current Codex gluten-free standard specifies a gluten limit of 200 parts per million (ppm), Bob’s Red Mill’s gluten-free products consistently fall below 20 ppm.

I use bob's all the time with no problems.

    -Jessica

I see a couple of people have mentioned below that they are nervous about using Bob's Red Mill gluten-free flours. Is there a problem with their gluten-free line? I thought their gluten-free line was totally separate from their non-gluten-free line. Was there an issue at some point in the past? Thanks.
  12. I made these a few weeks ago, they were GOOD!!

    1 cup gluten-free flour mix

    2/3 cup cornmeal

    2 Tbsp sugar

    1 1/2 tsp baking powder

    1 tsp salt

    2 Tbsp shortening

    1 egg

    3/4 cup milk

    1 pound hotdogs

    cooking oil

Combine flour mix, cornmeal, sugar, baking powder, xanthan, salt and mustard in a bowl. Cut in shortening till mixture resembles fine crumbs.

Beat egg and milk in a separate bowl. Add to dry ingredients.

Dry hot dogs with a paper towel and cut into 1 inch long pieces.

Coat hot dog pieces well with batter and deep fry in hot oil (375 F) till golden brown.

  13. Party days at school are always WILD!! The kids are super hyped up for the party, the teachers are worn out from the hyped up kids!! It is easy for accidents to happen on those days.

My suggestion would be for you to volunteer to help with party days. Be right there so that you are sure your daughter gets her gluten-free cuppey cakes and cookies. Not to mention kids LOVE when their moms and dads come to school to spend time with them. It is a win/win for everyone.

Glad to hear she is feeling better.

    -Jessica

I thought I would share this with those who understand! My dd was given a regular cookie at school on friday. It was a Valentine's day party and I brought her a gluten-free cupcake, but there was a sub in her room (the regular head teacher was also there) and she gave dd the cookie on accident. They realized it right away and she only took one bite, but she has been sick since Friday evening. She has been complaining off and on of a tummy ache and has had diarrhea. She has also been ravenous, which was exactly how she was pre-gluten-free diet. She just doesn't feel well and I don't think she knows what she wants/needs to help her feel better so she wants to eat. She was miserable tonight before bed and I feel so bad for her.

I also have some guilt because I am usually really good about reminding her teachers about her situation, but I didn't this time and really thought it would be ok since they have had Ella all year. This is the first time we've had a problem at school. I know accidents happen, but I hate to see her feeling sick. Luckily she hasn't been sick the whole day. She seemed to feel totally fine at times and then would just start feeling yucky. She didn't sleep well last night and didn't nap well today though. Hopefully tomorrow will be a better day!

Anyway, thanks for listening to me vent!

  14. These are things I'm all well aware of, however Clan Thompson is a pretty reliable source for info. SOOO I'm passing it along. I would really hate for someone to get glutened due to lack of info. The post DOES say "Even though the ingredients appear to be gluten-free, Post cereals is now stating that

the"pebbles" cereals are not gluten-free." Meaning, it looks gluten free but it's not. The date they verified was feb 6th (just recently). Anyways, hope the info helps someone, I know I won't be buying anymore until I give a call to the company to verify.

    -Jessica

Umm, that cant be, unless they changed the ingredients from the boxes I have in my kitchen right now. I check the ingreditenst everytime I by it.

    Coco Pebles

    Frutiy Pebles

And post is a KRAFT company, they would disclose wheat.

  15. I recieved a post from one of the members of my yahoo group that I run (USASillyYaks). They posted this NEW info on Fruity and Cocoa Pebbles:

I was just sent this today from Clan Thompson:

Even though the ingredients appear to be gluten-free, Post cereals is now stating that

    the

    "pebbles" cereals are not gluten-free.
