  1. Hi Beverage. I added a vitamin 3 supplement (booster!) at Knitty Kitty's advice, which included thiamine and within two weeks the swallowing problem disappeared. I still have some digestive problems but really like your suggestion about doing a food journal so I can track what I have eaten when I have digestive problem (but that means I have to record...
  2. I like the word "booster." sounds so positive.
  3. Thank you. I will do some research to learn bout the kinds of thamine you mention and get back to my GI nutritionist about whether I should add something. I appreciate your expertise.
  4. Knitty Kitty, Thanks for your comments. I just checked the supplements recommended by my GI nutritionist: She told me to stop taking my B-complex supplement, which has 100 mg of Thiamine. Perhaps I should go back to taking it again and see if there's a difference? I am also taking Senior vitamins (I'm able to turn 76). It has 1.1 mg of Thiamine - probably...
  5. I have been having trouble swallowing food ever since I had my endoscopy done. At first I figured that it was from the endoscopy tube, but it might also have been the change of diet that came after it. gluten-free breads seem particularly troublesome. BUT it's getting better as time goes on and I did see a GI nutritionist and am taking all the vitamins...
  6. I was given a gluten-free cookbook and the author recommended that one gets rid of any colanders one owns because they are difficult to clean and might contain gluten. Is this going too far. I have already been advised to replace my toasters and purchase glass cutting boards to place on my butcherblock counters. I have done these things, but am reluctant to get rid of my red colander and buy a new one.  How much is too much? (my endoscopy diagnosis was in early July of 2023 so I am still quite new to all this and trying to sort out what is reasonable from what might be an extreme measure.

  7. Scott, as always, your column about this poll was very helpful. I never saw it. When was it made available to Celiacs? I have been worrying about cross-contamination in restaurants that my friends insist are safe for people with Celiac. So have been - mostly - avoiding restaurants with supposedly gluten-free menus. By the way, I have a question for you...
  8. Scott Adams. Thank you so much for this article about the ADA. I had no idea that Celiac disease was considered a "disability." I volunteered to do some all-day work for the Master Gardeners programs, the day before they contacted me to ask what kind of Pizza I preferred. When I asked if the pizza would be gluten-free, they did not know. After contacting...
  9. No, before the test I followed the instructions and ate wheat bread for three days. And the definite endoscopy found Celiac disease. After that diagnosis I began a gluten free diet - some time in July. I found a fabulous GI nutritionist and she not only gave me a lot of helpful information but I left her office feeling positive about the gluten-free diet...
  10. Thank you, Newton Free. This was very helpful. I do eat the foods you mention that have Vit K. Egg yokes, blue cheese, gouda. I purchased Calcium tablets with Magnesium and zinc yesterday (333 mg) in order to take it at smaller doses, after KK's post. I do have one more question. Most of the foods I eat now have iron in them and on the Mayo Clinic site...
  11. Thank you Kitty Kitty. I did not realize calcium should be taken with meals. I just checked my multi-vitamin bottle to see if it includes magnesium. It does and also Vit K and the B vitamins. I will look online for more information about when best to take Calcium. Thank you!
  12. In addition to being recently diagnosed with Celiac (July) I had a bone density scan and have been diagnosed with osteoporosis in both knees. I have been taking 600 units of Calcium per day and my doctor and my GI nutritionist both told me to up that to 1200 a day. But my sister, who has had a long career working with patients who need rehabilitation, and...
  13. I was thrilled to find GFSharon's Mango Sorbet in my food coop and also gluten-free Breyers Natural Strawberry ice cream. Thanks again for the help!
  14. Thanks Jane. I will keep Breyer in mind. I prefer fruit flavored sherbet and have no idea if there is gluten in those either. It's a steep learning curve.
  15. Scott, Thank you so much. It is time I learn to make my own bread because I don't want all the extra sugar in many gluten-free bread products. I appreciate the links and will look closely at the bread only sweetened by applesauce. I did buy gluten-free rolled oats recently and just add prunes and/or raisens. I like them fine but it does taken time...
  16. It's overwhelming to contemplate making so many changes. My garden will help for now with fresh foods. I am going to make a copy of your whole post and read all the links. And will also take it to my appointment next month with a GI nutritionist, whom I am seeing for the first time. I'm sure she will be familiar with the Paleo Diet and can review all of...
  17. Thank you for your help Blue-Sky and Nikki. NIKKI, I much appreciated the comment that this will get easier. I am tearing my hair out trying to follow the diet. Fortunately I have a large garden and can eat mostly herbs, veggies, fruits for now, but that will end soon. I live in a very cold state. Another question that no one answered was if there...
  18. I am having a hard time eating gluten-free. Diagnosed by endoscopy bioposy a month or so ago. I don't like sugar on my cereal or my pancakes or in my bread. I do like the occasional sweet treat but do not want my food to have added sugar unless it IS dessert. I have yet to find a gluten-free bread with no sugar. Also I read on this forum that...
  19. I was diagnosed with Celiac after a July endoscopy and am finding the learning curve on what's safe to eat is STEEP. May I safely grapeseed oil instead of olive oil for cooking? Also, I have decided to avoid most processed foods. Luckily I have a large vegetable garden and many dried mushrooms from year's of foraging. But am wondering if there is a...
  20. I'm new to Celiac disease, just diagnosed a month ago after the endoscopy. I opened my freezer yesterday and checked two containers of ice. Both contain wheat! Had to toss them. So disappointing. Is this usual in ice cream?? And does one need to buy gluten free icecream or is there a brand that does not use additives with gluten?
