  1. I made these today....oh soooo yummy!!

    PUMPKIN MUFFINS

    Ingredients

    2 eggs

    1/2 cup pumpkin puree

    1/3 cup honey

    4 Tbsp melted butter (Coconut oil if you want dairy free)

    1 tsp vanilla

    3/4 tsp baking soda

    1/2 tsp salt

    1 1/2 tsp cinnamon

    1/2 tsp nutmeg

    1/4 tsp ground cloves

    1/4 tsp ground ginger

    2 1/2 cups almond flour

    1/2 cup chopped walnuts (optional)

    1/2 cup raisins (optional)

    Instructions

    1. Preheat oven to 325.

    2. Line a muffin pan with paper liners (12 muffins).

    3. In a large mixing bowl, use an electric beater to thoroughly combine all ingredients EXCEPT almond flour, walnuts, and raisins.

    4. Stir in almond flour until well combined.

    5. Stir in walnuts and raisins.

    6. Spoon batter into muffin cups, using wet fingers to press down any bumps on the tops before baking.

    7. Bake for 25-30 minutes, until golden brown and a toothpick comes out clean.

  2. Over time you just realize what bothers you and you cut them out. I have been corn free for years. It always bothered me. I recently tried adding some back in. It still affects my blood sugar but no other symptoms. I am trying to keep my BS stable, so I wont eat it often...hardly ever...if at all. I dont need it in my diet. I cut out the grains because in general I do not tolerate starchy carbs very well. It really messes with my BS and I get digestive symptoms. The SCD diet is what I eventually adopted because it is what I am basically eating/not eating anyway.

    I will say one thing my husband had to drill into my head in the beginning of our relationship is that MEN DONT GET HINTS AND THEY DONT DO SUBTLE!! :o

    What has worked for us is for me to be VERY direct with him. It was sooooo weird for me to do this at first. I was afraid he would get mad if I just said what I felt. But he didnt. What used to piss him off the most was trying to figure out what I wanted or didnt want.

    So back then, I might have said...."Baby...Im not feeling too good tonight." Whereas now I will say, "Just so you know, you aint gettin any tonight. My stomach hurts and I feel sick. So be sweet." I make sure he hears me and it works well. :) "Be sweet" is our little code. He should then say back to me..."I'll be sweet." This way the understanding is understood.....LOL :)

    Same goes for if I am in the mood. I used to drop subtle hints that I was randy and he didnt jump on it. So I would get pissy wondering why. And he would just say that he didnt have a clue cuz he didnt want to read it the wrong way and get shot down. :huh:

    So now I will just say...."Do you want to be wiff me?" and there is no confusion. He knows what that means and usually has his pants off before we get to he bedroom. :P

    You will need:

    TSH (3rd generation)

    Free T3

    Free T4

    Both antibodies

    Have them include:

    B12

    Ferritin

    Folic Acid

    Iron

    Vitamin D

    These are all interrelated to each other. And go with thyroid issues. BE SURE you inform your doctor about the new TSH ranges .3 - 3. Most labs use the old ranges and doctors just scan the labs looking for anything out of range. Most doctors are not aware that the ranges have changed and do not correctly dx hypothyroid in MANY patients.

    Since you go through phases it sure sounds like Hashimotos which goes hand and hand with your Celiac dx. The best way to treat Hashi's is to suppress the TSH to get closer to that .3 or lower level. Once the thyroid stops being stimulated by the pituitary (TSH) the attack will stop and so will the symptoms.

  5. A "few" areas could mean 2. Six or more is better. Maybe you are at the beginning stage with only inflammation. This is good that you caught it early. You should request genetic testing. If you have the Celiac genes and with POS blood and inflammation, you can either stop eating gluten and get well. OR keep eating it until you get sick enough to show damage to your villi. Believe it or not, this is exactly what most doctors will have you do. They will tell you that you are fine and to keep eating gluten. Then years later.....you get dx properly.

  6. Boiled millet has a glycemic index of around 70-80 (depending on the lab) which is in the HIGH range. Millet flour cooked is even higher at around 107 (more than PURE GLUCOSE!!!).

    When I used to eat it my blood sugar would skyrocket. I couldnt understand why because it was a "whole grain" and so nutritious according to the labels. Then I started reading and researching the glycemic index. There it was.....not good or me at all. :(

  7. Most salmon in restaurants is "farm raised" unless it specifically says "wild caught'. But wild caught is soooo expensive that most restaurants do not serve it. Logan's wouldnt. Farm raised will not have high iodine levels. There is ALWAYS the chance of CC in a restaurant setting. You might have gotten gluten even though you checked. IT has happened to me.

  8. Here is what I can tell you. Your TSH is NOT NORMAL. The new ranges (were changed over 5 years ago) for TSH are .3 - 3. And the current thinking among endocrinolgist specialist is that that range will drop to 2 being the highest. Most labs are still using OLD ranges. :( I was severely hypothyroid with a TSH of 2.88. I needed treatment. And adding Armour thyroid made all the difference in the world for me. Constant muscle twitching gone. dry eyes gone. Dry mouth gone. Fatigue gone. Dry kinky hair gone. Dry skin gone. Reflexes back. Exercise tolerance back. Restorative sleep back. And more.....

    Your T4 is in the toilet. It should be midrange or higher. Did they test your T3? It is a more important lab than the T4 as it is the "active" hormone. You need to know if you are even converting that little T4. But your T4 is sooooo low it is doubtful you have much T3 at all. And without T3 the engine dont go. Did they test you for both thyroid antibodies???

    If your Doc. wont treat, find one who will. You may need to print out the new ranges for TSH and take that to your doctor's appt. Go here:

    We would need to know what phase you were in in your cycle to interpret FSH and LH.

    SED rate shows you have inflammation somewhere in your body and the white blood cells indicate it could be an infection or another immune system deficiency. My Mom had high SED and high white cell count with thyroid abnormalities. An ultrasound showed nodules and atrophy of the thyroid. She had to have it removed and it was post surgery that the dx Hashimotos and she had thyroid cancer.

    You really need more tests. Request an ultrasound. Request Free T3 Plus antibodies. Request a Ferritin and B12 as well.

    If I could, I would wish a good doctor on everyone in here. They can make a major difference in the outcome of your health. Holistic M.D.s and Osteopaths D.O.s seem to be the best for endocrine issues like you have.

  9. Here is some good News. Publix is a Florida based grocery store. There are quite a few of them in Jax FL. They carry a lot of health foods and gluten-free food now. Each store is different of course and they stock according to demographics. But any Publix in a middle/upper neighborhood will have health foods and gluten-free foods.

    There is a bakery in Sarasota that is ALL gluten-free. I have tasted some of their bread and muffins. Very good. I have not had their cake, but they do ship unfrosted:

  11. First of all, you cannot convince someone to take care of their own health. They have to decide that for themselves. You will just cause yourself undue stress by "hammering" them. I know you love them and want them to be healthy, but it will just work against you to press them. We see it time and time again. The best you can do is take care of yourself and let them see how great you are doing. IF they ask you about Celiac, then share.

    Secondly, if anyone wants testing but their doctor refuses, they should find another doctor. And if all else fails order their own tests through www.directlabs.com or www.healthcheckusa.com or another lab that does not require a doctor's request. You can self order ANY labs you need. Aint America great!!

    And lastly, gluten products are highly addictive. Their metabolites fit nicely into the opiate receptors in our brains. People are addicted and they do not want to give up their drug even if it is killing them. There are also emotional and social reason that people do not want to give up their gluten lifestyle. They live under the veil of what I dont know wont hurt me. Unfortunately, you cannot change that.

    BTW my migraines went away gluten-free. :)

    Hang in there and get yourself well. Be the example they can see of good health. Offer support when asked. Inform those that do not know, but do not put pressure on them. Tell them where they can get tested if their doctor refuses. This is what you CAN do.

  12. They are backordered on the GIPro yogurt starter that SCD recommends. I think some are using Kirkman's. I found an acidophilus supplement that makes decent yogurt. But I am using goat milk kefir right now. A local dairy produces it from raw goat milk. It has a strong bite. But it is helping me and I do not react to it in anyway.

  13. I HIGHLY recommend looking into the SCD (specific carbohydrate diet). I was in your same boat and am doing MUCH better. The SCD helped me a lot. I dont follow it 100%, but very close. I ate corn the other day with no real issues other than I can tend to overeat it in the form of corn chips. I am also now able to tolerate butter and kefir.

    On the SCD it allows nuts in the form of nut butters first, then nut flours and not until healed whole nuts. It is an "easy to digest" diet.

  14. Doctors are always resistant to anything new or unpublished. Dont forget it wasnt that long ago that Cigarettes were "just what the doctor ordered". That's right doctors used to prescribe cigarettes. They know a lot, but they dont know everything.

    I believe Enterolab to be reliable and I know MANY in here will agree. I did a genetic test also with Enterolab and with Kimball Labs. The were consistent. Kimball is used by doctors.

    THE MOST RELIABLE THING IS......POSITIVE RESPONSE TO THE DIET. Hands down this is the single best way to determine gluten intolerance. It doesnt dx Celiac, but leaves no doubt about gluten.

    There are quite a few people who didnt think they had symptoms related to gluten, but when they went on the diet were amazed. Oh....those brittle fingernails are gone. Or I no longer get zits right before my period. In my case, I no longer get migraines mid cycle or before my period. I thought that was just hormonal. Well it was because the gluten was messing up my hormones.

    If it were me and mine, I would make the WHOLE family gluten-free. First of all it is way easier considering both your daughters have Celiac to prepare meals that everyone can eat. PLUS there will be no worries about CC (cross contamination). Secondly, it is a VERY HEALTHY diet if you include lots of veggies, lean meats, fruits and other whole grains like brown rice.

    And you can just watch everyone get better.

    Make sure you kitchen is gluten-free. Old scratched Teflon must go, old wooden spoons and cutting boards too. A new toaster is in order. Clean out the pantry, fridge and freezer. Stock it up with healthy gluten-free items.

    Your home should be the one place your girls can feel safe. So taking the whole family gluten-free would create this haven for them.

    They got the genes from one of you or both. So if your DH is showing signs of gluten sensitivity already, it might be the beginnings of Celiac. Too early for it to show up on bloodwork or biopsy, but not too early for it to be causing damage and symptoms.
