  1. I started feeling better within 6 months on the gluten-free diet, however, most of my symptoms did not disappear until 1 year on the diet. I believe this was becasue of a few things:

    1. I was eating chips on a regular basis that were gluten-free but contaminated

    2. I was having problems with dairy and I was still eating some dairy like in margerine and boost (I recently found out that I'm allergic to dairy).

  2. Here are some recipes that should be ok for you:

    Sweet Indian Curry

    1 tablespoon fresh lime juice

    1 ginger root, minced

    4 fresh tomatoes, blended until juice (I cut them up into small pieces and use a garlic press)

    3 cloves of garlic, minced

    5 green onions, diced

    1 onion, diced

    1 teaspoon cumin

    1 teaspoon coriander

    1 teaspoon turmeric

    2-3 tablespoons of honey (add more or less depending on taste)

    2-3 tablespoons of olive oil

    Optional: 1-2 cups of vegetables or other meat.

    Cook onions, garlic, and ginger root in the oil until done. Add tomato juice, spices, honey, and lime juice. Add vegetables or shrimp and simmer until done. Serve over basmati rice.

    Carrot Stir fry

    1 bag small baby carrots, or 2 cups carrots

    10 mushrooms, sliced

    5 green onions

    1 yellow or sweet onion

    2 Tbl fresh lemon juice

    2 Tbl olive oil

    Cook all ingredients on high heat for 10 minutes, then simmer until done.

    Homemade Sweet Potato Fries

    2 large sweet potatoes, cut into thin slices

    Mrs. Dash Original Spice, or your favorite spice

    olive oil

    Rub olive oil on a baking pan, then place the sweet potatoes on the pan and sprinkle the spice on top. Bake at about 350 for approximately 15 minutes. These will burn fast so check quite freqently. Serve with ketchup.

    Omelette

    1 green/yellow/orange pepper, diced

    1 red pepper, diced

    1 onion, diced

    3-4 cloves of garlic, mined

    1 tbsp Mrs. Dash Original Spice

    1-2 tbsp olive oil

    2-3 eggs

    Cook vegetables in oil for 5 to 10 minutes. Add eggs and spice and mix altogether until the eggs are done.

    Chicken and Peach Salsa

    1-2 cups of water

    1 package of chicken cut up for a stir fry

    5 peaches, diced

    1 yellow pepper, diced

    1 red onion, diced

    2-3 cloves of garlic

    cilantro leaves to taste

    optional (1 Tablespoon fresh lime juice)

    pepper to taste

    Cook chicken, garlic, and 1/2 of the red onion in the water until the chicken is done. I like to let the meat sit in the juices for a while. Place all other ingredients including the other 1/2 of the red onion in a bowl. Mix cooked ingredients with uncooked ingredients. Serve.

    This is actually quite good! I got this idea from the Paleo Diet book.

    Quick and Easy Stove Top Meatloaf

    Extra lean hamburger

    1/2 - 1 cup Heniz ketchup (Heniz ketchup should be ok, but I'd check to make sure)

    1 onion, diced

    2-3 cloves of garlic, minced

    pepper

    1 egg

    Mix everything together in a wok, deep frying pan, or a large pot except ketchup. Add ketchup later on to allow moisture. Cook until done.

    Stir Fry

    fresh broccoli

    baby carrots

    cucumber or zucchini

    whole cloves

    basil

    garlic powder

    pepper

    olive oil

    Cook all ingredients in a wok or a large pot until done.

  3. Here is a good brownie recipe:

    Velvet Brownies

    2/3 cup gluten-free flour mix

    1/3 cup cocoa powder

    1/2 teaspoon cinnamon

    1/4 teaspoon salt

    2 egg whites

    1 egg

    3/4 cup sugar

    6 tablepoons baby food pear or pea puree or unsweetened applesauce (I tried the recipe with pear puree).

    2 tablespoons vegetable oil

    1 1/2 teaspoons vanilla

    Optional: 1 tablespoon chopped peacans, walnuts, or macadamia nutes.

    Preheat oven to 350. Spray an 8"x8" pan with vegetable oil spray (I just used wax paper and olive oil). In a measuring cup, combine the flour mix, cocoa, cinnamon, and salt. In a mixing bowl, whisk the egg whites and egg slightly. Add the sugar, puree, oil, and vanilla and wisk until blended, but don't overbeat. Pour into the prepared pan and sprinkle on the nuts (if used). Bake until set and a tester comes out clean, about 25 minutes (I'd go a few minutues longer, like 27). Cool before cutting into 2" squares. Makes 16 brownies.

  4. Try this recipe for breadsticks, they are really soft like ones made from wheat :)

    Soft and Chewy Breadsticks

    1/4 cup shorting

    3 tablespoons honey

    2 eggs

    1 tablespoon yeast

    1 cup unflavored yogurt (So Nice makes a dairy free, gluten free yogurt)

    1/2 cup potato starch

    1 1/2 cups cornstarch

    1/2 teaspoon baking soda

    2 teaspoons baking powder

    2 teaspoons xanthan gum

    3/4 teaspoon salt

    3/4 teaspoon vinegar

    Topping: Kosher salt and/or other herbs, sesame seeds, ect.

    Directions: Preheat oven to 350. Combine all ingredients. Mix well to remove lumps. The dough will be quite wet. Place dough in a pastry bag with a large round tip (or use a plastic lunch bag with a bit of a corner cut off). Pipe dough into long strips (5-6 inches is nice) on greased baking sheet. Sprinkle with toppings. Bake 10-12 minties, until golden brown.

  5. Here is a recipe that I made up last night:

    Chicken Casserole

    3 cups of water

    3/4 - 1 cup of basmati rice

    2-3 chicken breasts

    1 onion

    Mrs. Dash Original to taste

    1/2 cup Heniz Chicken and Rib BBQ sauce or your favorite BBQ sauce

    Cook chicken, onion, and spices in water in a wok or large pot on high for at least 10 minutes. Add rice and bbq sauce and cook until rice is done. If you have a wok, you may want to add some more BBQ sauce after the rice is done and sort of fry the rice and chicken. Enjoy.

  6. Last night is not the first time that this has happened...

    I was so afraid to go to sleep last night because everytime I was almost asleep I would wake up gasping for air. After that it was like I had to tell my brain to breathe. My heart rate was getting faster and faster everytime I woke up. This has happened 4 times in the 6 weeks. Could it be stress related? Anxiety attack? Has anyone ever had this happen? I really thought I was going to die, no joke. I finally just shut down and obviously i made it through the night but this is making me really nervous that it has happened so many times in such a small window of time. Any ideas?

    You should go to your doctor for sure. Maybe you have an allergy? Those symptoms are similar to my food allergy symptoms. I get heart palpitations, heart pain, fast heart rate, trouble breathing, a feeling like my throat will close over, and hives or a rash.
  7. Ok,I found out.

    Mushroom is rich in valine,a branched amino acid. and when you have celiac you have a week digestive system,and you should not make youe digestive system weeker .branched amino acids makes extra work for digestive system,(according to that Norwegian sceintist).

    That's interesting. I have never heard that before.
  8. I have been making my own. It only takes 30 minutes. Take 2 potatoes or sweet potatoes and cut them into french fry size, then coat a baking pan with oil, place the fries on the oil, then spinkle your favorite spices on top. I use Mrs. Dash Original. Bake for 15-20 minutes at 400-450 and they should be done.

  9. This is discussed in the Medline abstracts found in the Educational Institution section below. For these people the casein milk protein causes the intestinal villi to flatten, much like it does when gluten is consumed by somebody that is intolerant to gluten.

  10. Try making some broth from chicken or beef or just have the liquid from homemade soup. I had to fast once for almost 72 hours and I just had jello and water. I didn't really mind it actually, after awhile I didn't really feel hungrey anymore. I did feel like a lost a lot of weight, but I recuperated.
