I am having a very hard time getting ahold of anyone to find out info on these pins. I have left a couple messages at the phone number listed , and sent a couple of emails and haven't heard a thing back.

I altered this recipe a bit from the original that can be found at Open Original Shared Link This was SOOOOOOOOOOO good!! I will be adding this to my regular recipes! -Jessica
*My version*
Oven Fried Parmesan Chicken
2 tbsp garlic powder
4 tbsp, melted butter
3 tbsp italian dressing (I used Kraft)
1 cup dried bread crumbs (I used gluten free pantry rice crumb coating mix)
1/3 cup grated Parmesan cheese (I used Kraft)
2 tablespoons chopped fresh parsley
1/8 teaspoon ground black pepper
1 package chicken breasts or chicken tenders
1 Preheat oven to 350 degrees F (175 degrees C).
2 In a shallow glass dish or bowl, combine the italian dressing with the melted butter or margarine. In another small bowl mix together the rice crumbs, cheese, parsley,garlic powder, salt and pepper. Dip chicken pieces into butter/italian dressing mixture, then into crumb mixture to coat.
3 Place coated chicken pieces into a lightly greased 9x13 inch baking dish. Drizzle with remaining garlic butter and bake uncovered in the preheated oven for 45 min to 1 hour, or until chicken is cooked through and juices run clear.

Someone (Mariane I think) Used to have a very comprehensive list of symptoms. She has posted it on the old board. I sure wish it could be posted again...it was quite a list and really a great one!!

I have a godfathers not far from my house, and they haven't offered anything like that . I sure wish they did! ha I also checked out their website and it doesn't seem to hint at anything gluten free or low-carb. Too bad! Maybe someday...a girl can dream anyways!!

I am so jealous!! I really wish there was a place that I could walk into and order a pizza. Making them at home is ok, but not great. Pizza is one thing that I still miss and crave like crazy. They need to bring a Cafe Baldo to kansas! ha

The Gluten Free Pantry has a great pie crust mix. That is what I always use. One mix makes 2 crusts or one 2 crusted pie like cherry or apple. Anyways they are good.

If you are worried about school lunches I would sit down with the school dietician and head cook at the lunchroom NOW and talk about your childs needs. They will be making their lunchroom budgets now, if they already haven't and will need to know what to purchase. Possibly they could keep a few items on hand that he could purchase to suppliment his lunch from home. Maybe a bag of safe chips, or a cookie or juice box that would make him feel special still and buy from the "restaurant"! ha that is too cute!
People with Celiac Disease are covered under the Americans With Disabilities Act, so the lunchroom, does have to supply your child with an appropriate lunch. If you choose to go the lunchroom route.
Some lunch ideas that I take for my lunches: (I am a teacher)
Gluten free lunchmeat with cheese in a roll-up style (sometimes add lettuce)
Cold Cheeseburger (no bun) just ketchup to dip in
Jell-0 and fruit cups
Applesauce cups
gluten-free Chips
Doritoes (NOT nacho cheese)
Cheetos
Fritos
Corn Chips (mission)
Frito lay chips (read labels)
gluten-free Homemade cookies (make a batch and freeze in packs of 2)
Most of the time I make extra of whatever I cooked for supper and use a school microwave and warm up my lunches. I am sure that if you asked, the cooks might be happy to warm up lunch from home for your little one. This seems to be the best option for me personaly because I get bored with lunchmeat easily
Also in reguards to the staples of a 6 year old. DeBoles makes a rice pasta and cheese in a box (like the cheapie Kraft box) however DeBoles is not so cheap! ha It doesn't taste bad at all.
For chicken nuggets, I bread chicken breasts cut into pieces and fry them, makes healthier yummier chicken nuggets. There is also a company that makes gluten-free chicken nuggets....can't remember the name of them right now I am sure someone on here knows the name.
You could always do PB &J on rice cakes, not quite the same, but better than nothing
Oridea french fries (most plain ones with no seasoning) are gluten free, just read lables.
There are several good gluten free cereals out there. Peanut Butter Panda Puffs by Enviro Kidz (nature's path) are awesome. Enviro Kidz has a line of gluten-free cereals that are really good. Also mainstream...fruity pebbles are gluten-free (some worry about cross contamination with these, I have had no problems so far).
Kinninnick offers some great gluten free doughnuts. You have to order these online. They are not light and fluffy, but sure do make a darn good replacement when you are craving doughnuts. Open Original Shared Link

I personally do not really care for Kinnikinnick's hamburger buns. They are very sweet and almost like cake!! I prefer to just have the burger without the bun. I sometimes just wrap it in lettuce leaves. They DO however have some pretty good doughnuts!!! Not light and fluffy, but pretty darn good.
I DO enjoy the Gluten Free Pantry's Chocolate Truffle Brownie Mix (buy it in 5lb bag) I also like their cake and cookie mix, it makes a great lemon bunt cake. Open Original Shared Link
For flour, I use Bob's Red Mill flours. They have a great all purpose flour. I substitute it cup for cup for regular flour in traditional recipee's and just add some xanthan gum. I also get several other gluten free flours such as white rice, tapioca, bean flours etc. I get them at my regular grocery store, but you can also order them online at Open Original Shared Link
Amy's makes a really good pizza. It is a cheese pizza with a rice crust. I take it home and add toppings that I like. I add meat, more cheese, veggies etc. This is a great pizza!! I get this at a whole foods market type store in the frozen foods section. Amy's also has several "tv dinner" type meals that are excellent!
I have still not found a gluten-free bread that I can stomach. They all taste like paper to me!! YUCK!! I am still on the search for that.

There is very much a link between Celiac Disease and gall bladder problems. Taking out a gall bladder is one of the things that is sometimes done (mistakenly) before they figure out the person actually has celiac disease. Instead of running simple tests, they remove an organ!! It may sound extreme, but research shows it is true. Gall bladder problems are usually a red flag for Celiac Disease, or at least a red flag to run the appropriate tests.
I know during my long diagnosis process, the doctor was getting ready to schedule my gall bladder surgery and thank goodness found the celiac disease results before the surgery took place.

I HIGHLY recommend calling the companies yourself. I do not think that you want to intrust your daughter's health to perfect strangers. You might get some great ideas on what foods she might be able to eat, but do not count on word of mouth to tell you for sure. Find the 1-800 number or website address to the companies in question and do the checking on your own. This is the best way to insure your daughter stays gluten free and healthy. Best of luck.

I am in the same situation as you, each one of those groups is at the very least an hour away from Emporia. I really wish I had a group closer to me, but for now I get my support from online groups. I don't have any other choices right now. Someday I hope to be closer to meetings, so I can attend or just start my own group!! Best wishes.

I have noticed that since going gluten free, I am much more sensitive to the sun and also to bug bites. I can be out in the sun just a very small amount of time and come away with a burn. I used to be able to stay out for hours!!
Also...when I get a bug bite it swells up and makes a LARGE welt. I have never had them swell to this size before.
I was just curious if anyone else had noticed themselves being more sensitive to the sun and bug bites since being gluten free.

I get a rash that sounds similar to yours. It almost looks like a ring worm circle, however it is not ring worm. I'm not sure what mine is called, however I use a cream on it called acid mantle and it clears up within a few days. I think it has something to do with the pH of my skin. The cream seems to balance it out and makes it better.

I went to the Delimex website...here is what I found there in their frequently asked questions section. It only talks about wheat gluten, not rye, barley and oats so it still sounds pretty questionable to me:
1) Are your products free of wheat gluten? The following products are free of wheat gluten:

I am not having symptoms anymore......that was a month ago.
The test that I had was a urine test. They look for red and white blood cells in your urine. They can also checked for ketones which were present because I was throwing up and not eating. Those are usually found in people with diabetes, or people with illnesses. A blood test, like you were talking about would show an elevated white cell count, which signals an infection.
I was on heavy antibiotics to get rid of the infection ( 2 different ones at the same time to be exact) I ate yogurt like crazy and got lots of rest. Even after finnishing my meds. I was EXHAUSTED. I am finally getting better and all that good stuff. I hope you start to feel better soon also!!

Every Wendy's I have checked with does not have a dedicated fryer for the fries. The fries are cooked in the same oil as the nuggets. I have even found a chicken nugget in my fries before!! (this was what prompted me to ask about it!) You are lucky to have found a wendy's with a totally seperate fryer for fries.

Barkat is another brand that is gluten-free. They are gluten free, wheat free, nut free and GM free (not sure what GM is). These are like a cake type cone (not waffle) I do not know where you can get them, they were given to me. They taste pretty good

You will not BELIEVE the crap filled email I recieved from quaker about their mini rice cakes....take a look at this. I REALLY think companies need to be held accountable for their products. Isn't that what the labeling law (that was passed) is all about...how can they get away with sending out answers like this!! GRRRRRRR

NO!!! Spelt is another name for wheat...do NOT eat it. I had a health food store sell me a loaf of spelt bread the day of my diagnosis, it is not safe for us to have. Throw it out.

Which grains are safe, which are not?
The common list of forbidden grains is: wheat, rye, barley and oats.
Unfortunately, there are variants out there that go by other names. Durum and semolina are names for certain kinds of wheat that have been bred for specific uses. Both spelt and kamut are versions of wheat. (Other names for these: spelta, Polish wheat, einkorn and small spelt). Bulgur is wheat that's been specially processed. Triticale, a grain crossbred from wheat and rye, is definitely on the toxic list.

It sounds alot like thrush. However, thrush is a yeast so if you have tested negative then I would think it would be ruled out. I don't know...have you seen the doctor lately??
