Certainly if they were not properly cleaned they could still have trace amounts of gluten. Imagine a roommate who cooks gluten pasta in a pot which gets coated inside with gluten, then doing a poor job of cleaning it so there might be small amounts stuck inside that pot. Now imagine the colander used to screen out the water, and the screen also having trace... -
This seems to vary greatly from person to person. There is no specific formula, and many doctors don't do follow up blood tests to see if a patients antibody levels have dropped. I've not see any studies that track such drops after going gluten-free. In theory they should begin dropping as soon as you are 100% gluten-free, and after a few months should be...

Have you had a blood screening for celiac disease yet? This would be the normal first step, before an endoscopy. If so, please share your results, if not, you may want to ask your doctor why this hasn't been done yet. When you say you got the genetic tests, did you also get a celiac disease blood panel that shows different antibody results? If so, please share that info with us, as this is normally how celiac disease is diagnosed, and a referral for a biopsy is made. I would communicate your gluten-free diet needs with everyone involved with your food. So the person who brings you food--ask them if your meal is gluten-free. If they don't know assume that it isn't and insist that they find out. -

It sounds like your doctor has already made the formal diagnosis based on your blood test results, iron deficiency, etc., so perhaps the results won't be a big factor for your doctor either way. Three days off gluten likely isn't enough time to heal if you do have gut damage. Let us know how it turns out!
