  1. The endoscopy is the "gold standard" for diagnosis right now (so I'm told) so as long as he does that you should know for sure. I have read that you have to be ingesting gluten for at least 2 months (I think it was) to get accurate, no fail blood test results. I know my doctor told me that 1 year after diagnosis he will order another blood test for me and as long as I am successful with following the diet then the test should be completely normal. So I don't think the 3 years amount is correct. Like Dolly though, I'm not a doctor. I can only share what I have learned over the last six months. Good luck!

    I read on this forum that you need to eat wheat (gluten) to get an accurate result for blood panel. My GI doc said that as long as it hasnt been 3 years w no gluten the test would still pick up the antibodies he is looking for.

    I guess it really doesn't matter b/c he said either way the results go he will still do the endoscopy and test my intestines (I think I said that right).

    Has anyone got a pos blood panel after not eating gluten for a little over a month? I have had an accident on halloween where I took a bite of a candy bar that had gluten in it.

    Just replace the oreos with extra raspberries and blueberries or even gluten free cookies if you like. It's SO good. My husband made this for me the first time I had it and I was so impressed!

    If cool whip is a problem (it doesn't have lactose, but it does have the milk-derived protein sodium caseinate) then you may find this thread helpful for a completely dairy free whipped topping - Open Original Shared Link.

    If you are looking for a cake recipe I have those too. They just typically require more crazy ingredients that you wouldn't normally have if you don't cook gluten/dairy/egg free all the time.

  3. I hadn't heard of Orthostatic Hypotension, but I just looked it up on Wikipedia and the symptoms sound very much like the same symptoms I have had with celiac disease:

    Symptoms, which generally occur after sudden standing, include dizziness, lightheadedness, headache, blurred or dimmed vision (possibly to the point of momentary blindness), generalized (or extremity) numbness/tingling and fainting. They are consequences of insufficient blood pressure and cerebral perfusion (blood supply).

    Though I would feel this just while sitting at my desk at work. I also have gotten cold sores at the crease of my mouth and sores on the inside of my mouth. I haven't gotten the ones on the outside though in a long time! I wish you both luck on finding out what the problem is. I know what you mean about just wanting to find the answer. It's not that you want it to be celiac, you just want to be able to feel healthy again!

  4. So since I've been very sick for almost 36 hours now, I've started trying to hunt down the culprit so I can avoid this in the future if at all possible. I tried a new cheap wine called Crane Lake before getting sick. Has anyone had this before? I wanted to call the company, but it doesn't have a number on the bottle and I can't seem to find them online. It just says Crane Lake Cellars, Napa Valley. It was decent wine for the price, but I'll never buy it again unless I know it's gluten free!

    The other suspect stuff I had was:

    whole foods organic canned garbanzo beans

    Safeway cornstarch (usually use Argo)

    Safeway cumin (used it before, but maybe not as much as I did this time)

    I can't think of anything else that was new to my diet.

  5. It does help, thanks! It's nice to know that I'm not crazy over here. I really appreciate all of the responses. I called my doctor twice this morning and emailed yesterday and have not heard anything back. This board is such a comfort. I am so thankful to be able to have such a large and knowledgeable support group! Thank you very much!

  6. Thanks so much for posting this. I'm glad to hear that I'm not alone in this experience and I'm not dying! I'd never heard of the Brat diet before so I googled it. It definitely looks like a good plan. I just wish now that I knew what glutened me. It'd be worth it if I had a nice big slice of pizza for all this pain. :)

    yes i have had it that bad, what i do sometimes is gbo on the brat diet, well minus the toast and it helps me feels somewhat better and lots of gatorade.

  7. I have been horribly sick for 32 hours now and am starting to wonder if this is a "normal" celiac related glutening or if I am sick with something else. It is like I have been taking the colonoscopy prep pills for 32 hours straight (seriously - no exaggeration). Has anyone else been glutened this badly? If so, do you have any advice on how to get through it? I'm scared to eat anything so I'm making jello and drinking tea with honey in it. Thanks in advance for your help!

  8. I just wanted to share a great recipe by Lorka150 (Laurie) that I found on Recipezaar. I made it the other day and it was so good I decided to buy Laurie's book. I always make her Flax Bread which is a godsend (Open Original Shared Link - also a thread on it here: Open Original Shared Link so I figure the best way I can say thank you to her is to buy her book. I can't wait to get it and try out more of her recipes!

    Anyway, I have pasted the link to the pumpkin bread recipe below. It was really easy to make and very forgiving to substitutions (I didn't have amaranth flour or tapioca starch so I used 1/2 soy and 1/2 buckwheat flour and extra potato starch). For those of you who like things sugary, you will want to dress it up with syrup or powdered sugar. I really like it just heated up plain. It's three days later and it's still really moist. Yum! I can't think of what it reminds me of, maybe french toast, but the texture is like a moist thick banana bread.

    these are a dense nugget, good for toasting as croutons and have them savory, or dipping them in maple syrup. you can add sweetener of choice if you want more of a cake. they have a brownie like texture.

    Good post! Here are my symptoms:

    1. Distended Stomach/Bloating/Gurgling (first sign)

    2. D (and multiple times to the bathroom)

    3. Agitated

    4. Blurry stinging eyes and sensitivity to light

    5. Mouth Sores

    6. Foot Cramping

    7. Gas

    8. Fatigue/Foggy Head

    9. Nasal Drip (forgot to add until someone mentioned it later)

  10. My doctor (Alessio Fasano - UM Center for Celiac Research) said that I should come back once a year to meet with him and have my blood work done. He said that if my blood work comes back normal then we will know that I am not accidentally ingesting gluten. (Hopefully I am relaying the information correctly). Maybe a simple blood test would answer your question? That way you could have some piece of mind that you are following the diet.

  11. I know that international food markets have large bags of rice flour and it is much cheaper. My mom bought me a bag, but I am worried that it could be contaminated so I haven't tried it yet. Anyway, that is an option. Also, a local health store called Healthway gives me a 10% discount if I buy a box (4 bags) of flour. It's still expensive though. I've been trying to limit my baking.

    where can i find cheaper gluten-free baking products - everything is crazy expensive in the stores . $6 for a small bag of gluten-free flour..crazy
  12. I gained weight too when going gluten free. I started doing weight watchers and stopped eating and drinking wine at night. One thing I love to eat that is easy and gluten free for lunch is a can of tuna, a 1/2 cup of cottage cheese and a 1/2 can of green beans (mixed up and heated in the microwave). Sounds gross, but I love it! Good luck!

    I was diagnosed with celiac in Feb 2005 and have been gluten free ever since. My problem is that ever since I started the diet I continue to gain weight, I went from 150 to 218. I've begun an exercise routine, tried dieting, and end up missing lunch a lot. Does anyone have any suggestions for healthy recipes or ways to lose weight because I'm getting married in about half a year and I want to look my best. Please help! :(
  13. I went to this restaurant recently (off Rolling Rd. in Saratoga Shopping Center in Springfield, VA) and it was wonderful! I just had to share it with everyone. If you are looking for a safe place to go, this is it! I showed them my Triumph dining cards and Sophie, the manager, came out to talk with me and recommended that I get the white sauce. The meal was great and let me tell you the Mai Tai's were absolutely the best I've ever had (seriously, the best anywhere)! They are fantastic! Let me know if you try this place out! I'd love to hear your experiences. It was so nice to go somewhere and not have to worry about getting glutened. I've been there 3 times now and it has been a good experience every time. It's so nice to go out to eat and not have to worry about getting glutened!! I am very thankful that they are within driving distance!

  14. Thye have spaghetti squash at my local Safeway too. They are really good! I cooked up meatballs in a pasta sauce and put it all over spaghetti squash when I had company over and no one even missed hte pasta. They loved it! It's great for weight loss too. Very healthy and less calories than pasta. I definitely recommend it as well!

    I see spaghetti squash regularly even in the regular grocery store. Maybe things vary depending on where you live. The peak season is coming up.
