I work in the airline industry, and I can attest that someone with Celiac Disease (like myself) cannot trust the airlines to take care of our health needs. I'd much rather a restaurant say "gluten friendly" rather than provide a false sense of security that their meals are 100% gluten free and not cross contaminated. The problem is simple, unless the restaurants are dedicated gluten free the risks are just too high for cross contamination for EVERYONE with Celiac Disease and other gluten health issues,...

Every single procedure and surgery since 2007 (I've actually lost count) has required me to bring my own gluten-free food or cookies for recovery. Once I had to spend the night and they offered me a gluten-free breakfast, but I did not trust it and only ate what was sealed from the original company, like yogurt.

I can relate to a lot of what you said. I cannot leave the house without planning out my meals. No longer do I eat out, way too many times I've gotten sick at the hands of others. To the OP, I wish I could say it'll get easier like some have alluded. Sure, you're health will improve and you will feel better overall. But life on the other hand will be more difficult and challenging than ever, at least that's the way it is for me. My sensitivity to Gluten is extremely high and any form of cross contamination will alter my health...
