I wondered the samething as well. I even called manufacturers about this and they had no answers for me. I did some digging and saw that legally gluten free grains aren't listed as required to be fortified with certain nutrients like other grains. Which is why I started to develop oddball deficiencies in B-vitamins cause the grains didn't contain them and...
