I LOVE the EnviroKidz Cereals. My favorite is the peanut butter panda puffs. YUM!!! Adults can enjoy fun cereals too! ha
As far as the oatmeal question goes. I personally have trouble with it. I had purchased the McKaans Oatmeal that says they are not cross contaminated and safe for celiacs. However, my tummy rumbled every time I had some.
All I can say it try it for yourself and see if you have a reaction, but do be sure to get a brand like McKaans that does not have cross contamination. Some people ARE able to eat it, I am just not one of them.

I really did not think that rice pudding would be too good. However I would like to say that Kozy Shack rice pudding has some yummy stuff!! I bought some yesterday, one plain vanilla and one box of single serving with strawberries in the bottom of the cups.
It was SOOOO good!! And it says gluten free right on the tub, you have to LOVE that!! Also I love that I can get it in the regular grocery store and not have to spend a million dollars! ha

There actually is a gluten-free playdough stuff that is made!! However, I am having a hard time remembering the company. I know it was sort of expensive, but what isn't that is gluten free! ha I know that it comes in a bucket with several colors.....I hate when i can't remember things.
I will do some research and try to find the company!! If anybody else remembers please help!! ha

here is the cornbread recipe that I use. I LOVE IT!! YUM!!
Gluten Free Cornbread
1 Egg
1/2 Cup Liquid (milk, juice, water)
2 T Sugar
2 T Oil
1/2 C White Rice Flour
1/2 C Corn Meal
2tsp Baking Powder
1/2 tsp Salt
Mix well. Bake 425 for 17-20 min. Makes 6 muffins
I doubled this recipe and baked it in a small rectangle pan. The recipe comes from the back of the Bob's Red Mill White Rice Flour Sack.

Maybe i'm a big sap!!, but knowing that your kiddo gets to play animals with the other kids at snack time made my eyes get all tearey!! I am so happy to have helped one little kiddo have a great day at preschool!! Thanks for making my day!!

FYI...the date on that allergy alert is Feb of 2002....almost 2 years ago. I am sure they have recalled all the uckey cookies by now and fixed the problem!! Enjoy Mi-Del Arrorroot cookies!! -Jessica

As far as pretzles go...a company called Ener-G makes a wheat free/gluten free pretzel. They aren't bad at all. I actually like them better than regular pretzles. They are kind of expensive, but sure helps for the cravings!! Enjoy!!

Mi-Del makes an arrowroot Gluten Free Animal Cracker. They are VERY yummy!! They aren't terribly expensive. However, I am not sure if you can get them in Canada, I live in the U.S. I hope you are able to find them!! They are worth the money!

Even the miniscule amounts of gluten that are found can make us sick!! YES u have to worry about these things. Overtime you will get very sick (cancer, lupus, infertility, diabetes, seizures etc) if you don't take this seriously.
Buy the stamps and envelopes that are like stickers, and you don't have to lick them.
Lipsticks, hand lotions, face lotions, toothpaste, are all things that you might think they might not matter, but they do. What happens when you use some hand lotion that has gluten, it gets under your fingernail and then you go to eat and you ingest some of that lotion!! YUCK!! Pretty soon your stomach doesn't feel so great, you get diarrhea and just can't figure out where it came from!!
You will thank yourself later for being very careful!! Trust us on this!

I am in College also, I have had my diagnosis for a year. Do you live in the dorms or in an apartment?
I have my own house so it makes life easier!! I can cook my own foods, do my own shopping and not have to worry about cross contamination or any other nasty things.
I have a hard time telling people my age about my disease also. I think that they don't really understand it fully. Then there are some who totally sympathize and are wonderful!!
Do yourself a favor and take a daily vitamin. I take nature made essential balance. Listen to your body!!! If it says you are tired, take a nap. College wears you out. Stay away from sick people, your body probably isn't fighting germs with full force.
Most importantly ENJOY COLLEGE!! Don't let the disease rule your life. Go out, dance, party, have fun!! Just do it without gluten! It is possible.

Tiffany is right....the gluten part of wheat flour is what makes it "Stickey" and what makes it fluffy when you bake . That is why when you are baking gluten free goodies, you have to use the xantham gum or garr gumm.flours like tapioca and rice have their own stickey substances that help hold baked good together. Hope that info helps!!

I have also read about the cheeses being started from breads. I can't pull up the name of the book right this minute though. I am pretty sure it was in "against the grain". However, I too would be interested in knowing a safe cheese. My grandmother had made a cheeseball for the holidays and I didn't feel so great after eating it.

I don't know of a link between polyps and Celiac. It might be interesting for someone to research. I personally have diverticulitis. I also wonder if that has something to do with celiac.

I substitute taugh last semester, and for my lunches at school. I usually did hillshire farms lunchmeat and cheese rollups. Sometimes used lettuce as a "bread" and made a sandwich.
Toon snacks by poore brothers are yummy(like a goldfish cracker but made from potato).
Corn chips are good. Lays brand chips are not bad, I have not had problems with cross contamination. Doritoes are good (except for nacho cheese).
I take jello cups with fruit in them. Handi snacks pudding cups are gluten free.
Fresh fruits and veggies are awesome with some ranch dip.
Salsa and corn chips.
Amy's Frozen dinners are awesome if they would warm one up for your daughter. They have cheese enchiladas to die for!!
Of course for desserts I always make extra when I cook and throw a couple servings in the freezer for lunches and snacks. Snack size M&M's might be fun for her also (just not the crispy ones).
Like someone else mentioned Leftovers are awesome if somebody would help her warm up her foods. Thermoses can also keep soups hot for long periods of time. I have also heard of putting hot dogs in them to keep them warm(gluten-free of course).

I made this basic yellow cake recipe this morning and then added to it to make a peach and pineapple upside down cake!!
Gluten-Free Yellow Cake
Basic and easy, and very versatile. Layer with white or
chocolate frosting, strawberries and whipped cream, etc. Make
sure your baking powder is gluten-free. Makes 2 -8 or 9
inch layers (24 servings).

1 1/2 cups white rice flour
3/4 cup tapioca flour
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons baking powder
1 teaspoon xanthan gum 4 eggs
1 1/4 cups white sugar
2/3 cup mayonnaise
1 cup milk
2 teaspoons gluten-free
vanilla extract
Directions
1 Preheat oven to 350 degrees F (175 degrees C). Grease
and rice flour two 8 or 9 inch round cake pans.
2 Mix the white rice flour, tapioca flour, salt, baking
soda, baking powder and xanthan gum together and set aside.
3 Mix the eggs, sugar, and mayonnaise until fluffy. Add
the flour mixture, milk and vanilla and mix well. Spread
batter into the prepared pans.
4 Bake at 350 degrees F (175 degrees C) for 25 minutes.
Cakes are done when they spring back when lightly touched or
when a toothpick inserted near the center comes out clean.
Let cool completely then frost, if desired
To make it pineapple or peach upside down cake:
I made mine into two 9 inch round pans and put this mixture into EACH pan.
2T Butter/margarine melted in the baking pan
1/2 C Brown Sugar
3 T Juice from the canned fruit
Line bottom of pan with pineapple rings or peach slices. Mix the juice and brown sugar together. Pour this over the fruit and butter. Pour the cake mix over the fruit /brown sugar/ butter. Bake as stated in the above recipe.
This was YUMMY!! Great while warm.

Today is my 1 year anniversary of getting my diagnosis, so just a year today. However, I have been sick FOREVER. When I was a baby I had colic, which I now wonder if it wasn't celiac disease. At age 3 was diagnosed with atopic dermatitis, which is a red flag for celiac disease. In high school had tests done and they said I had duodenitis, another red flag for celiac disease. Two years ago my immune system shut down, which is yet another red flag. Last year at this time they were about to take out my gall bladder!! We decided to do some scopes and he took biopsies and sent them to Mayo Clinic, and they diagnosed me with Celiac! WHEW what a year! I'm sooo glad to be feeling happy and healthy. I really don't think I have EVER felt this great.

I'm not sure if it is gluten-free. I'm not sure if you can write it off on your taxes either. However I have a good idea as to go about it.
Have your doctor write a prescription for it and have your local pharmacy "fill" the prescription. Basically they would just run the pediasure through their computer as s prescription and then you pay for it. Then it can be tax free and more likely to be a write-off. I work as a pharmacy technician and we do things like that all the time. Just a thought.
