  1. Wow! Thanks everyone for the ideas. It's very appreciated. I can't wait to try this recipe! :D

    Before my husband was diagnosed with celiac disease, I used to take a packet of Hidden Valley dry salad dressing and coat the chicken in that and then bake it (there were a few other ingreidents also I think). That was our absolute favorite way to haev chicken. Now, unfortunately, they can't promise that the mix is gluten-free. We were so disappointed. But now that I've seen this recipe, I'm ready to try again. Plus, it has that "fried" texture to it and I am looking forward to that since everything I fry gets burned! :rolleyes:

    The Gluten Free Pantry and also Kinnikinnick Foods have some great breading/coating mix. I make a baked chicken out of them that is SO good!!

    I'm doing ok...how are you? Are you a KCK or a KCMO yak? Do you go to any of the support group meetings up there? I have never been. I hear they are good though. How long have you been diagnosed?

    Are you a 20something or a 30something?

  5. What is your platelet count and white count? Have they done a CT scan on your liver or spleen yet? Exactly where on your abdomen are you having pain? Have tehy done a complete blood work up yet? Did they do any other tests on you? How high is your fever and how often do you have it? How long has your platelet and white counts been up? How long have you known you have celiac and been on the diet? Have you had a TSH and TPO (thyroid peroxidase) test done? Just want to know these answers before I go on to tell you what I know so far. What kind of a dr. are yo going to? (specialist, hematologist?) Maybe I can direct you as far as more testing and what they have told me. I did even go to the Mayo Clinic in Minnesota. What are some of your other symptoms? Did you have the fever and elevated platelet count before starting the gluten-free diet?

    As my previous post already stated. I am waiting on a CT, I am going to a GI (gastro specialist), I've had the CBC (complete blood count), I've been gluten free since 12-31-2002. Fever is generally low grade.

    As for the other questions. I have not had any thyroid workups done recently. My liver counts were not out of normal range and they were before my diagnosis of celiac. I can't give you exact numbers as far as white count and platelet count as my lab papers are not here with me. Pain is on the right side of my abdomen.

    This evening I went to the Melting Pot Fondue restaurant in Littleton CO expecting a good meal but having to forgo the bread with the cheese fondue and the brownies and cakes with the deserts. Boy was I wrong. My server informed me they had Deby's gluten free bread with the cheese fondue (they use a gluten free flower and milk for the base) which was very good. I also ordered the mandarin orange and almond salad minus the wontons. They offered me several choices of gluten free dressing. We had a nice veggie and meat meal (make sure to ask which sauces for dipping are safe) and then came the desert. I ordered the chocolate fondue with marshmallow mixed in and asked them to hold the cheesecake, brownies, graham crackers etc. I expect to get the bananas, strawberries, pineapple and marshmallows. Imagine my surprise when the plate came out also including brownies and sponge cake that my server informed me were Deby's gluten free products. At the end of the meal the manager came out to ask how I had enjoyed the products and let me know they were doing a trial for the nationwide chain. He indicated they knew how to keep cross contamination at bay by using fresh gloves, separate bowls etc. So if you live in the Denver metro area I recommend you go to the Littleton location and enjoy the meal while supporting the trial so hopefully they will go nationwide!

  7. I, too have elevated platelet counts. The highest has been 526,000. I have had a low grade fever between 99-100.3 degrees since last Dec. every day. One hematologist said I have essential thrombosis cythemia (bone marrow disorder). In the meantime, I also found out I have Hashimotos thyroiditis and am in the process of getting that taken care of. Have been feeling horrible and so I went to a naturopath who did a blood test and found I am allergic to gluten. I just had an endo and colonoscopy. The small entestine biopsy turned out normal, but the Dr said the blood test was more specific to celiac and to start the diet. I am going shopping now to buy food for this new diet- YIKES! It's scarry! I am hoping the platelet count and fever are related to celiac rather than bone marrow disorder. I guess time will tell. The naturopath says there is a chance it's connected. I really want to know if anyone out there has the same fever and elevated platelet count issues, with or without celiac. Please help!

    I also have a high platelet count and run a low grade fever. My white count is also elevated. I've been "sick" for several months now. My big complaint is pain in my abdominal area. I recently had a visit to a GI and he wants me to get very sick again and he will run another cbc and CT Scan.........GREAT!! So I am waiting until I get super sick again so I can get more tests run.

    I feel your pain in having trouble figuring out all the pieces to the puzzle. I am VERY strict with my gluten-free diet and so I don't feel it has anything to do with my celiac. I don't know what is wrong though....the high platelets are kinda worrysome. I've been told they can mean many things, including the inflamation such as with RA (however I don't think that is my own personal trouble).

  8. Hallooooooooooooo friends,

    I need some quick help and ideas and don't have time to search the forum.

    I have not been camping in nearly two years. :( I need some great ideas about what to eat. We'll have a grill and possibly barbecue (both will be fully sterilized), and a burner or two, so cooking's not a problem. Two or three ice chests, so space isn't a problem ( I camp rather luxuriously in my latter years :lol:)

    We'll be bringing steaks for sure, and I"ll make gluten-free pancakes in the morning, maybe - but does seem like a lot of work for someone who doesn't always sleep that well in two-man tent w/ one adult and two large canines......

    any great ideas?

  9. I just went to a friend's wedding this weekend. She also has celiac. I wasn't expecting to eat at their reception. I didn't even talk to her about it. However, when I got there 3 of her family members tracked me down (along with herself, like she didn't have enough to worry about being the bride) to tell me that there was gluten free bread for me and gluten free cake that I could have!! It melted my heart that they were nice enough to think of me also on their special day!!

    It felt AMAZING to eat wedding cake at a wedding. I hadn't done that in YEARS!!

  12. This thread is getting awful uncomfortable. Everyone has there own opinions, and everyone should know there body's well enough to know what hurts them. Has anyone also thought of STRESS!!!! Stress kills Lets all just try to get along PLEASE goes back to what my mother had always taught me IF YOU DONT HAVE ANYTHING NICE TO SAY DONT SAY ANYTHING AT ALL!!!

    My mom also says that Barbara.....thanks for reminding everyone. It's a very important thing to remember!!

    I'd like folks to also take a look at the board rules. Rule #1 is really being pushed by several folks right now. Be kind and respectful to others please or warnings will be issued soon!!

    I think at this point it would be best for many of you to "agree to disagree" and drop it.

  13. What about a fruit salad with all pink/red fruits

    strawberries

    raspberries

    watermellon

    cherries

    (any other pink fruits)

    do a dressing of honey/fruit juice/cinnamon/nutmeg and serve cold.

    What about pink cuppeycakes......have beautiful pink or white cupcakes and pink frosting. You could even do mini's if you wanted.

    Someone said shrimp...that is a fun idea. Do some red/pink cocktail sauce.

    Serve a pink punch to drink. Strawberry sherbert and 7-up.

    Mints that are tinted pink would be fun.

    You can buy pink M &M's at bulk candy stores. You could have a few dishes of those sitting around for people to eat. (you can even get them personalized if you order them online) You could also put some of the pink m&m's into small bags/boxes for guests to take home.

    Strawberry soda served in champagne flutes

    Champagne with a strawberry garnish.

    This sounds like such a fun shower to throw...you'll have to share all your ideas when you are done :)

    I love these. Our local grocer carried them once then stopped. Fortunately the grocer offers a discount on special orders so I order them a case at a time (6 to a case). I usually eat mine totally plain, but white chocolate chips would be great. I tend to use less oil than the mix calls for.

    White chocolate chips are AWESOME in the mix. I also use less oil. I do 1cup applesauce and then 1/2 oil. All of that oil grosses me out...way too much. The applesauce is a great sub.

  15. If I were you I would get a second opinion on the issue of waiting to do the CT and the scope. With your celiac diagnosis and your relief on the diet and the fact that your numbers are down confirming that your being dietarily compliant it really is time to find out what is going on.

    It is not a bad thing to get a second opinion and if it is diverticulosis that is causing your discomfort the time to find out is not when you are in an active diverticulitis episode. It is reccommended during those that a scope not be done because of the increased risk of intestinal preforation, a slim risk when you are not in an active ill state. One additional word of caution they will when doing a CT scan of your intestines have you drink a contrast material and they may also inject another to enable them to get a clear picture of what is going on. The oral contrast usually contains gluten, you need to be sure the contrast they hand you is water based, it should be clear. The Injectables are not a problem unless you are allergic to iodine.

    I feel soooo tired today and extremely sore where he was pushing on my stomach. It was sore to even a light touch last night. grrrrr <_<

    I know he wants the CT scan and CBC done first. I don't think the scope would be the same day, but who knows!! I know it isn't safe to do the scopes when you have infection though, so I wouldn't let him do it. I don't want to cause even MORE troubles ;)

    Thanks for reminding me about the nasty stuff you have to drink. I haven't had a CT in about 5 years so I had forgotten about that stuff. I did remember the injection (that makes you feel like you have to pee BAD). I'll be sure to ask about the clear one instead of the chalky drink.
