  1. I wouldnt care if a food manufacturer was on my back. It would be up to them to prove their gluten-free status if they are claiming that (gluten-free) on their packages and the ELISA proves otherwise. If they are not claiming gluten-free, then they will have no beef with you at all. So it has gluten, they never said it didnt. Like the paper plates for example.

    If this test proves accurate and I tested a product that was labeled gluten-free and it tested POS, I would contact that company ASAP and tell them what I discovered. I would drill them about their testing and it they did not answer me satisfactorily then I would most certainly come on here and post the product.

    But hey that's just me. Im a maverick. B)

  2. Certain carbohydrates like grains and sugars spike my blood sugar. With diabetes on both sides of the family, I want to avoid that. I actually tested different carbs with my glucometer. It was pretty clear anytime I ate anything with sugar, it spiked. I just stopped eating it. I wasnt eating much anyway. Over the years I had cut back because it was "unhealthy" according to all of my research.

  3. It's really hard with teens and sometime you just cant win. They will have to be responsible for their own health. I know that is hard to accept.

    But, what you can do is make sure you prepare delicious and nutritious gluten-free foods in your home. Unfortunately, a lot of the gluten-free processed foods will make her diabetes hard to control.

    Focus on good gluten-free complex carbohydrates like brown rice, buckwheat, quinoa, etc. Learn to make them that tastes yummy. With my daughter I cooked these grains in gluten-free chicken broth and she loved them. Now I am not eating grains. But enjoying all of the wonderful winter squashes available. And she loves them too. A dollop of butter and salt and they are very good.

    Low sugar fruits are good and you can make tarts and such with almond meal flour, fruit and stevia. Some recipe books might be in order. And have her join in and learn how to cook yummy gluten-free foods for herself. It could be a bonding experience for mother and daughter.

    Keep an eye out for gluten-free cooking classes. I see them around here from time to time.

  4. The goal of the diet is to heal the intestines. Once you are symptom free for a good 3 - 6 months, you can try adding a bit of your favorite grains back in from time to time. Just dont eat them everyday and in excess. See how your body reacts at that point. It might be just fine. In general if you stay away from an irritant long enough, the reaction usually diminishes. So lets say eggs are a problem for you and you cut them out for 2 weeks and then eat one, you might get a severe reaction. But if you stay egg free for 6 months and eat one, you might not get a reaction at all.

  5. Yes it could have been a false negative. Some people have severe symptoms of Celiac, but negative blood, then POS biopsy and get dx. Some have NEG blood and BIOPSY but respond to to the diet and get dx that way. Some have a celiac gene and positive response to the diet.

    The most important thing is you discovered what your problem is....gluten!!

    Celiac or an intolerance the cure is the same.......gluten-free diet.

  6. I personally just dont do very well with much sugar anymore. I only get sugar from small amounts of fruit and the tsp of honey here and there.

    Maybe you "coveted" her brownie because you are addicted to chocolate. :P

    Had she been eating a blondie, maybe you would not have cared......

  7. A true allergy IgE mediated has to be dx by "skin prick" test. You will need to go to an Allergist for this "skin prick" test. You DO NOT have to be eating the food. This type of allergy causes swelling, itching, hives, anaphylaxis, etc.

    For food sensitivities there is ELISA testing. Google it. There are a lot of false POS and NEG on Elisa. And they are expensive.

    If you do not have the swelling, hives, itching type of reaction to these foods, why not just eliminate the suspect foods and see if you get better? Then if you do, you can challenge them later to see which one or if all of them are a problem. It is free to do an elimination diet and it is accurate compared to lab testing.

  8. O.k. I just ordered the test strips. I actually decided to tell the person exactly why I was buying them: to test for accuracy. The reason I did this is because I wanted to tell them what I would be testing and to make sure that these foods and the way I was going to conduct my test were the best way to test them for accuracy. So she said that the woman that invented the tests was in a meeting, but that when she got out, she would tell her exactly what I would be testing and that it is a test for accuracy only. She would call me back to let me know if this was o.k.. I gave my credit card number and ordered the tests, but my order will not be processed until she calls me back.

    ***UPDATE***I just got the green light from Natalie. The test strips are not heat sensitive (I checked cuz I live in FL and those UPS trucks get hot). She said it was fine and that they do store theirs in refrigeration but it was not required. They are designed to be carried in a purse or bag. I should get them tomorrow or Wednesday. Let the games begin! :)

    No matter what this test shows they just arent practical. I read that if you are testing foods say at a restaurant, that you have to make sure you test some of every part of the food. So if you order 9 layer dip at a Mexican restaurant, you have to get some of all 9 layers in the sample, ground it into a fine paste and then test it. How do you grind hamburger meat into a fine paste at a restaurant? Or cheese? Hey ladies, I dont recommend taking your Vita-Mix with you on a first date. :P

    And here is the thing too, let's say you to to your In-laws for Thanksgiving. And you take a sample from each dish whirl it up and test it and all comes back FINE. But you didnt happen to take a sample from where your Mother in law accidentally dropped a few breadcrumbs in the sweet potato caserole. And you eat that piece. You get sick anyway. And you wasted 25.00 bucks!

    Oh and I asked about testing paper plates and Natalie said they are not designed for such use and that results from such test could not be vouched for. These tests are designed for food products only. And no testing has been done in their lab on none food items.

  9. Umm...Sam's is NOT gluten-free. They are made here in Tampa where I live. At my first Celiac support meeting the leader warned us about Sam's bakery. And sure enough the next time I went to the health food store, I read the label and it says that it is manufactured in a facility with wheat and they do not take any precautions and therefore do not claim it to be gluten-free. Many have gotten sick off of Sam's. So in your case, it might not be the millet. But I am sure you arent willing to try millet by itself.

  10. Oh I am not going to test my vitamins or any UNKNOWN items. This experiment is to test for accuracy NOT whether or not an item I am consuming contains gluten.

    Right now I do not trust the test stripes. They have to prove accurate to me first. Any tests performed without testing for accuracy first have no value to me whatsoever.

    And they are WILDLY expensive. You may be able to spend 3600 USD on these strips but most of us in here would not. And if you are testing on commercially made products, just because one tests NEG one time, doesnt mean the next batch will. Even blood sugar test strips come with a KNOWN control solution so you can test for accuracy before testing your own blood.

    So I will test KNOWN gluten foods and KNOWN non-gluten foods. Please see my previous posts to understand how this will be an EXTREMELY ACCURATE way to tell if these tests really work.

    There will be NO CC in my non-gluten foods. Not even a possibility. Fresh homemade coconut milk and cleaned/peeled pumpkin puree in a 100% gluten-free kitchen that has seen only whole foods and is anally cleaned 3 times a day. And the KNOWN gluten foods will be soy sauce and whole wheat pasta (tested in my garage which is the ONLY place gluten is allowed).

    Funny that you MUST have read my experiment plans and yet you suggest I try an UNKNOWN???

  11. First of all, the people that are trying to accommodate you mean well and would never intentionally CC you. But YOU and only YOU are responsible for your health and well being.

    Im like a Boyscout now....ALWAYS PREPARED!

    I recently visited my family for a family reunion. I took a large cooler full of enough food for me to eat the whole time I was there. My Mom made a roasted turkey and some turnip greens for me. She showed me all of the seasonings she used and the package for the turkey. I ate it safely with no problems. But I had my stash in my cooler for snacks and other meals. Eating out...call ahead and ask the manager what you can eat at the restaurant. Your family is trying to accommodate you, so they wont mind if you spend 10 minutes on the phone before you go. Or you can do it when they arent looking. Show up at the restaurant and order what you know is safe.

  12. Yes I would think those antibiotics are doing a number on you. Even though they arent oral, you should consider some probiotics to help heal your gut.

    Have you looked into the SCD (Specific Carbohydrate Diet) to heal the gut? It is helping me. Like you, all these other issues popped up after going gluten-free. Things I didnt have before. :(

    Boy, I really owe you an apology. You have stuck by me through thick and thin. Literally. I ballooned you to nearly 170 pounds and have brought you down to 110.

    Let's start from the beginning. I have hurt you real bad and I want to make sure I dont miss anything. You deserve some recognition here. When I was young I wasnt very nice to you at all. I drank soda whenever I could, I ate candy like it was going out of style and made you eat sugar by the spoonfuls. I would get Strep throat month after month and curse you for getting sick all of the time. I fed the spinach to the dog. I ate the pork chop and mashed potatoes instead. Remember when Mom said to "brush your teeth good"? Yeah, I didnt do that. Yup...skipped the flossing too. So I am sorry you had to sit through all of that drilling. Im also sorry for the tooth I let rot out. It hurt.

    In my teen years I let you get pretty overweight. I fed you lots of Funyuns, cheesburgers and ice cream. I didnt exercise you much. In fact, I took "Health" and "Driver's Ed" just so I could skip out on the exercise. For this I apologize. I let you get incredibly fatigued and I kept you inside sleeping instead of getting some healthy sunlight. You started getting sick. And who could blame you? For that, I hated you, and I made sure you knew it.

    And let's not forget the 20's. Out dancing till 3 am and eating a huge breakfast at Shoney's at 4. Then not getting you to bed until 6. Oh and there was some alcohol too. That wasnt very nice. Weekend after weekend. And then there was our little bulimic secret. My G-d did I abuse you. You havent forgotten the Friday nights....I know you havent because you talk to me through my bowels still. Friday night Pizza Hut. An entire large pizza....pan crust no less!! And then if that was not enough, I tortured you by eating a pint of Hagen Daz.....Vanilla Swiss Almond. You struggled. You churned my insides. You made me so groggy. But I didnt listen to you. No I drank some "Slim Tea" just so you could forcefully evacuate all that food the next day. Followed by a dozen Dunkin Donuts the next morning. That hurt you. I bet you thought it would never end? And unlike the teen years, I got your exercising. But not in a healthy way. No. I made you do the stair-stepper for hours. I made you lift weights at 4 in the morning, so you would have enough time after work to do enough cardio to work off the last binge. I made you sweat and groan. I gave you injuries. Your knees started hurting and I gave you chronic shoulder pain. I am sorry.

    You started talking to me louder in my 30's, so I kind of listened. I decided to feed you "healthy" food. So I forced you to live for 6 months on nothing but raw and sprouted foods. Then when you became severely anemic, I let you eat some fish. But I still forced you to eat sprouted grains and soy. Lots of soy. Im so sorry. Please forgive me for that vegetarian stint as well. It was just way too many beans. Of course at the time I didnt know it was all of those "healthy" whole grains that was hurting you the most.

    Well now I do. So this month I will turn 40. I want you to know that I plan on taking very good care of you for the next 40 years. I promise I will never stuff fast, fried and nasty food into you ever again. I promise to be diligent and make sure no gluten gets into you. If it does by accident, I will not yell at you or punish you. I will instead rest, drink lots of pure water and send love to you. I will not look in the mirror and say "I hate you" ever again. I will love you. I will care for you.

    Thank you my body. Thank you.

  14. Welcome to the board!

    First, are you sure you are 100% gluten-free. It isnt as easy as it sounds and I glutened myself several times in the beginning accidentally. Check all medications (Rx and over the counter - you may have to call companies if they dont have it online), toiletries such as facial cream, shampoo, toothpaste, lip gloss, chap stick, etc. Does your mate eat gluten and then kiss you without brushing teeth? Did you replace old cutting boards, scratched Teflon pans and toaster? Are you living in a "mixed" kitchen where "flour" is used as that gets everywhere and is nearly impossible to avoid. Do you eat out?

    And MANY Celiacs must cut out ALL dairy as well at least for a few months. The tips of the villi are where dairy is digested. You didnt have a lot of damage, but those very tips might need to heal. And the only way to do that is cut out dairy. A lot of folks can add it back in later after they are symptom free with no problems.

    If you are 100% certain you are 100% gluten-free, then you may just need time for your body to heal. My migraines went away first and it was immediate. But it took quite awhile before I could see improvements in the other areas and I am STILL healing (6 months in). So be patient with yourself. You were eating poison for a lot longer than 2 months, so it stands to reason it could take longer than that to fully recover.

  15. The body knows if it can support a fetus. And there are many reasons why it might not. Including deficiencies, structural abnormalities, stress level of the mother and eggs that are not viable (which can be due to genetics, radiation damage, among other reason). PLUS your husband's sperm could be the issue. Poor motility. Low sperm count. Etc.

    A good nutritionist can help you put on weight if you need to do that. And a fertility specialist can help you guys figure out why.

  16. I just cant tell Hubby Im doing it. :o:huh: He has been extremely compassionate and giving with all of my issues and food changes (and never complains about the money), but he might not go for wasting 53.50 for an "experiment". :P

    And I agree. They just arent practical at all. I am not going to mix up a concoction of my food to test at a restaurant in front of my dinner mates. Wait 10 minutes to see if I can eat the food. And if it tests POS for gluten, then what? "Im sorry Judy and Ron, but I cannot eat here. I know we drove together, so I will just wait outside while you eat your meal." OR "Ill just eat this LaraBar while you guys eat your steak." No it doesnt work for that!!

    And at home, I only eat whole foods these days. I rarely use paper plates, but I would know if one bothered me. Cuz I only eat my own whole foods prepared by me. It would be pretty obvious. I sometimes wonder about the teabags when I have hot tea out, but I have not reacted to any yet. And how would you test one of those?

    If I ate a lot of processed foods, maybe I would want to test certain items. But then who could afford it?
