Mike I saw my first result 2 weeks in when it was time for my regular migraine and it didnt happen. In over 5 months I have not had a single full blown migraine. When before gluten free I could have expected 10-12. The depression lift was gradual and the neuropathy took about 4 months to start to improve. I still have a little ways to go there. The vertigo is better, but it seems the last to give it up. But I will take improvement.
I ended up giving up all grains and feel so much better for it.

I dont know what he likes to eat but fruit and nuts are good and easy. Lundenberg rice cakes with nut butter (make a sandwich with them). Corn chips with a little plastic disposable container filled with refried beans. Canned fruit with flip-top lids. Fresh fruit (apples and bananas store well and aren't messy to eat). Gluten-free dry cereal in zipper bags.
Kids love Chex Mix:
Classic Chex Mix
3 T butter, melted
1 T gluten-free Worcestershire sauce
3/4 t salt
1/2 t garlic powder
1/2 t onion powder
1/8 t pepper
1/4 t chili powder
4 1/2 c gluten-free rice Chex
1 small package Ener-G pretzels
1/2 c nuts like peanuts
Mix the first 7 ingredients together. Put the Chex and pretzels and nuts, if using, in a bowl, toss with the butter mixture. Spread on a pan and bake at 250 for 45 minutes, stirring every 15. Let cool, try not to eat all at once.

But keep in mind that the people that work at fast food places might not be as careful as you would like. There is ALWAYS the risk of CC and he could get sick. If it were me, I would find a way to squeeze in at least a small backpack with foods he can eat that do not require refrigeration. Then he could always have a shake or frosty at McD or Wendy's so he isnt completely left out.

My coconut yogurt turned out tart and sweet. I added that little bit of honey. So it clearly allowed for bacterial growth.

It produces an acid that helps discourage the growth of unhealthy bacteria. And it also helps process cholesterol. I dont think it is useless. But it should not be abundant in an adult intestine.
Kefir is one of the oldest probiotics and it does not contain bifidus.
No need to supplement it.

Childhood diabetes = high sugar cereals, soda pop, candy, white rice, white flour PLUS sedentary lifestyle
The kids just follow Mom and Dad. All likelihood is parents have diabetes or pre-diabetes too.
It breaks my heart to see the parent at the supermarket shove a cookie in the face of the crying baby. Teaching them young that "sugar" makes you feel "better". Setting them up for a health disaster later in life.
I really wish that the frantic parents that come in here with a newly dx Celiac child would want information on a "healthy well balanced" diet instead of "is there a gluten-free sugar pops cereal" or "can he still eat McDonalds fries". So sad.
Anyway......I agree that bifidum is overused. It is helpful in some cases of infant D. Adults really dont need it as it is most plentiful in the infants digestive tract. It must serve some purpose since in the beginning it is more abundant than any other bacteria in there.

I was raised on a farm myself and am not afraid of hard work. I would do whatever I had to. I am also one of those people who would eat small birds, grubs, wild blackberries, wild grapes and whatever I could find that I know is edible. Even dandelion greens. No problem.
I do tend to always have way more food in storage than I could eat in 3 months time. Hubby laughs at me all the time because I will buy something and he will say, dont you have like 5 of those in the pantry already.
There is great emotional comfort in knowing you have enough food when you need it. So I understand hoarding. I am just not going to go crazy just yet.

They (Bob's) just sent me cash to replace my purchase. I told them they could send me a store coupon and they said they didnt have those.

The Vitamix heats the milk up nicely as it whirls. About 110 is what I shoot for. No more than this. Takes about 5 minutes on med/high speed. I use a thermometer. I never tested my yogurt maker's temp. But it works well. I have made both almond and coconut milk yogurt. I used the young coconut.

I like the perfect serving size cups too. I poured the coconut milk in with the white meat of the nut and some water and honey. I used a probiotic I found at my local health food store that had the right organisms (and gluten/dairy/rice free). GI Pro is now backordered till November.

You are right. It is like comparing apples to oranges. But you suggested it to me in place of chocolate...hence my comparison.
If you can look at it as being carob and not a replacement for cocoa then you might be on to something. A long time ago when I was vegan I used to make my own homemade "raw" almond milk and I would add a scoop of carob to it with a few drops of Stevia. I thought it was delicious. But at the time my diet consisted mainly of sprouted horse food and grasses. My tastes are far more refined now....LOL
I might try carob again sometime. I challenged "legumes' in the form of black beans about a week ago. Next morning I had stiff hands and a stuffed up nose.

IF there was a food that could do that......A lot of cosmetic surgeons would be out of business.....

Mark...I can eat sugar in any other form without rebound depression. Chocolate just kills me. I will go a year without it and then try it again. I have retried it probably once every year for the last 15 years. EVERY TIME I get rebound depression. And it isnt just the "blues" either. It is in the "pit".....thoughts of suicide....nothing interests me. I cry. I lay in bed. And I am NEVER like this any other time. It is an odd depression for me.
Believe me. I wish it wasnt so. I love chocolate. And I have no explanation for my reaction but I do have a theory. It is documented that for some people who go off of anti-depressants they get "rebound depression" that is worse than the original depression. Chocolate has compounds in it that are anti-depressive. So I eat it one day and the next, my brain is screaming for those little receptor sites to be filled again.....and I get depressed so bad. Oddly, I do not crave the chocolate when I am depressed......

Have you at least had a Genetic test to see if you even have the genes to be Celiac. If you DO NOT then you might benefit from something like Glutenease and you can also know that you arent damaging yourself on an auto-immune level. If you DO have the genes, then you can know you need to be very diligent.

Anytime you add a new supplement to your routine, the outcome can be unpredictable, so YES wait until after your marathon. Take them when you do not have to be somewhere important. A nice relaxing weekend. For me, the bloat got a little worse for about 2 -3 days and more D. But then it started getting better and eventually went away. Now I only bloat if I eat a lot of cabbage or something else gassy.

Here is high calorie yummie with no baking: Corn chips with refried beans, salsa, avacado, sour cream and cheese if you do dairy. Throw on some sliced olives for grins. THAT is a lot of calories.

Do yourself a baking favor and buy the book "Cooking Free". It is amazing. It explains all of the flours, how to interchange them, and all other baking ingredients for gluten-free. She gives substitutions for everything. And the recipes are easy to follow.

Hey just wanted to mention that I made the coconut yogurt. Bought a fresh coconut. Only put the white flesh in my Vitamix (worlds greatest appliance ever!!!) with water and some honey. Blended until the right temp. Added my yogurt starter, poured into the cups and let ferment for 9 hours. It is delicious!!!

I find ground chia seeds work the same as Xanthum Gum. Which I can never spell.....LOL

I lean on my trust and faith. In my life, there has been trouble and heartache and very LEAN times, but G-d has always provided for me. So I do not spend my time worrying. I am a "problem solver" and less of a worrier. So when crisis hits, then I figure out what I need to do. I will prepare to a certain extent if I see danger on the horizon, but I do not panic. I know I will be taken care of.

Elf...I would not trust Glutenease because you could be Celiac. At the very least, you should get the genetic tests to see if you have the genes. If you have a POS response to the diet (but unable to get dx by blood and biopsy due to your gluten-free status) having the genes should help you believe that the chances of you being Celiac are very STRONG. And you will know that you need to be 100% gluten-free and not take enzymes......If you have neither of the accepted genes, then Glutenease could be something you could use for CC issues.

Trickle down......The original poster talks about the Depression. Most of those folks didnt have the basics. equate that to today...i.e. power.
I dont think I need to stockpile anything at this point.

Your poor daughter's body is in an uproar right now. There is literally a "war" going on inside of her. When I killed off my critters, I had ups and downs....die off for a few days and then some calm....then another flare.....It took a good month for everything to settle down nicely. Then I started a different "killer" and the process repeated itself. Different supplements kill off different bugs. I have been on three dif. kinds so far and each one brought die off and then relief with some flares now and again.
Try cutting her dose down and building up slowly.
Keep in mind that as the body heals, it can do weird things and they arent necessarily bad (they just feel bad).
I would STRONGLY advice you looking into the SCD (Specific Carbohydrate Diet) as it has helped MANY on this forum including me. I have been able to add in things as of the last 3-4 weeks. But that diet sure got things straightened out.
