i go to the gym every morning before work and would like some great breakfast ideas. however i am allergic to eggs!
so nothing with eggs or gluten.
i also go to work straight from the gym so i cant think of anything super-easy.
My daily breakfast is peanut butter on a Trader Joe's waffle or one of the other gluten-free/cf varieties. Yumo!

The only one that comes up in that search engine thing is Outback Steakhouse. We are going there for the weekend and need a place to eat. We might just end up at Outback again...but wanted to know if anyone knows of any other places we could try around the Madison area. Thanks.
You have to go to Bunky's Cafe-it is amazing! They have gluten free bread, gluten-free pizza and pasta. You will be treated like royalty!! Here is there website:bunkyscafe.net

We are going to the Dells in February and staying at the Great Wolf Lodge. I haven't called the restaurant there yet but will soon. Any other suggestions for eating gluten-free in the Dells?
Here's a link to an option...

I think you've been under a wrong impression about gluten free dough, which is understandable. Gluten free dough does not need kneading. Kneading is a process carried out with gluten filled flours in order to develop the gluten's elasticity. That's what gives gluteny bread that light airiness so difficult to achieve in gluten-free baking. Our flours have no gluten, so once they are done with their rise cycle (when applicable) they are simply baked. Most gluten-free mixes and doughs are best mixed by hand or standmixer, I've found. Unless you're going to bake your dough in the breadmaker, you don't really need to use your breadmaker to mix the dough. Once you've stirred the dry properly into the wet, you're ready to bake. No kneading necessary!
That makes alot of sense!!! Thanks for your insight. Kneading is the part of baking that often scared me off, so this is a positive!

Happy New Year!
My resolution is to turn my walking workout into a running workout, but I need good tunes for that on my ipod. Please post your favorite workout tunes so that i can build myself a playlist!
I like any type of music except country (sorry).
My favorite groups are Dave Matthews, Phish, Keane, but really I am open to all ideas!
Thanks!

So I am new to cooking with gluten free mixes. I have shyed away from anything that needed dough and stuck with the basics. For New Year's Eve I decided that each family member could pick an appetizer and I would make it and that would be our dinner celebration. My oldest son chose pizza dippers. So I bought Whole Foods gluten free pizza crust mix and went to town. I threw the mix in the bread maker on the dough cycle. (This works for other doughs, why not gluten free??) It came out really sticky and like there had been too much air put into the dough by the bread machine. I was able to salvage most of the dough by adding some gluten free flour, but wasn't able to roll out the pizza, so it was more like pizza bread. It was still very good. It was pretty funny. I feel like part of the club now! My first gluten-free sort of disaster!
So my question....if it doesn't state that you can use a mix in the breadmaker, then you just have to knead by hand? I know this seems like a no-brainer, but I just don't do dough!! Is there a mix that anyone recommends that can go in the breadmaker? Can you adapt the mix so that it can go in the bread maker?
Thanks for your advice.

First off, thanks for all of your positive atitudes and support this year.
My resolution is to run three times a week. I have a decent walking exercise routine, but I need to amp up my cardio. When I was so sick, I couldn't eat, so I didn't gain weight. Now that I am healthier and know what to stay away from, it's much harder to keep the pounds off!

I've had a reaction and the only thing different I've consumed is my birth control. I just started monday, but I forgot two days because I spent the night with a friend. I took three pills of Alesse [generic version of Lessina.] on Wedneday to make up for it. I woke up with my caperillies broken.
Is this gluten-free or no?
I have reactions to all types of birth control. There is lactose in a good amount of the pills, and that seems to get me everytime. Good luck!

Do you use a crockpot? That is my saving grace since i work full-time with two young children in the house. In the crockpot I make:
chili
roast beef with potatoes and carrots
Salsa chicken (someone's recipe from this site)
Carribean pork (again someone's recipe from here)
italian sausage in Trader Joe's marinara sauce
pineapple chicken (take boneless, skinless chicken, a can of diced pineapple, and 1 cup of La Choy's ginger garlic marinade). Serve over brown rice
chicken breasts in Trader Joe's marinara sauce
Hopefully that helps a bit.

Here's my 2 favorite slow cooker chicken recipes:
1 Salsa chicken
Take 2 cans each black beans and corn. Drain them. Mix them together at the bottom of the slow cooker.
Put 6-8 boneless skinless chicken thighs on top of that
Layer 1-2 jars of your favorite salsa (I use Trader Joe's peach, but Paul Newman's peach or mango might be good too)
Turn it on low for the day and forget about it...
1/2 hour before serving put a brick of low fat or regular cream cheese on top and let it melt.
It freezes well and makes a great leftover.
Hi gluten-free mom,
I am making your salsa chicken recipe for the second time and have to say it is soooo good! It is so easy and tasty. I am dairy free as well, so I used tofutti cream cheese instead of regular and it turns out great served over brown rice. Thanks!!

I have both celiac and endometriosis. I am new to celiac as of April of this year, and the diet has actually helped my endo quite a bit. I was diagnosed with endo when I had a tumor the size of a softball removed from my ovary!
The first few months of the diet didn't change my endo symptoms. I decided to go off the pill this past cycle, and any other birth control when I realized that all of my symptoms were lessening, and were almost non-existent the few days after my period had started. When I was on birth control I would then get horrible d again once I started on the pill, patch, ring. I've tried it all and none of it seemed to coincide well with my celiac. This past period was the best, now that all of the drugs are out of my system and I am all natural, so to speak. I had very little cramping, no headache, and only d for one day when my period started.
Hopefully this wasn't TMI, just wanted to pass along my info in case it was helpful.

I don't know if they are gluten-free or not but thought I would share my experience with them. My daughter had one and it attracted and grew 100's of fruit flies. We had to throw it out. There was a huge swarm of them.
Ahhh! I don't want bugs! That is the only gift that my 4 yo said he wanted form Santa, so we bought one. What season did that occur in??

I have been looking at my small town grocer but no luck even checked out Wal-Mart and again no goat anything. Where are you getting these cheeses?
Yellow Rose
I forgot to get back on here and post the name of the goat cheese that I love!! It is from the Mt. Sterling Creamery in Wisconsin. They make a variety of goat cheeses that come in a brick and can be used to replace brick cow's cheese if you can tolerate the goat milk. I can't tolerate dairy in any quantity, and small amounts of goat cheese/ice cream are ok. I hope you can find it, or something like it!

I have been on the celiacs diet now for about 7 weeks, and I have lost 15 lbs. I need to lose more weight, but I am so surprised. Has anybody else experienced this ?
I lost about that much when I first went on the diet as well and it has stayed off. I am at 135 lbs now, (5 foot 3. I could probably stand to lose a little more, but I am so happy to be able to eat without having d, and it seems like my body is making up for lost vitamins/minerals. I seem to be hungry all the time!

I'm making scalloped or au gratin potatos for a Cristmas dinner. Is your lunch for adults or kids?
best regards, lm
My potluck is for adults and children. I don;t think I could do au gratin because of the cheese.
My favorite types of potluck recipes are the kind with noodles and pasta sauce and cheese! I'm not sure if that's helpful or not. I love tinkyada noodles and I can have goat's cheese. Any other ideas?

Hi all,
I am wondering if you could post your favorite potluck food so that I can get some ideas for an event I need to attend on Monday at my child's preschool.
Thanks!

Snow here in Wisconsin, but that's what it's supposed to do! We made a snowman and shoveled the driveway, but you couldn't tell that part!
I live for snow days! I'm a teacher (:

Okay, here's what I eat, in a nutshell:
-Almond milk (blue diamond and sometimes, i make my own almond milk too)
-Gluten free/dairy free cereal
-fruit
-vegetables
-rice/rice pasta/pinto beans
-yogurt (sometimes i eat yogurt, it doesnt bother me though)
-chicken/turkey/beef/pork
-gel snacks (gluten/casein free)
-organic gluten free/casein free french fries
-organic fruit juices/tea/water
That's about it. I keep a mini food diary as well. I found that soy milk bothered me, so i stopped drinking it. Almond milk seems to easy for me to digest
Potatoes are bothersome to me at times, which stinks because I love fries!!! (:
As someone else mentioned, it does take some time to heal and you could just be feeling the residual results from your body healing up. I think at four months out I started to have stretches of feeling great.
Best wishes,
Terri

Hi Frec,
I am a teacher as well, so I know what a half hour lunch is like, when you've got kids in and out on both ends of lunch! I also use the brown rice tortillas, Food For Life are good, and Applegate farms turkey wrapped in it. I also like tuna for lunch. Often I will do leftovers that I can carry around with me and eat easily. I try to eat a piece of fruit during my prep so that I don;t need to eat as much at lunchtime. Bananas are my fav, cause they are easy and packaged!

I get mine at the health food store. When I shop today I will look at the brand for you. I don't have any right now!

congrats on your anniversary!
I use Floragen and really like it. I get it at my local health food store. It needs to be kept refrigerated to keep the good bacteria alive. I am someone that will take probiotics for life. They really make a difference and help me with my stomach issues.

Hi does anyone have leaky gut syndrome due to celiacs or food allergies ?? I just found out i am allergic to cow's milk, eggs, soy and cain sugar. I may even be gluten intollerent but deffinately not allergic to wheat. Doing an elimimation diet just to make sure. Can anyone relate ?? Thx !
Yes!! That was my first diagnosis before deciding to eliminate gluten from my diet. My gut has been damaged from all of the gluten, to the point that large particles pass through the membranes of my intestines into my body, which is damaging to the immune system. I am currently staying off dairy as well, since I react strongly to that as well. Good luck with sorting out what to eat. There are alot of great resources here.

Hey~ Am now dairy free and wondering if anyone knows if I can drink either of these?
I am so bummed I found this yummy almond cheese and it has casein in it. rats

I am dairy free as well and goat and sheep cheese seem to be easier on my stomach if I eat in small quantities. There are some great goat cheeses out there that are similar to colby jack and other cheeses so you can try to make a pizza. Also pecorino is from sheep's milk. It is more like a romano or parmesan. The cheese is a little tangier, but I have really enjoyed it.
If that goes well for you, there is a company called Laloo that sells goat's milk ice cream. It is delicious!
