This is a lovely treat if you're craving ice cream
- One can of full-fat coconut milk
- Frozen fruit (peaches, blueberries, strawberries, mangoes, etc... a fresh banana is nice too, but you need frozen fruit to make it like ice cream)
- A bit of sweetener as desired (maple syrup, stevia, honey)
Blend at low speed until the frozen fruit is all crushed, then give it a whirl at high speed for a smoother texture. You might need to add a bit a liquid if it's too thick (almond milk, rice milk, fruit juice... whatever sounds good to you).
If you drink the whole thing it's about 900 calories Very satisfying.

Have you tried cooked greens? I never ate these until I started meeting with a holistic nutritionist that also has celiac disease. Inow eat collard greens, turnip greens, kale, etc. Do grains bother you? They are very soothing for me. I actually have brown rice with raisins, natural maple syrup, and unsweetened almond milk for breakfast. It is delicious.
yes, I love all kinds of greens. especially collard and mustard greens. I'm still not 100% sure about grains. I seem better (digestive wise) off of them, but I lack tons of energy w/o them. Brown rice and quinoa (when I can afford it!) I love. I will have to try the rice with raisins/maple syrup, that sounds REALLY good right now.

So I've been eating (for the most part) all whole foods and took grains out of my diet..I have them on occasion, but find I'm better without them. I'm gluten/soy/dairy free, minus the tiny bits of soy here and there once and a while that dont seem to bother me... same with dairy...it really depends.....I just dont like the thought of dairy/hormones alltogether, part of the reason I stay away from it other than it bothers me in concentrated forms.
I just really want to make something that TASTES GOOD. I think I'm just sick of the same foods all the time, along with the combination of constantly cooking for myself. I've got to the point where I dont even care about food preparation anymore and will just boil/or bake some plain chicken, eat plain veggies and snack on fruit throughout the day. The thought of sitting down to an actual meal with something differant and with differant flavors makes me drool... Not that I cant cook something up with differant spices, its just lack of motivation to do it....I feel like I'm just eating to survive. I eat very healthy, but eating like a cave man gets to ya....I've also been feeling really tired lately and think its from lack of variety in my diet....I'm just so bored with food!!!! its funny how it takes a year for it to sink in how nice it was to just be able to go out and order something!.....its realY REALLY sinking in now
So anyone from Buffalo NY area want to have a gluten free cooking party? lol!!!

dont qoute me on this, but another thing may be hormonal changes as a result of changing your diet. I've been through quite a hormonal rollercoaster since going gluten-free...its just starting to even out now...but there were times where I would cry for no reason, even of front of peopleI normally dont cry in front of..it was like it was uncontrollable.....add that on top of stress...and yeah.....niagara falls...
things will get better. good luck with everything

Has anyone had a problem with this?
I've bought the wal mart brand that is the same thing and have no problem (its labeled gluten free), but for some reason when I eat the tyson chicken I get bad gas and a "bubbly" stomach...very annoying! Its not as bad as a glutening but foul smelling like it, and I only get foul smelling gas from soy/dairy/gluten.
The ingredients are just chicken, salt and natural flavorings. I dunno....maybe its a coincidence lol I've also bought perdue individual wrapped chicken with the flavorings added and have had no prob with that...wierd

I would definitly look into other foods. Maybe it could be a withdrawl symptom? I know I had this also off and on after going gluten-free. Kind of like when you are used to having caffiene for so long and then cut it out, some poeple get headaces.....at least for me that happened...

all this advice is really good. I would definitly keep snacks you KNOW are gluten-free handy wherever you go. Also, I'm not sure what your diet is like, but it is really helpful to eat NON-Processed whole foods. I know the typical diet of the average person today is anything but this, but the more you stick to relying on whole foods over processed, the less likely you will be glutened (of course unless they are CC'd in the preparation process)
I notice that all those processed gluten-free foods really dont make me feel well either...sometimes I almost feel like I have eaten gluten, even if they are 100% gluten-free. I eat nearly all whole foods everyday....maybe a couple times a week I will have a processed snack. It really takes a while to get used to eating this way....I know it's something I gradually had to work myself into...otherwise I would go into binging on junk that I really shouldnt have.

I did happen to see it. I thought the same thing -- that it was so great that they acknowledged it as important and legitimate. However, the Dr. kept talking about Celiac as a "wheat allergy" and it was annoying to me because that is mis-information -- people are going to stop eating wheat and miss so many other little additives and extracts and proteins from other grains that contain gluten. I think he said the word "gluten" once!!! Come on. I admit that yes, I watch that show, but don't happen to find the doctors so reliable or expert anyway... even prior to this incident.
Also, they sort of extolled the powers of whole wheat as if it were a super food (except for the fact that 1 in 130 people are allergic to it!!). And they perpetuated the idea that this diet is difficult and unhealthy. That just could not be further from the truth! Clearly, those people have not done enough research because a gluten-free diet that doesn't rely heavily on pre-made/processed gluten-free goods can actually be very nutritious.
I just found the little clip upsetting, even though it did get the word out. But I guess, in the end, if it prompts people to be tested, it's all worth it.
I was thinking this too actually. They could've explained it better and took a little more time...but then I was also thinking the average person watching the show would still not undertand it completely. Not saying that everyone is clueless..but just from talking to people on a day to day basis ,sometimes trying to explain what gluten is and what happens to someone with celiac is like talking to a brick wall....they just dont understand, especially if it isn't something, like an allergy that recognized when very young....so yeah, definitly agree the allergy aspect got tme a bit upset...but at least they said "celiac disease" on national tv, lol. And as far as the TV show, I sometomes wonder why i even watch it b/c I really havent learned anyhing rom it! I often notice they contradict themsleves a lot too...

I was wondering if anyone else watched "The Doctors" today??.
They had an episode about "what to do after diagnosis" of differant diseases/conditions. I was immediatly thinking, "they better talk about celiac" and sure enough I saw a bag of Tinyada Pasta sitting in front of them and thought "yay."
Anyways, I was glad that they talked about it as something that is becoming more common and that many problems people have may actually be related to food intolerances... and that they dont neccesariy have to have"classic symptoms" etc,,
They could've explained it a bit better, but with the time they had, I was suprised they did a good job. anyone else see it?

Initially my PMS got better after going gluten-free, but a few months later they got worse, REALLY worse.... but I also found out I develop cysts in my ovaries. I have had some wierd bleeding with the cysts as well, but also other colored discharge...which i wont get into But with the larger cysts my period comes late....its like my PMS last for a month before I actually get my period. My bleeding is differant everytime. It usually starts off light like you and then isheavy for two days...sometimes disapears and then comes back light and then somewhat heavy again....kinda annoying. Your gyno will prob. have you get an ultrasound. I've been having to go in every few months tomonitor my cysts...blah

Ever since going gluten free I noticed changes in my voice, but I'm pretty sure they are due to hormone changes throughout the month. I've had my thyroid checked several times and they say its normal. BUt all of the symptoms I feel are very similar to thyroid. At certain times of the month my voice is completely weak. I can talk fine, but my throat starts to feel soar if I talk too much...and singing on some days in just out of the question.....its like my vocal chords are retaining water...very frustrating when my life revolves around music!!!! I am going to the doc in the near future and I want all this figured out as well!!!

I believe i finally figured this out.
Salt.
I normally eat all whole foods with very little sodium in my diet. I bought some corn tortillas the other day, i defintly ate too many because I could feel the salt irritating my mouth. I woke up the next day tasting blood in my throat, looked in, sure enough, thre were a few little red dots that have started to burst. It seems to happen whenever I have proccessed crunchy foods, especially corn. I'm going back to completley ignoring corn, I had over 8 trips to the bathroom with D today thanks to tortilla chips. Not sure which ones they were b/c I tried two kinds, Riceworks (which have corn in them) and Santitias...which I know could possibly be CC, but the D reaction happened after the Riceworks chips which I ate yesterday....I havent had corn in so long, so I guess I got my definit answer that I cant tolerat large amounts, if any at all.....I'll try again in the future...with a small amount ....

I know a lot of people have issues with nuts. I love eating nuts and usually dont have too much of a problem unless i eat more than the serving. Typically Peanuts are the worst (they sit in my stomach, especially peanut butter) and cashews I just stay away from... I know they are in the bean family too though.....
BUUUT For some reason t I found that I can eat pistachios until they come out of my ears and have no problem!!!!
Is anyone else like this? or am I just imagining things? I'm thinking that maybe tree nuts are easier for me to digest than other types....i dunnoo.....almonds usually dont bother me, until I have too many but pistachios, I can never have too many

I always though t floating stools meant a lot of gas in the stool. I used to have them all the time b4 going gluten-free. The only time I have had them while gluten-free is if I eat too many processed foods. I eat tons of fruits and veggies now and nearly NO processed foods at all and never have floating stools.

just thought I'd add i dont care for redbridge, but if I was in a bar that had it I MAY get it. I am desperate to try GREENS beer. They sell it at some Wegmans in 3 differant flavors for $5 a bottle...
my fav wine is cabernet. Also The Lakewood vinyards Wine "Long Stem Red" from the finger lakes is a really good red wine for $8 a bottle I live in Ny also.

I'm a college student looking for a job. Most of the options in my town involve resturants, since there are three times the amount of resturants here than stores!! Tim Hortons is out of the question for me lol, I've worked there before knowing about celiac...
Bob Evans in Hiring and I was thinking of applying either for grill or dishwasher. (I hate the ideas of waiting on tables-not for me!!!) From what I"ve heard most of thier food products are pre-prepared before they get to the resturant....I'd really only be worried about wrking there if they work with flour a lot..or at all for that matter!..but I can't really picture that. If I did dishwashing I would wear gloves, I'm not too worried about that...but just wondering if anyone knows anything about the resturant as far as food preparation? I've applied at non-resturant places and havent heard back in months, I really dont have a choice anymore, I need to work....as long as it isnt in a bakery! haha But even tim hortons...I dont ever rememebr them working with flour...everything was pre-prepared there as well! minus powdered sugar and toppings for donuts...

I'm sorry you're going through such a hard time!
It's possible that this is not related to celiac disease at all. I think you could benefit from making an appointment with a good gynecologist.
My periods were getting progressively worse through my 20s... very heavy, lasting from 7-10 days (normal is 6-8), irregular (normal is every four weeks, mine were as often as every three weeks), and very painful. Sometimes I would get cramps in the middle of the night, only I wouldn't wake up until they were really BAD and I was near the point of throwing up.
I'm not advocating this as a solution, but once I had my first baby the pain really decreased! My other problems were caused by gluten intolerance and not having enough thyroid hormones.
thanks. I defintily plan on making another gyno appointment after my ultrasound next week regardless of the results. I'm thinking that maybe my estrogen and progesterone levels are out of wack b/c it can cause the symptoms I'm having (I think ). hopefully they can have a blood test or something before I go... They never really told me my blood work results after the last appt. so I assume everything was normal....but then knowing some doctors, things can go left un-talked about.

I heard switching over to the gluten free diet can effect hormones in the body. I was just wondering if there is anyone else, particualry women, who has experienced this and how long does it take for the body to go back to "normal"???
I'm not sure if hormones are my issue, but I really don know what else it could be. I'v been gluten-free almost a year now and it seems all my PMS symptoms started up after going gluten-free. A lot of it has to do with cysts that alo popped up, but i never had bad PMS until I turned about 21, I'm turning 23 in march and am wondering if maybe this is just a change of getting older, or does it have to do with diet???
I just dont know what to do anymore because I am effected by this really bad for 3 weeks out of each month....sometimes I dont get a break at all!!!
I've posted about this before but I have literally been in tears lately b/c it is effecting my life so much. Especially my singing voice. Doctors just dont seem to understand how it can effect my singing, but it does. I was planning on laying vocals down for a song I'm recording, but now it is postponed b/c, well, my symptoms started up and my voice is just not there, its like I'm working twice as hard to try and produce the same sound, and it just feels like fatigue in my vocal chords, not to mention fatigue throuout my whole body. I even wrote a letter to "the doctors" TV show b/c I am so fed up. I've had hormone tests done, there was nothing there as far as I know, and am going back for a second ultrasound next week. I've just been wiped out.
and for the record I am gluten/soy/dairy/nighshade/red meat free. sodium well under 2000mg a day, no sugar, no artifical sweetners, no caffine, no alcohol and I eat tons of fruits and veggies, plenty of water. Nothing seems to help. Normally excericize makes me feel better, I'm a dedicated runner, but I've have taking off so many days lately b/c I just get so fatigued and feel light headed after working out sometimes. I know I'm not being glutened, if I was I'd be puking and going to the ER. I'm not a depressed person at all, but with all these symptoms I'm sure thats one thing a doc would think...I only get depressed when my body just decides to do whatever it wants!!!! I almost sometimes think the digestive problems while on gluten were better than dealing with this- thats how awefull I feel ........so upset right now I feel normal for 7 days a month...it seems I'm always trying to squeeze all my activities in in those 7 days, especially recoridng/music stuff, b/c once whatever this is hits, it just takes over...i can fight all I want, but it doesnt go away.

I have a friend that is a diagnosed Celiac and has travel to some of the most remote areas of the world, where farming and harvesting has been done the same way for centuries. She is able to eat wheat products without any issues.
on this same note. there is a great video on this. its a litte long, but I was completely disgusted when I saw it

thanks. so true. It was around this time last year that I started realizing gluten was a problem for me. I didnt go completely gluten free until May, but even after all that time I'm still learning, I definitly have the diet down, I'm just realizing how hard the social aspect of it is, especially now that I am becoming more sensitive to CC since I havent had gluten in so long... I knew before it would be hard, but it seems I always have to learn the hard way with everything until it sinks in!
I told my mom about the CC at my friends and she said "thats crazy" as if witnessing me puking and becoming sick after eating on x-mas wasnt enough to convince her.....its true, some people will just never get it...

so now I'm really wondering. my stools are really dark brown...almost black looking..like when I have pepto bismul, but I havent had any. I havent changed anything in my diet normally my stool is bright brown from all the colored fruits and veggies I eat, and I didnt have any meat yesterday or anything dark...

So for my business communications class we get to choose a topic for our final 10 minute presentation....of course i have to talk about celiac disease!
This presentation isnt until May. I have tons of info i could talk about just from researching this for so long and I know info is easily available out there, but I was wondering if anyone has any links to possible visuals I could use? For instance I saw an example used in some celiac presentations with a before and after picture of what a "classic" celiac child looks like (before and after going gluten-free).
Also, if anyone knows of any short video clips under 2 mins anywhere that have good info.....or just really any good links at all that arent the obvious ones out there on the web!
again, I could easily find this myself, but I often find that people on this site post up links to new things I never saw before! Any suggestions for info to talk about I'lll take too since I'm really doing this to get the word out there- not so much worried about my grade Theres over 40 people in my class, so I'm sure not all of them know about the disease in detail.....if they even heard of it at all!
