  4. Tennisman, I did not do an elimination diet to figure out my intolerances, but it certainly is the easiest and quickest way. Narrow your food choices way down to things you know don't bother you, and then one at a time, every 3-4 days, add in something that you think could be a problem.   7. Those darned blood tests have caused more suffering on this earth than I would care to quantify. Just so you know, they are not infallible. There is a 20% (at least) false negative rate on those tests. And the doctors not only don't tell you that, but they don't tell you that it would be a good idea to give the gluten-free diet a good three-month trial...
  8. Quinoa is one of the high-lectin grains. Gliadin in wheat is a lectin. There are lectins in corn and soy and peanuts. If you happen to be lectin sensitive you can react to any or all of these things. For me it is all, plus some others. So you might just consider that you have sensitized yourself to the quinoa lectin. Or it might be something else entirely...

For me I knew that corn and soy were problem foods, but I never suspected that nightshades (tomatoes and potatoes, ferevvinsake) could be a problem. Those were my comfort foods. Pizza always made me feel good. My favourite side dish was ratatouille with most of the nightshade family in there. Nevertheless...
  14. I too am intolerant of potatoes. I have found that the manifestations of intolerance take many forms. For me the intolerance has changed from formerly intense itching to now bloating and erratic heartbeats. One can never judge one's own reactions to something by how someone else reacts.

  20. Hi, Meghan, and welcome. Don't be discouraged quite yet, five days is a very short time. Give it another week or two and if it still persists I would start suspecting another food culprit. For me, it was potatoes. Soy also gave me the itchies, but I had a rash with that. But no rash with potatoes. Everyone reacts differently to different things...
  21. Did you know you had a problem with nightshades before going gluten free? I think for most of us we only find out after we get the gluten out of our systems, and then some, like me, take longer to figure it out...
  22. Just the very fact of your diagnosis and quitting eating gluten has increased your longevity odds immensely I really don't think you need fear an imminent demise. We eat more healthily than the rest of the population and may well outlast them all.
  23. The nightshades are a bit of a puzzlement to me. I initially gave them up because I knew they were inflammatory and I was concerned about my RA. Giving up bell peppers was easy because they never had sat well with me (I hated fajitas!) and I have not really missed eggplant, although strangely enough ratatouille used to be one of my signature dishes.   24. No, I think it is just because most older people have never been diagnosed. I am sure both my parents had it and both lived to be 80 plus without diagnosis. My sister who is self-diagnosed just turned 75. I am a few years behind her (but still what you think of as "old") but only self-diagnosed two years ago. Don't forget the blood test was developed...
