  1. Meatballs with rice instead of breadcrumbs. When the rice cooks it pokes out of the meatballs like the spikes on a porcupine. I'll post the recipie in the cooking section. The TJ's basmati blend adds a little extra flavor.

Thanks for the recipe! I will try it out! So I bought all sorts of good stuff yesterday....tortilla chips, taquitos, frozen bananas dipped in chocolate, basmati rice blend, pasta....thanks for everyone's tips and suggestions!

  2. Unlike most of the symptoms I read about here (diahrea, etc), when I eat gluten I just get intense left side pains and chronic constipation. Does anyone else experience these problems? I have had the blood test and the intestinal biopsy and was confirmed with Celiac disease, but cannot relate to most symptoms other celiacs describe.

  3. I hope you are feeling better soon! I, too have been told that I have IBS and was told to try gluten-free and it made a world of difference! Many on the boards have trouble with dairy as well due to damaged small intestines, so you may want to try that as well. A month and a half into the diet and I have normal bm's instead of d everyday. I feel much more healthy and have energy. It's worth looking into.

    Best wishes!

  4. I just thought I would find out how all the newbies are doing. There were a lot of us that were diagnosed in the last few months.

    Hi,

I have been gluten-free for a month and a half....I have finally stopped making regular mistakes! That is probably the hardest part to figure out, what to eat that is safe! My family gets together alot, and eating at other people's houses has been challenging. I made a stupid error yesterday and will pay for it the next few days with d, but it is a good reminder!

I too am feeling healthier and am so happy to feel "normal" for longer stretches of time. I have stopped losing weight. I have a blood draw today to see if my iron levels have gone up, since I am anemic.

Any advice on taking iron? I was given a very pure for of iron from my doc, but it makes me feel horrible right after I take it. It's not glkuten-related. I think it could just be hard on my system??

Anyway, best wishes to all the newbies, and thanks to the vets for all of your help and guidance. It is truly appreciated!!

  5. So, should I go ahead and go to the doctor? (It's so expensive :( ) Or does this mean with high probability, I don't have celiac disease? Any thoughts?

I know it is expensive, but if you do have celiac, it is important to know so that you may make a lifelong diet change. If you go undiagnosed, you may feel like you can have gluten occasionally and it will do long-term damage to your body, not to mention possibly trigger other autoimmune diseases.

It sounds like there has been some damage done to the small intestines already, and the fact that removing gluten helped you improve is really good news. As hard as this may be, you need to stay on gluten until you have the testing done, so that the results are not skewed. Also, if you can make sure to get a recommendation for a good GI doc that is knowledgable of celiac disease that will keep the frustration level down that many of us have faced with misdiagnoses.

    Best wishes.

  6. i've been on a strict diet for around 1 month and every time i eat late on a night about 7ish i wake up feeling sick and tired has anybody else had this problem or is it just me??? i try to eat early but working late and eating dinner at my desk does not help

Eating later makes me feel sick in the morning, too. I tend to go to bed early, so a late dinner can really throw me. Hope you can work something out! Small snacks so your not as hungry when you get home from work?

  7. I think Tarnalberry is right about tea, so many good flavors and so many with caffeine! :D If you're worried about caffeine withdrawal going off coffee, you'll find you can get enough from tea. Green tea is great, if you don't like black teas.

    Hi Cathy,

I switched to tea in November when all of my stomach trouble started as a way to get anything out of my diet that seemed offensive. I absolutely love it and don't miss coffee too much. Pepper mint really soothes my stomach and has help on those days when I can't seem to stabilize. I like the traditional medicinals brand. I've also purchased Rishi loose tea. You can either buy a little basket to submerge the tea in, or for about $5 you can buy 100 filters to stuff the loose tea into. It is really good stuff!

  8. I need to look at the ingediants agian when I get home but have you tried the Enviro- Kids cold cerals. The corn flakes are good. They have several diffrent kinds. I got that since my parents went organic about a year ago and buy that kind for my nephews. I had tried it before.

We eat the Enviro-kids cornflakes and they are good and gluten-free. :P

  9. I think on Saturday, well actually I know, I had tried a piece of cheese cake, gluten free(very small, like 3 bites) and I think I am experiencing the effect. I have had D the last two days and my stomach is killing me. Does it take that long or is it something else that I am experiencing? I always thought, and sometimes it happens to me, that if my body doesn't like what I give it or if it gets glutened, It usually happens shortly after I eat. So I am not sure what is hurting my stomach now. That cheese cake was not worth it! I hadn't been eating dairy for that reason but....Just thought I would see, ya right. Well thanks for listening.

For me the d lasts 3-5 days and my stomach will rumble instantly if I get glutened or eat something that I can't tolerate well. I've eliminated dairy all together since that seems to be such a problem for me.

    Hope you feel better soon!

  10. This is a really hard thing to transition into, I really feel for you right now. Getting healthy is your number one priority and seeking out support such as in this forum will really help you through this. It sounds as if your husband is taking this personally. Maybe you can explain to him that you need support right now and that is most important role he can play at this point. As you start feeling bettter, that will be proof of how gluten free is helping you.

If you can spend some time perusing this forum, you will learn alot about good substitutes and things you can eat with little work. When I first started this a month ago, I just ate naked food....plain meat, veggies, fruits, rice, potatoes. That was really stabilizing and helpful to just get my bearings. There are alot of lists in this forum and other places of mainstream foods that are gluten-free.

As for the cookout, bring your own food! People are really understanding about this. I've found just saying that I have food allergies, even though that is technically not accurate, people understand and then I haven't made a big deal out of things and drawn attention to myself.

I hope that you can feel less overwhelmed as you are armed with knowledge.

    Big hugs,

    Terri

Does embedding a picture not work on this forum? There seems to be a button for it, but it doesn't seem to work. Any hints? I was going to post some pictures of recipe I made tonight.

    Any hints?

I had tons of trouble, too. I had to download Jpegsizer 6 and then it worked like a charm! It's a free download. Good luck! Can you send some goodies, too! (:

  12. Make sure you are checking you cosmetics and shampoos and such. Also any arts and crafts type supplies you may work with.

So even if it is not something I will ingest, I need to look for gluten in it? Are there different chemical names that I should look for in cosmetics that I would not be on the lookout for?

    Thanks

    Terri

  13. I have an embarassing symptom that I would love some insight into. My stomach/small intestines is so noisy, especially if I have ingested something that doesn't agree w/ me. The rumbling comes from the left side of my stomach area. My kids have asked if there is a dinosaur in my stomach!

To give you a bit of background, I have been gluten-free since Easter with many mistakes. I had negative bloodwork, but was told to try the gluten-free diet and was on it for a month before the bloodwork was done. I have had d since June of last year and these tummy rumblings started in Sept. They are especially loud in meetings and in class. I decided not to take a class next semester because I wanted to get to the bottom of this. I have felt good since being gluten-free and also have avoided lactose since Nov. My d has cleared up alot and most days I feel pretty good. I am anemic and I have bone loss in my hip area. I am 33 years old. My doc said I have IBS and gluten intolerance, not celiac.

The noises do seem to related to being glutened, and it seems to last 3-5 after I have made a mistake. I am getting better at the diet, so this happens less frequently. I seem to be extremely sensitive.

    My questions are:

    1) Do I need to try to get a solid diagnosis, or do I proceed with the diet since it is working?

    2) Any advice on how to calm the stomach rumblings when they do occur?

    3) I have learned alot of info on this website, but is there something obvious/not obvious that I could be missing? My iron supplement is gluten-free/cf, I use Aim toothpaste, I switched charcoal to the whole foods brand, and I am doing well reading labels.

Thank you for any light you can shed on the subject!

    Terri

  14. Hi all,

I've searched the web and can't figure out if Klements brats are gluten-free. I've seen Johnsonville and Old Wisconsin posted as gluten-free....I know Klements is a Wisconsin-based company, so maybe they are not widespread. I've got my Whole foodsbrand charcoal ready to go!! Please let me know if youare aware of the ingredients.I couldn't find the ingredients on the website either.

  15. I just had to share my love of Kinnikinnick's chocolate frosted donuts, they are my one sinful treat that I don't think reeks of gluten freeness! They also make cinnamon sugar, maple frosted, chocolate glazed, and vanilla frosted. I found them in the freezer section of my health food store (See, donuts ARE a health food!!) They can also be ordered from Kinnikinnick's web site.

    Drool...drool....

    Melie

Thanks for the recommendation. I got them yesterday and had one warmed up-to die for!!! I just don't want to let my husband try them or he'll eat them all!

  16. Hi Derek,

I am from SE WI and have found a few good gluten-free resources...Gluten Free Trading Company in Bay View, Good Harvest in Pewaukee, Outpost Foods has several Milw. area locations, Molly's Gluten Free Bakery in Pewaukee.

There is also a Milwaukee area support group called the Celiac Sprue Crew. I've not been to a meeting yet as I am new to this as well, but I did receive a new member packet and it was full of really helpful info. The thing that has helped me get through all of this is arming myself with as much knowledge as possible, and this is a great place to gain insight.

    Best wishes to you.

    Terri

  17. Hi there,

I am so sorry to hear of your struggles. I am at the start of all of this too and have lost about 16 lbs. since Nov., but since I have gone gluten-free/lactose free, I have been able to maintain my weight and feel better.

I am from Waukesha, WI, and the recommendation to start a gluten-free diet came from a nutritionist that I went to see at an integrative health clinic. Here is the link to the clinic with bios. of the doctor and nutritionist on staff. Open Original Shared Link

I found out about them through the Good Harvest Natural Food Store. Betsy Hicks does presentations there on eating gluten free and IBS. I couldn't go to the IBS seesion and decided to call and get an appointment becuase I was going to Disney with a group and needed to know what I could eat. She asked me if I ever considered gluten to be an issue and I said no because I had a colonoscopy and they tested me for celiac and nothing came up. She asked me to try the diet and see how I felt. I felt better within a few days! I had already been nursing my system and was staying away form lactose and raw foods because of the d and how noisy my intestines would get after eating those offending foods, so I don't think any of the detox got to me as badly.

I would suggest trying this group if you can. The downside for me was that they aren't in my insurance group, but it was worth the money for the consultation alone. They will listen and give you resources. Since you are diagnosed, you are already on your way.

A couple of other gluten-free resources in SE WI, (not sure where you are located) are Good Harvest www.goodharvestmarket.com

    the Gluten Free Trading Company

    www.gluten-free.tc/AboutUs.html

    and Molly's gluten-free Bakery.

I really hope this is helpful and that you are able to gain strength and health.

    Sincerely,

    Terri

  18. Hi everyone,

I just went to Stonefire Pizza in New Berlin and it is a thumbs up! I thought that it was a national chain, but after a little research found out that it is a part of the White Hutchison corporation model of family entertainment centers. So others might have a location similar to this, but it will be called something different.

Anyway, it is an awesome place, similar to Chuck E Cheese, but much better! Nicer clientale, more staff, lots of play options for the kids. The buffet does not have a lot to offer a celiac except a salad bar, but they also have an Asian bar with citrus rice and sweet and sour pork that is gluten-free. The head chef, Shaun made me my own beef and broccili that was gluten-free since the soy sauce they use has wheat in it. He was very accomodating and professional. We went with another family and I was glad to not need to make a deal out of my diet and be able to feel satisfied as well. So if you have kids, I would suggest a trip out here.

They also have a mommy and me playtime for $3 a kid and $5 for adults weekday mornings from 9:30-11 am.

    Here's their website:

Since this is pretty new to me, I am so happy when I can just feel like a normal person when it comes to eating out and not feel excluded!

    Terri :D

  19. I have this problem frequently, too. Try cropping the picture as much as possible--it may just be too big.

I tried to crop it and upload using avatar, but it won't let me select an avatar. I don't really even know what that is, but I read some previous posts that spoke of this. Argh!
