Covid virus/vaccine triggering celiac

I have been healthy/active with no stomach issues my entire life. I am 41. I got my second dose of the Pfizer vaccine in March 2021. (I also had covid the prior November). I began to have loose stools. I thought it was anxiety over the pandemic. I mentioned to my doctor at my check up and she had me do all of these tests and I was diagnosed with Celiac Disease...
