Kraft has also just started selling individual packets. They come in a box of 10 or 12 and are GREAT!!

I think that the CSA book is great for a newbie. It really lets you see that life is not over because you can't have gluten. It shows several of the regular mainstream products that you can purchase. I called it my gluten free bible for the first two years!! I think it's well worth your money as a newbie.
As previously stated you still need to do alot of calling on your own to find out the extra products because not everything is listed, but it's a great start.

1) Chebe Bread, has an aftertaste of licking a battery (metallic). GROSS!!!!!
2) Ener-g Bread.....ok MOST glutenfree breads BLEH!
3) Annies Cowgirl Ranch Dressing.........just plain nasty!!!

Celiac Disease isn't something that goes away. Doctors used to THINK it went away, but it doesn't. If she had it as a baby, she STILL has it. Convince her to go gluten free with you, otherwise she is doing terrible damage to her body!!!
On the topic of the question. It wasn't really something I had to tell my family, they already knew. I was sick , very very very sick. They knew that this was going to make me feel better so they are supportive.
It takes time to learn all the "tricks of the trade". Sooner or later they will get the hang of it, in the meantime you have to keep reminding them.

*Use lettuce and do rollups
*Do rollups without the lettuce (lunchmeat, cheese, squirt of mayo)
*Use corn tortillas
*Make quesadillas and eat them cold like a sandwich
*Use the gluten-free bread and make sandwiches
*Cold bbqed or fried hamburger and ketchup
Throw in a sandwich bag of chips or some veggies and ranch dip. Just make sure you always use his ice pack and you should be fine. Also think about freezing a bottle of water and using that as his drink/ice pack.

My husband crushed up Corn Chex and added a splash of milk,
Chex are not gluten free. They have barley malt extract in them which is not safe for the gluten free diet. You can read the corn chex label here: Open Original Shared Link
Some other alternatives for meatloaf and meat balls are quinoa flakes and minute rice

Annalise Roberts one of the food philosopher sisters created a wedding cake recipe for me to use for my college graduation. It is awesome!!! I adapted it a bit from her recipe and I had people (civilians )(loved that you used that term) BEGGING me for the recipe!!! I have the recipe that I use posted on my website USASillyYaks. I was the one who found the mistakes and was told by corporate that they would be pulling the menu's with mistakes and replacing them with correct ones. HOPEFULLY they follow through on that and get ALL the ones with mistakes thrown away.

Like Richard said, the grain that is fed to the animals does not transfer proteins into the muscle. The proteins are broken down in the stomach to make energy for the animal to survive on, but they do not pass into the blood or muscle to cause any alarm to us. If you are having trouble with meat, it is because of something other than celiac.

I wrote to several companies asking them for product samples to use for a support group meeting. I was overwhelmed with their responses!! They didn't hesitate to help out! I eat their taquitos frequently. Very easy to throw in the microwave or oven. Top with some cheese and have a salad on the side or some beans.
Also a couple of the Kraft South Beach Diet frozen dinners are safe. You just have to read the labels.

Be sure to get the Ian's Allergy Free kind. They do make nuggets and fish sticks that contain gluten. The allergy free are the ones that you want!!

Miss Roben's has a no bake granola bar/trail mix mix. They are free of: Free of: Wheat, Gluten, Dairy, Peanuts, Tree Nuts, Egg, Soy, Corn, Potato, Yeast, Sesame according to the website.
I have made them before and they freeze really well (just wrap in saranwrap and freeze). You just have to add corn syrup and I added peanutbutter and sunflower seeds. I believe. Which would give you more protein. You might give them a try. I liked them

one more side note on those bars, when it says dairy free it means free of : Free of Dairy: Includes all casein, whey, & lactose, & derivatives.

I use Tinkyada sometimes, my favorite is really the risomas which is rice and corn. But gets soggy, so not a good idea for pasta salad.
It has great flavor though

Okay, I had my follow-up with my GI specialist down at St. Mike's in Toronto. He is sending me to an immunologist to see if he can figure me out..... He did mention something about maybe an enzyme syndrome (I forgot the name of it) that he said is quite rare, but wanted to look into it further....... He did a few more blood tests. But here is the worst part: He wants to measure the fat content of my bowel movements for 48 hours (normally, it is 72 hours but he said since I go so often, 48 hours will suffice for me.....). I have to basically poop into a paint can (yes, you read correctly, a paint can.....) I went down to the lab in the hospital and they actually give you a paint can to collect all your bowel movements!!! Actually, they gave me two, due to the number of bowel movements I have in the span of one day...... All I have to say is: THIS IS THE MOST VILE THING I HAVE EVER HAD TO DO!!!! It is so unfair to have to put my family through this! I have basically told them that the downstairs bathroom is OFF LIMITS for two days, and Terry and the four kids have to put up with sharing one bathroom for the next two days!!!! I will be sooooo glad when this is over!! Add on top of that the fact that my back is killing me and you can just imagine (sorry for the visual, lol!) me trying to get down onto a paint can on the floor without toppling over!!!! I am having nightmares about falling over and knocking the can over!!!!
Wish me luck that I will get through the next two days without losing my sanity!!!

I had to collect my poo also, but just one sample. I totally feel your pain. It is the most degrating event ever!!
The lab DID give me a little bucket that attached to the inside of the toilet to collect the stuffs though. You might try asking for one of those.
Funny thing is, after they gave me all of my "equipment" for the sample collection, they stuck it in this hazardous waste plastic bag and I had to walk out of their office with it, down the hall, ride in the elevator (with people staring at me) then walk across a huge parking lot!!! THEN had to bring the poo back in that bag the next day doing the trip all over again!! I sure got some wierdo looks.

Did you use Rice or Corn pasta? I use Mrs. Leapers too but I use corn, and it doesn't fall apart when I make Tuna salad??? Just a thought.
I'm glad it turned out yummy.... you know some of the best dishes don't "look" that great .
Please share the recipe if you would..... I miss the pasta salad that they serve at Ruby Tuesdays..... yum yum!!!!
I used the veggie/rice spirals. I'll have to experiment with some corn pasta at some point. Thanks for the idea.

Ok, here is the dressing recipe, please note that I don't measure a thing! ha So measurements on this are TOTALLY approximate.
1 1/3 c Mayo or miracle whip
1/3 c parmasean cheese
1/2 tsp black pepper
1tsp garlic powder
2tsp sugar
2 tablespoon distilled white vinegar
Mix all those together, taste it and see if it suits your taste, add more of whatever if it doesn't! ha
Mix that in with pasta, veggies can be added also to the pasta salad.

I used Mrs. Leepers veggie spirals (wanted a little healthier option). I under cooked them, drained and cooled. I guess I'll have to try some experimentation with the brands. This one tastes great, just doesn't look pretty!! Definately doesn't look like pasta salad! ha Looks like rainbow colored gloop!! Thanks for the tips, keep them comming!!

I'm curious how you even go ahold of them to find out. I was given the name of a lady and told that if I made a list of what I wanted to know was gluten-free she would get back with me. I wrote her several times and never heard a thing back. I gave up on trying to contact anyone from wal-mart.
