  1. I was wondering if anyone has used tinkyada pasta for soup? I know when boiling the pasta the water becomes thick and starchy so it would be best to cook the pasta and then add it to the soup, but has anyone ever tried making a thincker soup by boiling the pasta right in it? I wanted to experiement with this. I have made just plain chicken broth with the pasta before is tastes good, so i thought maybe making a thicker soup or stew this way would taste good also.....

  2. so glad I'm not the only one having perios troubles gluten-free. I went gluten-free and my pms got horrible. then it got better....then it was mild but lasted forever. the 2nd month gluten-free I got my period twice! I spotted this month and never actually had it. I've had period problems in the past, somrtimes irregular, but I always got a regualr flow. I actually lost it for 6 months once, but that was about 7 years ago when I got too thin.

    So being gluten-free definitly has to be related!!!!

  3. Its not really a "recipe" as such, but its yummy. I use it most with my pumpkin pie, and have learned I have to make two, as all the non-gluten-free people eat it up.

    I take a box of cookies per pie plate (plain shortbread is best, but the pecan ones will do in a pinch if you pick out the bigger nuts). Crumble them up in a bowl, then add 1/4 tsp or so melted butter. Smoosh into the pie plate to form the crust then bake for about 5 minutes in a 350 degree oven to set it (watch it, as it will burn fast if left too long). Any part of the crust that is exposed during baking of the pie may overcook a little, so I try to make sure my innards lap over the edge or are even.

    Be warned, its addictively good.

  4. So after a year of not having a primary doctor, I finally got one!!!. Now I'm just wondering how I shold go about mentioning the gluten issue to him. It's so hard to think where I should start when explaning this to someone??? I have problems directly related to being gluten free which need to be addressed, but I fear he will just be a typical doctor and tell me to start eating wheat again. But I can't even touch the stuff!!! Not to mention the 10 + years of constant digetive problems and related issues I had prior to being gluten-free. I know there is noting much they can do as far as blood work besides a gene test and maybe an endoscopy (I'm still having digetsive problems)...at least maybe I can be recommended to a G.I....I know I'll never be able to be officially diagnosed, but at leat I may feel a bit better about addressing the issue??? has anyone been in this situation?

    This is so frustrating. I just wish I had a doctor back when I was still eating gluten and just finding out it was making me sick, puking after only 2 beers, soars in my mouth and just feeling like complete crap.

  5. i have the same problem with the whole stools situation! its so gross i really don't want to have to explain it to my doctor! no matter how much fiber i take it still doesnt seem to make a difference... :(

    so glad I'm not the only one!!!! lucky you have a doctor. I dont, trying to get one. its scary not having one as I feel there is something really off in my body. I've even been waking up in the morning with a coating in my mouth and sometimes a sour taste. I think all my problems are eeither starting in my stomach or are a hormonw thing since I havent been gettting regular periods either, if any.

  6. You know....I dont have this problem. But xylitol will give me "D". I wonder if you ate a little packlet of xylitol if that would help.......It isnt harmful. It is a non-digestible sugar alcohol. A lot of fiber is non-digestible too. So similar concept.

    Some foods move through me faster than others. Okra is another one that gets things going.

    is this an artificial sweetner? I've heard of it before but wasnt sure....

    I refuse to put any artificial sweetner in my body. I dont even chew gum with it in it. mouthwash and toothpaste are the only exception since I dont really consume it lol.

    Back on topic. The Turtle Mountain that you ate seems to be the coconut, and coconut can cause gurglies.

    cookies dough is what i ate!!!! I will try it again in a few weeks under differant circumstances :lol: That ice cream was WAAAYY too good!!!! OMG!!!

    does regular coconut contain a lot of sulfites??? I eat jennies coconut macaroons all the time (made with sullfite free coconut) and have no problem. high sulfite foods like garlic cause me hell! even red wine....

  8. So I stayed at my mom's apt. for a few days (def. not a gluten-free apt!! lol) I brought all my own food and used my own silverware/bowls.

    anyways, here's my first complaint/question:

    I started getting even worse constipation in my time there (I've been having it off and on since going gluten-free), not that I cant go, its just REALLY hard and (sorry) but it comes out in little round balls. I have to strain to get it out or I can feel it just sitting there. kinda like when you geta stone in your shoe and keep walking, annoying!! Even when it doesnt come out in little round balls it is still very dry and not normal, sometimes with mucous. I've even had some blood from irritation. I eat a TON of fresh veggies and fruit and get plenty of fiber/water..ect.ect.. So I bought a stool softener it's this one Open Original Shared Link

    the site says its gluten-free, but I have been having gas pains and lots of gas, but it doesnt smell like when I et gluten, its actually odorless :huh:

    and moving on. I have ate a couple differant things in the past days. one was kraft ceasar dressing which contains dairy- so I know that botheres me a bit, but not horrible. My gas also seemed to get worse when I tries this ice cream: Open Original Shared Link. Has anyone had this before??? The culprits may be either potato flour or soybeanoil in the ingredients. It was SOOOOOO good though!!!, so I'm hoping my gas/gas pains are not from that! I just felt more gassy and constipated since staying at my moms, it just got really bad after I took the stool softener. So maybe its just a combination of new things I tried along with CC from her apt. grrrr and I have a pain in my head....

  9. I have been getting more headaces since being gluten free...maybe its withdrawl/body re-adjustment??

    But I have also had a few other problems as a result of going gluten-free so the headaces could be related to that too, its so hard to pinpoint exactly where problems come from....

  10. Not so. Both turn toxic when heated to high temperatures.

    One of the healthiest fats on this earth is coconut oil. It is a saturated fat (and yes, we absolutely NEED saturated fat to be healthy) which is extremely heat stable and is as a result fabulous for cooking and baking. Just make sure you get cold pressed, non-hydrogenated coconut oil.

    For salads, olive oil is still the best choice (coconut oil is usually semi-solid, unless it is summer and very hot and can't be used for salads).

    There is no need to eat really lean meats. And beef is actually good for you. I read not long ago that actually, when you cook red meat, most of the fat will change into into mono-unsaturated fat, which is the same kind of fat as olive oil. Saturated animal fat is healthy and needed. People who only get fat from vegetable sources ask for getting sick, as their bodies won't be able to function properly.

    Margarine is one of the worst sources of fat (yes, even if it is non-hydrogenated, it is still unnatural). Miracle whip is made from hydrogenated fat, and is extremely unhealthy.

    Eggs are a pretty good source of fat, and they are very healthy.

    Also, you might want to take some fish oil (cod liver oil in the winter) to get omega 3 fatty acids. We all get too many omega 6 fatty acids, and not enough omega 3 in our diet.

  11. What are some good healthy fat sources?

    So I think I've asked this before, but i am finding I have sensitivity to nuts and seeds. Almonds are O.K for me if I only have a few and I am staying away from dairy- milk, cheese, yogurt are just horrible for me. I've I'm not skinny, but I'm not fat. I have more muscle than fat and am slender, but in very good shape- 5'6 about 140 ibs-ish. I have had problems with losing my period in the past due too being too thin/excersizing. Since I went gluten-free, my monthly problems are acting up again and I'm thinking that it may be due to not having enough fat intake, which may also be causing me to have more constipation than normal (I'm almost wanting to go back to having D now :lol: bsd thought)

    any advice?

    again, I'm avoiding dairy,seeds,nuts (minus almonds and hemp milk) and potatoes (for now). I like eating lean meats and rarely eat red meat. I think the only source of my fat right now is margerine, mircle whip and the fats natural found in the foods I eat....which isnt much variety since I cant stomach too much, rice, rice pasta, quinoa, buckwheat all kinds of cooked frozen veggies and occasionally I have coconut macaroons as a treat.

    This is just so hard since it is difficult for me to stomach high fat foods, so I'm just thinking to find ways to spread it out throughout the day...

  12. yep. I'm right there with you. I think part of the reason though, too, is we start thinking about it TOO MUCH. Then when something just a bit off about our health pops up we immediatly jump to diet/celiac/what did I eat?? I try to remember that even normal people have bad days/occasional diarhea...ect..ect. Nobody ever has perfect health. although I think for a celiac, the "not feeling good" has a greater chance of being food related, but not always. I hate to even say it, but I definitly think into things way too much, which in a way, for a celiac is good when trying to analyze our diets, but there is a point when I start blaming it all on gluten/food allergies....

    but yeah, it does drive me crazy!!!

  13. So I never eat hot dogs, but only at get- togethers (and this was before going gluten-free).

    I hate the name brand hot dogs like oscar myer. I live in western NY where sahlen's hot dogs are made. these are the ingredients, what do you think?

    Sahlen's Hot Dogs Ingredients: pork, water,beef,salt,corn syrup, flavorings,dextrose,hydrolized soy and corn protien, oleoresin of paprika, monosodium glutamate, sodium erythorbate, sodium nitrite, collagen casing.

    BLAH, typing alll that makes me never want to even eat one. but "FLAVORINGS" puts a flag up for me.... and of course msg-yuck! :ph34r:

  14. I eat their products all the time and have had no problems gluten wise. I love their pnut butter and chocolate chip granola bars also.

    Diverticulosis might cause some pain but generally it will be on the left side in the descending colon. That said it is not uncommon for those of us who have had problems with C to have the diverticuli spread out throughout the large intestine. These outcropping can apparently heal as mine after 5 years gluten free are now pretty much gone on last scope. If you have diverticulosis and the diverticuli (the outpouchings themselves) should happen to get inflammed you would feel extremely ill in additon to being in a great deal of pain. This would be an attack of diverticulitis and a medical emergency that you should get help for ASAP.

    It used to be advised that those with diverticulosis avoid nuts and seeds because they could be an irritating but not all doctors agree on this.

    I would be inclined to wonder if you have perhaps an allergy or an intolerance to something that is in the granola. That would be more likely to cause tiredness and a headache. Another possibility also since you mention you have been PMSing for three weeks is that you may have gluten sneaking in somewhere. It there anything you added to your personal products or your diet in the week before you started feeling yucchy?

    thanks for the info. I actually used to get the pain down the left side of my abdomonen (starting just below the rib and moving all the way down) it would get so bad that I would feel naucious and have to lay on my stomach. Now I only get the pain if I eat seeds/nuts, but nothing like when I have wheat.

    As far as new foods, I could be feeling yucky b/c of processed foods. I told myself that I wasnt going to eat any for a while, but it is so tempting to buy them, especially now that I am working full time and look for easy things to bring to work. Generally I eat pretty good with lots of veggies/fruits and whole foods, but I did start introducing corn into my diet again, so that may be part of the main problem. I've tried tomato sauce on and off, it never works well with me either. It's almost impossible for me to avoid CC completely since I live with gluten eaters and work with people who snack by the computers and share the break room, but I am always washing my hands/cleaning things- I'm well aware of it. I don't seem to really have a major reaction until I ingest the actual gluten grains . If I am CC'd a lot I will sometimes get a migrane or slight headace, but if I actually eat gluten grains I start getting the major digestive problems. I just feel like I keep starting over. I think I have it down, but then it all comes back...what a learning process... <_<

  15. Has anyone had it? I bought 2 bags yesterday b/c it was on sale 2 for $8. I thought it tasted too good to be true, but then I'm not sure if my problem is from this. I ate quite a bit of it yesterday and started feeling like crap today and woke up with some minor discomfort in my abdominal area. I started devoloping a headace and just started feeling really tired and not wanting to do anything. It's almost like a gluten reaction, but without all the bloating and gas. I have had some problems with seeds and nuts in the past so I'm thinking this must be it, I cant have this stuff anymore :( I also have not been having a fun time going to the bathroom, It's not C but it just seems like it doesnt want to come out all at once, its like whenever I eat stuff like this it just sits in my colon

    Can seeds/nuts cause headace and tiredness like gluten can??? I also am thinking maybe diverticulosis?? I went to the ER in the past for lower right abdominal pain ( which I get slightly in the same spot when I eat seeds/nuts), but the ER trip is when I ate wheat nuts- they couldnt give me an answer to my problem, other than they were ready to operate on my for apendicitis :blink: it def.wasn't that though as the pain went away...

    I've also had pms for 3 weeks now :angry: , so maybe that is the prob- I can't tell anymore!!!!

  16. Well, I think I may have answered my own question. Instead of spending the day at the beach with my nieces, I'm staying home with abdominal pain, cramping and low back pain. So I guess sharing in Pizza night was not the best thing to do.

    I do not think I will be going in for the blood tests after all. I forgot how miserable it feels when your insides feel like they are being squeezed in a vice. I guess I will join the club of self diagnosed gluten intolerant folks. It is not worth spending one day like this, never mind three months!

    As a medical professional, I am always wanting the definitive diagnosis....I guess I will have to figure out a way to accept the "undiagnosed" diagnosis.

    I'll be spending more time here now, but mostly for recommendations on recipes for things like Pizza dough and bread and cookies ;-)

    welcome to the club. I'm in the same boat as you. I went back on gluten a few months back in hopes to get tested, after three days I was in misery, bloated, gassy, heacace,aches and pains,ect- I said "no way." I would also like to have an official diagnosis and I am finding it hard to get people to understand me and my decision, but then I remind myself I am doing what is best for me. Those other people would probably still not completely get it even if I had a official diagnosis. If anything I may see if I can get a gene test. I cant afford enterolab otherwise Id definitly do that.

    I have no choice right now but to share cookingware and i really havent had too much of a problem either. I do agree that it is a little rediculous sometimes thinking about all the things people do to live in a completely gluten-free house. I mean, if I had the money to live inj my own house I would have it completely gluten-free also, but I cant right now. I know I could feel better than I do right now, but I havent had any MAJOR reaction. But then I usually dont react until I take in a large amount of gluten, or continuously eat it day after day. Lays do not work for me either, and actually, I found that potatoes altogether cause me problems. I tend to get gassy, tired, headace and stiff joints, but more so with potatoe chips than whole baked potatoes. I find the canola oil in chips bothers me also.
