Thank you for the opportunity to blog about celiac! I have been on a stringent diet for intolerance to all grains, milk & dairy, egg whites, yeast, casein, whey, maltodextrin, modified food starch and MSG since 2000. Dealing with the social ramifications of not participating as others do in the "normal" dietary regimens of "normal" America has been a...

ARCHIVED Depressed About Eating A Restricted Diet
Welda Johnson replied to rymorg2's topic in Coping with Celiac Disease
I joined this forum for the first time in 2000 or 2001. Have spent the past 12 years going through the same things as all of you in the posts above, I always think it will get easier, and, certainly, at times it does seem easier, but it seems that being intolerant of all grains, all milk & dairy, egg whites, yeast, casein, whey, maltodextrin, modified... -
ARCHIVED Newly Diagnosed Baker
Welda Johnson replied to MaggieMc's topic in Coping with Celiac Disease
Thirteen years into being gluten and milk & dairy free, I also had to stop all foods except fruits and vegetables because of asthma, gout & rheumatoid arthritis. This morning I took my grandson to a fairly new bakery in Escondido, CA, 30 miles north of San Diego. All the pastries contained milk, so those were out, but they offered breads that were... -
ARCHIVED Living Normally While Battling Celiac Is Like:
Welda Johnson replied to 1desperateladysaved's topic in Coping with Celiac Disease
I can understand how desperate you might have felt during your times of transitioning to a gluten free diet. I've been gluten free since 2000 and also had to eliminate all milk & dairy products, meats, etc., so am now vegan. It used to really bother me when people were not accepting of my sometimes futile efforts to get this disease (and I also have... -
I was telling my grandson yesterday that I had had the Playmate Ice Chest I carry with me for 20 years, and it really makes life easier. I can only eat fruits and vegetables because of serious food allergies, so it is a challenge. I take orange juice in small containers with a twist-off lid, and even eat frozen orange juice with a spoon. Pickles are good...

ARCHIVED Tips For Switching A Household Of 6 To Gluten-Free

No, I also get the regular, and I thought maybe it was the Jumbo that had the wheat. I live in Escondido, CA, and get them at Trader Joe's. I live 30 miles north of Escondido. Hope you all can find the ones with soy--they are great! -

ARCHIVED Tips For Switching A Household Of 6 To Gluten-Free
Welda Johnson replied to DinkerGiggles's topic in Gluten-Free Foods, Products, Shopping & Medications
I'm from San Diego County, California, and I, too, shop each day, but today broccoli was $1.49 a pound, and lettuce was $1.69 each. Since I can only eat fruits and vegetables, I have an orange juice with fresh pineapple smoothie each day, using one whole pineapple & one can of frozen orange juice. That's $5.00 for one person, right there. Mushrooms... -
ARCHIVED Family Members Who Just Don't "get It"..
Welda Johnson replied to gancan's topic in Coping with Celiac Disease
Having struggled with these issues since the late 1970s, let me tell you, I have had to become numb to being called "weird," "eccentric," and who knows what else? But by rigidly sticking to my diet, I am no longer frequently in the hospital, as I used to be. No grains, milk & dairy, egg whites, yeast, maltodextrin, msg, casein, whey, and now no meats... -
ARCHIVED Daughter Diagnosed With Rheumatoid Arthritis
Welda Johnson replied to cap6's topic in Coping with Celiac Disease
I have Celiac Disease, Asthma, Rheumatoid Arthritis, and gout, which IS Rheumatoid Arthritis. I am female, 68, but mostly men suffer from gout, so I was surprised when that diagnosis came in. I've had Asthma since the age of 8 and probably Celiac always, but the gout and arthritis came in 2002 after I went vegan. I am now strictly fruits and vegetables... -
ARCHIVED Casein-free Replacement For Cheese
Welda Johnson replied to kempy99's topic in Gluten-Free Foods, Products, Shopping & Medications
I've been gluten-free, milk & dairy free, egg white and yeast free, maltodextrin, msg, casein & whey free since 2000, though the casein dilemma threw me for a loop until I learned that is what was causing some of my problems! There is ONE cheese that I know of that has no casein or whey, and it even melts. That is VEGAN GOURMET mozarella. But,... -
ARCHIVED Tips For Switching A Household Of 6 To Gluten-Free
Welda Johnson replied to DinkerGiggles's topic in Gluten-Free Foods, Products, Shopping & Medications
Our family is going through this right now. There are 3 health food stores in our town, and we are able to find everything we need. I've been gluten-free, milk & dairy free, and no egg whites, yeast, maltodextrin or msg since 2000. What I've found is to S-T-R-E-T-C-H whatever you're making in any way you can. Adding bits of water to things like mustard... -

Welda Johnson replied to CourtneyLee's topic in Coping with Celiac Disease

ARCHIVED Glutened Recovery Time
Welda Johnson replied to Jacky's topic in Coping with Celiac Disease
I remember standing in the grocery aisle reading the Orville Redenbacher packages and determining that I couldn't have them, though now I don't remember what was in it. Instead, I buy bulk popcorn at the Health Food Store. It's much cheaper and I do fine with it every time. I also never eat anything with casein, whey, or any kind of milk product. Hope... -

ARCHIVED Lots Of Food Intolerances--I'm Miserable!
Welda Johnson replied to Link's topic in Coping with Celiac Disease
Hi, In answer to what intolerances others have, and what others eat, I will add my information. I eat meat, fruits & vegetables, and sometimes I only eat fruits & vegetables. I'm 65, have had Celiac symptoms since age 8, and have been on a strict diet for the past 8 years or so. I am intolerant of all grains, all milk & dairy, egg whites... -
ARCHIVED I Am Feeling Frustrated
Welda Johnson replied to proud-armywife's topic in Coping with Celiac Disease
I feel your pain! At age 65 Ive been on a diet of meat, fruits & vegetables, or just fruits & vegetables for about 8 years, but have had Celiac symptoms since age 8. Sticking to this diet WILL get easier, and your likes & dislikes in food may change drastically, as you begin to feel better. Checking ingredients on labels, and becoming aware... -
ARCHIVED How Do You Explain?
Welda Johnson replied to hypersof's topic in Coping with Celiac Disease
It's good to see so many new people here--Welcome! I've been gluten free for quite a long time, and one of the biggest lessons I've learned is that our own health MUST come first. I usually take my own food wherever I go, and, finally, hardly anyone ever says anything anymore. They have just become accustomed to the fact that I can only eat meat, fruits... -
Hi, I'm so proud of you for taking care of your own health first. After being on this diet for several years, I can honestly say that taking our own food along is really the only way we can be sure that we will be safe. I noticed last week as I tried to explain to a friend that I would bring my own lunch when I come to her house next week for a group...

Welda Johnson replied to KateGrace's topic in Coping with Celiac Disease
Hi,hope you're doing well today. I can relate to so many of the things you said. After quite a few years of being on a diet similar to yours (no grains, milk, dairy, egg whites, yeast, msg, casein, whey, etc. etc. etc.) I am finally accustomed to eating this way. But, I got glutened last week, on a bottle of shrimp sauce I thought was safe. Not so. ... -

Welda Johnson replied to clinton's topic in Coping with Celiac Disease
Hi Clint, Welcome to a new life! I'm 65 and have only known for a few years, though, of course, I had the symptoms since age 8. Meats, fruits, and vegetables. They work. No casein, whey, egg whites, milk or dairy, msg, and the list goes on. Be aware of all those other items which could bother you. I'm happy for you that you have learned fairly early... -
Hi, I have been gluten free for YEARS, so I was so surprised last week to be feeling really lousy after lunch a couple of days in a row. Come to find out, the shrimp sauce I thought was okay was not--it listed WHEAT as an ingredient! I think now I must go back to square one and really be diligent about reading the ingredients in everything. Hope you are...

I learned of my casein & whey intolerances the hard way. I ate soy cheese that I thought was safe because it was labeled "dairy-free." Then I endured the consequences, which in my case meant severe asthma. I had already eliminated all grains, all milk & dairy, egg whites, yeast, msg, and modified food starch from grain. Later I found Vegesoy non...
