  4. I felt a lot of these same emotions when i had to go gluten free six months ago. (I haven't been diagnosed with celiac but know I have NCGS or celiac.) For me it was very disorienting and anxiety producing to not be sure what I would be able to eat or be left out of group meals.   5. This sounds awful and I'm sorry you're having to deal with it. Good for you for standing strong and not giving in to the pressure to eat gluten. It's certainly not worth long term damage to your health to make these people feel a little more comfortable. Are you familiar with the Ask a Manager blog?
