I'm not sure about oven-baked, but I have a recipe for pan-fried that uses corn flour. It only called out corn flour in the recipe but I didn't want to put all my eggs in one basket so to speak and so I used 2/3 cup corn flour and 1/3 cup gluten-free flour mix (the basic rice flour - tapioca flour - corn starch mix). I thought it turned out great. Good enough so that the whole family ate gluten free fried chicken and not just my daughter.
Also - I found my corn flour at an Asian Market.
If you've got a good oven-baked recipe, please share, my kids don't care for baked or grilled chicken (which is what we usually have) and I won't do the fried chicken too often, for obvious reasons.

Thank you. I will try this recipe and if it turns out good I will definitely share it with you! Unfortunately it will take me a couple of weeks - I work during the day (meals that take a long time to cook are a no-no for us Monday - Friday) and I'm gone for the next two weekends in a row...but if I can find the recipe I received, I'll post it here for you to try if you'd like!

We also have the Breadman and I love it. It does have the gluten-free setting, but all the bread I made on that setting has been pretty soft in the middle, so I just use the regular 3 hour cycle and the bread comes out great!
My husband's favorite bread mix so far has been The Gluten Free Pantry's Favorite Sandwich Bread mix. You can get it for much less on amazon .com than you can in the sotre.

Hello.
I want to make an oven-baked fried chicken recipe I just found and I need to dredge the chicken in flour. I'd be interested in knowing what flour you use to coat chicken pieces. I just don't know enough about what the individual flours are for. Or should I use something like Pamela's baking mix or maybe Grandma Ferdon's?

Thank you everyone, so much. You have pretty much confirmed what I am trying to instill in my husband. Ultimately I understand it is his decision - but I can do the best I can to inform him. He's not real proactive about the celiac disease. It's me basically doing the work. But I don't mind, I feel bad that he can't have some of the foods that he absolutely loves.
And Kaycee (or Cathy? I'm sorry, I'm not sure), that wasn't a personal barb to you. Please don't take offense. Your statement..."But I think it is a bit unfair of you accusing people of eating gluten deliberately, as it is not as clear cut as that"...I wasn't acusing anyone of anything. I was going of of what I read on another board on this site. And the comment..."But I don't like being labelled as not taking due care with my health"...honestly, I was going off of the information I just read on another set of postings on the board. i meant no malice. Really.

I am sooooooooooo confused. My husband was dg'd with celiac disease last March. It's been a long road, but I have been vigilant about what he can and cannot have. I've been reading so much on the boards about people who eat food that might be gluten food, but they don't have any "reaction" and they think that it's okay to eat. What does anyone else here think? The dietician we met with after the dg (and several things I've read) say "don't eat it if it has gluten or if you are not sure". Why? Because while you may not have any symptoms...the gluten can still be wreaking havoc on your intestines. For my DH it was that the rings were growing in his esophagus and the gluten was eating away at his intestines.
What do the rest of you think? If it doesn't give you a "reaction" do you still eat it? I don't want him to...but he's riding the fence on this. Can't say I blame him..but...
Please give me your thought.

We like to use Spice Trends (we live in WI) that, I believe, is made by McCormick. We haven't found any yet that have gluten. Hope this helps!

Thank you both - very much! When we first started dating (a long time ago!) our favorite place to eat was Saz's. When hubby got dg'd, their BBQ sauce was off limits...so I never really thought of looking there again.
He'll be thrilled.

We are in the (very) metro-Milwaukee area. My husband's birthday is coming up and I know that right now...our choice is Outback Steakhouse or P.F. Changs. Which I've heard are both great. He was diagnosed back in April of 2006 and we haven't been out to dinner sice (except for both of our holiday parties at work and they were very disapointing). I know both places mentioned above have a gluten-free menu...but I was wonderinf if anyone knew of anything else.

Our family loves both Mission and Tostitos. I like Mission because by me they are priced better than Tostitos and just taste different. We LOVE authentic Mexican food (however we just don't go out to eat anymore...too scary for my DH)...and mission is just closer to authentic than Tostitos.

We live in Eagle, WI. I have to go to Pewaukee to find most of our gluten-free stuff, but I also order from www.shopbydiet.com. Where is this store you mentioned? Also....are you familiar with any commercial brands of cereal that are gluten-free? There are a few people talking on the board about some General Mills cereals that are gluten-free...but my son and I must have spent about 15 minutes in the cereal aisles of Pick-N-Save and the Super WalMart and found nothing!

Yes, he has a dedicated toaster, a dedicated butter dish and 2 dedicated shelves in the pantry (which I first washed with bleach) to try and stop the CC. I know his toothpaste, shampoo and deodorant are gluten-free. I would have to check the hand lotion I suppose. The non-food thing has just started to interest me. I'd never really though about it before. I will keep searching. We'll have to see what his next EGD shows as well I guess.
Floirdanative: thanks for the site listing. I looked at it a little last night and plan to check it out more in full this weekend. Can't seem to stop putting Christmas decorations away right now...

Thank you Ursa Major. I never thought about the dairy thing. He just called me and is scheduled for another EGD. How I would LOVE to hear that it is something else and maybe he doesn't really have celiac disease? But...I need to be careful what I wish for. What is that something was worse!
I am going to ask his doc about the dairy probability. Thank you for posting!

Hi! I bought a Breadman. I love the machine and it does have a gluten-free setting. My hubby (he is the one with Celiac) didn't like the bread at all (I tried 2 different mixes)...so I've been baking it from a mix in the oven. I'd love to go back to uising the breadmaker so I could make bread the "easy" way again.

Hi everyone!
I was wondering if anyone has tried this software. My husband was diagnosed Celiac almost a year ago. The way we found out was that his throat was "closing" and he was having difficulty swallowing. It ends up he had these rings in his esophagus as a result of gluten. I have been policing everywhere possible and educating all our friends and family as to what he can and can't have. Bit I am doing SOMETHING wrong!!!!! Now he is having a hard time swallowing milk (can you imagine?). I've begged him to go back to the doctor...but of course...he hasn't made an appointment.
I really want to get this program. There must be something he is eating or using that is not gluten-free. I have a dedicated toaster, his own butter dish, etc., etc. I just don't know what to do and am so thoroughly frustrated I can't stand it.
If anyone has some advice on weather to buy this product or not...I would really appreciate it!

Wow! Thanks everyone for the ideas. It's very appreciated. I can't wait to try this recipe!
Before my husband was diagnosed with celiac disease, I used to take a packet of Hidden Valley dry salad dressing and coat the chicken in that and then bake it (there were a few other ingreidents also I think). That was our absolute favorite way to haev chicken. Now, unfortunately, they can't promise that the mix is gluten-free. We were so disappointed. But now that I've seen this recipe, I'm ready to try again. Plus, it has that "fried" texture to it and I am looking forward to that since everything I fry gets burned!
