  1. I actually asked DD what we should have for dinner at her party and she said peaches and pears. She definitely eats more than she used to eat (prior to March when she was diagnosed), but her diet is still pretty limited. Her favorite meals are diced chicken mixed with rice and Velveeta, scrambled eggs, blueberry waffles, and pancakes...not really party food :) Lasagna sounds like a good idea...any good recipes for that, or any other ideas??

  2. DD is turning 3 in a few weeks and we're having a small party for immediate family. Although DD is the only one gluten-free in our family, I'd like to make her party gluten free if I can figure out something easy to make for everyone. I'd prefer not to do deli meats, but I am open to any other suggestions....especially easy ideas for dinner. Thank you!

    Appetizers:

    -Spinach artichoke dip with gluten free corn chips

    Any other ideas?

    Dessert:

    -DD's Minnie Mouse birthday cake

    -gluten-free strawberry pretzel salad

  3. If I add flaxseed meal to a muffin or bread recipe that doesn't normally call for flaxseed meal, do I need to adjust the other ingredients? I've seen it as a egg replacer (I think), so I was wondering if I have to decrease the eggs otherwise, or anything else, and if so, by how much, to keep it from being too dry or too moist. Thanks!

  4. Almond Chicken with Apricot Sauce

    1 c apricot spreadable fruit (I used preserves)

    3 Tbsp soy sauce (La Choy)

    2 Tbsp finely chopped onion

    4 tsp cider vinegar

    1 tsp ground mustard

    6 boneless skinless chicken breast halves (approx 6 ounces each)

    1/2 c sliced almonds

    1 Tbsp butter (I forgot to add this, still tasted great)

    Preheat oven to 350. Combine the first 5 ingredients in a small bowl; set aside 1/2 cup in a serving bowl to pour over the cooked chicken. Dip chicken in remaining apricot mixture. Place in a 9x13 inch baking dish coated with cooking spray. Sprinkle almonds over chicken, drizzle with butter. Bake uncovered at 350 for 30-35 minutes until juices run clear. Serve with reserved apricot sauce.

    6 servings of 1 chicken breast with 4 tsp sauce each: 360 calories, 10g fat, 1g fiber, 37g protein (that seems high?)

    Anyway, we enjoyed it (and I forgot the butter)--i hope you enjoy it!

  5. Ok, you gotta try this bread #180306. It was sooo like french bread. Crusty crust and soft middle. This is only my second loaf of gluten-free bread ever. My husband loved it. I posted my comments on recipezaar for June 21st. One comment there said she made pizza crust with it. Mine shrank while baking but that could easily be my fault. I will make it again to see how it turns out next time. I just sliced the ends for bread stick samples and put butter and garlic spread on them. Then I sliced the rest like a submarine bun. Great for a hamburger or a sliced hotdog b/c it would hold up and not get soggy. I also made 2 rolls out of some of the dough...perfect. I might add some basil and use garlic salt next time. Oh, I should try making breadsticks out of a loaf and dipping them in my favorite spaghetti sauce-Prego, or dip in soup, ya!

    This is a great recipe! It was my first successful (mostly) gluten free yeast bread. I'm not gluten-free (my DD is), and I really think it really tasted like french bread. DD liked it for mini pizzas. We also made great french toast with it...the texture holds up much better than other gluten-free bread that falls apart when wet. I also made garlic butter croutons as suggested by a reviewer on recipezaar, they were so good. I added a few tablespoons of flax seed meal and I split the batter into two loaves. It was slightly gummy in the middle, but browend on the outside, so I think I'll cover with foil toward the end and cook an extra 5-10 minutes next time. I definitely recommend it!

  6. DD uses a thermos for lunch at preschool. She's 2.5, so 10 oz works well for her. It's a wide mouth Thermos brand and it's great! I definitely recommend Thermos brand. One tip is to fill it with hot, hot (or microwaved) water for at least 5 minutes in the morning so the food will stay hot longer. I usually go downstairs and fill it with the water while brushing my teeth, let the hot water sit while we get dressed for work/school, so it's nice and toasty when I put her heated food into it.

  7. My DD loves Josef cinnamon graham crackers. It took her trying them a few times to get used to them because they're thicker, more like a cookie...but she's 2 and very into texture. DH and I really like them and we're not gluten free. We've bought them online, but our Wegmans carries them now.

  8. Always check the ingredients on packaged items, but we use the following:

    Baked/grilled chicken breasts

    Perdue shortcuts or Kirkland(Costco) grilled chicken strips

    Canned tuna

    Hormel pepperoni and turkey pepperoni

    Hormel chili with beans

    Oscar Meyer deli meats (they will list wheat, barley, rye, oats in the ingredients; therwise they're gluten-free)

    Hot dogs- Ball Park, Hebrew National, Oscar Meyer

    Yoplait yogurt (Original and Thick/Creamy; I don't think Whips are gluten free)

    Rice Chex (make sure it's the new box that says gluten free on the front)

    Mac n cheese: Tinkyada rice pasta with Velveeta

    Rice n cheese with chicksn: Rice with Velveeta and diced chicken

    Koshy Shack pudding

  9. I've used Chebe mix to make crackers (they have a recipe on their website). I mixed in cheddar cheese to make goldfish/cheeze-it type crackers and used a mini cookie cutter for the shapes (my daughter is 2). You can vary the type of cheese to change the flavor of the cracker. They were pretty good for a plain, basic cracker.

  10. Anyone else? We bought them, but so far only DH and I (we don't have celiac) have tried them. We haven't given them to our daughter, but I'm curious if anyone else tried them. They are fairly healthy for a chip because they have quinoa and flax seeds. The Celiac Sprue Association website lists oat fiber as not being consistent with a gluten-free diet, so I'm baffled by the company's statement that they're certified gluten free. Does that mean they have been tested to be gluten-free, or does that means that they believe the ingredients are gluten-free? Thank you

  11. Thanks for your suggestions! I did a search, but also wanted to start a new thread because you never know when someone has tried a new great recipe but hasn't posted about it. I guess I'm searching for the best for my DD!! She is still pretty slow to try new things, so I'm going to stick with chocolate or vanilla for her birthday because she definitely likes them.   12. I emailed Minute Maid asking if their juice boxes and pouches are gluten free for my DD. This is the response below, they can't guarantee they are 100% gluten free. I don't know much about Codex yet, still learning. Would you avoid anything not listed in the first paragraph that is confirmed gluten free?

    manufactured from plants that gluten-sensitive people could react to, so we are

    unable to state categorically that they are totally gluten-free even though they may have undetectable levels of

    gluten in them. The Codex guideline provides a very low threshold for gluten

    content. However, extremely gluten-sensitive individuals should discuss

    consumption of these products with their health care provider.

  13. DD will turn 3 in August, her first birthday since being diagnosed in March. What is your favorite chocolate or vanilla cake recipe? I've tried a few mixes and so far like Pamela's Chocolate Cake Mix the best, but I'd like to make her cake from scratch if there is a great recipe out there. Let me know if there is a special icing recipe you use, too. Thank you!!

    Yes, I posted them in another thread about Costco in April, but here is the actual email response. The grilled chicken breast strips, 181761, are Costco's version of Perdue Shortcuts, but they are Kirkland brand.

  15. :o Hi , I just called them today as well, same thing, Mam we can't help you, you have to give us the bar code then we will call you back, and guess what Trader Joes called back with in 15 minutes! They also acted like I was a pain in the neck. The thing is that " Artificial flavouring is bad for you" and " Natural flavouring is either gluten free or not and what is worse is that their fresh fruit like their green apples are sprayed with somekind of oil that I probably should stay away from. i think that they are serving the people who think they get more for there money but are you really getting more if you : never can find anyone to help , they are rude, they usually answer with I don't know, so what good does that do me? I asked them so are you saying I should go to the store buy all the food stuff it in my fridge then call you and read you the bar code and hope thet you answer me truthfully. So I asked them to emil me ( So that I have it in writing) " Sorry mam I do not have access to a computer.

    I wonder how honest they are? <_< I do not know? I need to see their Gluten Free list in Writing.

    Just a suggestion...I saw lots of products at Cosco I was interested in but didn't want to buy unless gluten free...you can make a list of the products and product numbers in question while you walk through the store for other purchases, then email Costco about the products in question. I received an email 1-2 days later saying they would be back in touch soon because they needed to check with the individual companies/manufacturers. I received an email several days later with all of the info I requested. I was very please with their service considering the amount of products they sell. I think it would be difficult for them to keep an up-to-date list since their products/inventory changes often.

  16. I recently called Banana Boat and emailed Bullfrog to ask about their sunblocks. Banana Boat said all of their sunblocks are gluten free. Same with Bullfrog, but via email (see below):

  17. I recently contacted Bumble and bumble about some of their hair products and received a great response. While several of the products I asked about contain wheat, I was impressed at how detailed they are...see below, they have info on gluten as well as corn, rice, and soy. I like their prep (for my daughter) and tonic, so I'm glad those are gluten free. I'm guessing they might have other gluten free products, but I only asked about the ones listed below.

    Here was my email/questions:

    "Hello, Do you have a list of your gluten free products (no wheat, barley, rye, oats) ? If not, can you let me know if the following products are gluten free: hair prep, leave in conditioner, does it all hairspray, styling lotion, thickening spray, tonic. Thank you!"

    Here is their response:

    "Thank you for taking the time to contact us and for your interest in Bumble and bumble.

    We appreciate the opportunity to explain that we do not have a comprehensive list of products that contain or don't contain certain ingredients.

    While a formulation may contain no wheat, oat, barley or rye derivatives, for the benefit of our gluten-sensitive consumers who may have cross-sensitivities, Bumble and bumble takes the extra precaution of including corn, rice and soy in our research.

    Prep spray contains corn.

    Leave In Conditioner contains wheat, corn and soy.

    Does It All Hairspray contains soy and various grains which may contain wheat.

  18. Yes, Fruity Pebbles are gluten free. Some mainstream cereals may have the risk of cross contamination, but my daughter eats Fruity Pebbles, Cocoa Pebbles, Trix, and Rice Chex without a problem. Make sure the Rice Chex box says Gluten Free on front b/c they just recently took out the malt, so gluten-filled boxes are still out in some stores. Berry Berry Kix has a new box that also appears to be gluten free (based on ingredients), but my daughter won't try it, so I can't tell you if that one seems to be ok. We've also had General Mill's Mickey (berry crunch?) cereal, but it's hard for us to find, as well as Dora stars.

  19. I would invite everyone for the playdate with a heads up that you plan to provide all of the food so you can offer treats everyone (including you and your daughter) can enjoy. There are plenty of things you can offer...fruit, gluten free pretzels/chips/cookies, or whatever you and your daughter would typically have as snacks (sorry, I don't know much about casein free, so you would know best what would work). I would not risk having lots of gluten crumbs spread in the house by a group of toddlers when you would be the one who would have to clean up.

    Just wanted to add that this is all new to me, but I feel pretty strongly that your friends should just roll with this. My DD 2.5 has been gluten-free since March, she is the only one in our family. I have served some gluten foods (really only potato rolls that don't crumble much) in our home to my parents and close family because they are all very good about washing hands and minimizing mess. However, I certainly wouldn't serve them during a 2 hour toddler playdate that doesn't need to revolve around food anyway. I plan to keep her 3rd birthday party completely gluten free...I need to do some planning now!

  20. We live in Pennsylvania, but will be driving to New Brunswick, Canada this summer. We will be staying in a very small town with only a very tiny general store, but we can drive to St. John for a regular grocery store or SuperWalMart. We plan to pack specialty items for our DD 2.5 (like gluten free pretzels, rice pasta, pancake/cookie mix, etc), but we would like to shop for most of the food once in Canada...due to limited space in the car and the need for perishable.

    Will we find most similar brands of foods as we'd find here in the US? For example, my daughter's favorites are: Yoplait yogurt, Rice Chex, Fruity Pebbles, Perdue Shortcuts (chicken), Oscar Mayer deli ham, Oscar Mayer or Ball Park hot dogs, Velveeta block cheese, Kraft singles, Tostitos, Eggo syrup, Heinz ketchup. Any ideas where I could find gluten free waffles (my daughter loves Van's blueberry)? If not are there any good substitutes you would suggest for any of the above?
