If the idea of staying on gluten for a biopsy is not something you want to do you could go strictly gluten free and then have your doctor recheck your antibodies after a few months. This sounds like a great recipe but it is very confusing. Are you creaming the butter with the milk or adding the milk to the butter after the butter is creamed? At what point do you add dry ingredients? Do you mix the dry ingredients first and add the butter after it is creamed and then the milk? It sounds like you are done with testing so IMHO it is not going to hurt to go ahead and start the diet. The treatment for Celiac and NCGS is the same and both need a person to be just as strict with the diet. Do ask your doctor to test you. your symptoms do sound like you could be celiac. it is VERY important that you no go gluten free or gluten light before celiac testing is completed. I hope you get some answers and are feeling better soon. -

Corn no good?

the gluten in corn is a different form than in wheat, rye and barley. it is fine for those with celiac as long as it isn't cross contaminated. Of course there are some folks who won't tolerate it but it isn't something that a celiac needs to avoid.
