I wouldnt do that if I were you. If she is dx Celiac ANY amount can do damage. And what happens if she doesnt have a reaction. She will say, "See Mommy I CAN eat gluten." And there will be no turning back......
Then she would eat gluten when she wanted and be causing herself internal damage (that may or may not have symptoms) risking type 1 diabetes and lymphoma and other auto-immune diseases down the road.
Just not a good idea IMO.

Well I would love a place like that locally here in Tampa FL. And many others would as well. But keep in mind that the restaurant/cafe business is one of the toughest ones to pull off. I dont say this to discourage you from opening your own, but be realistic and only invest money you can afford to lose. Perhaps find a few others who are "for the cause" that will also invest with you.

For awhile my daughter (12) kept saying we were so weird because of the food we eat. But every friend that has been over to play or stay the night has TOTALLY loved my gluten-free foods. They say things like...."Ive never had sweet potatoes before. These are delicious!" and "Can I have more of this or that?"
The food is good. Period.

If something has a funky smell, out on the porch it goes to "out gas" for a week or so. Then I bring it in and re-smell. This usually does the trick. Most of the out-gassing is at first and if you do it outside it doesnt get trapped indoors.

I know it is tough when you are on a grocery budget.
For me food is life. Simple.
I dont pay to get my nails done every week. I get my toenails done maybe twice a year when I will be on vacation. I dont smoke. I dont drink soda. I dont eat out anymore. I dont have a cellphone (that's right). I keep my hair short and easy and get it cut at Supercuts. No color. No highlights. I dont spend much on makeup at all. Most days it is mascara and Burts Bees tinted lip balm. Most of my clothes come from Rarget. Flip-flops are my shoe of choice.
What I am getting at is that I do not spend much money on the things that most people spend it on. I spend my money on good food. That is what is most important to me. And I believe that because I do, that I look better (not filling my body with all that junk). And I am healthier (not putting the chemicals on my body or breathing it all of the time).
So if I had to choose between Mac Oil and a new pair of shoes. I would buy the oil.

It's true. I ran out of regular oil once and used olive oil in a cake recipe.....yuck!!
Macedamia nut oil would be another good choice.

I am not sure Judy....but I am a renegade so I would just try it. I even eat the flops unless they are totally disgusting.......LOL These things are too expensive to waste. Luckily I dont have too many flops.
and Purple....I dont do white sugar, so I wonder how sucanat would work........the real unprocessed sugar cane....
What I REALLY want is to make an "Almond Crescent" cookie. I tried and they came out like regular sugar cookies. So I am going to experiment. Those are my favorite cookies of all time, so if I come up with something good, I will post.

IMHO all Jesus really asked of us was for us to believe in him as our Lord and Savior. Everything else is just ritual and symbolic. They are not required.
But I dont want to get into a religious discussion.
Think about what bread must have been like in Jesus's day. The wheat had a much lower gluten content and they relied heavily on other grains (more than wheat) like millet and even lentils.
There was no genetic engineering and foods were often fermented or prepared in special ways. Definitely nothing like the bread we eat today.
So I dont think that the Lord would mind if you munched on a rice cracker. IT is the meaning that you attach to the "bread" that matters.

Magnesium is necessary because most Americans are deficient due to lack of dietary intake (not enough green leafy veggies for one). And a Celiac is more likely to have malabsorption on top of that.

The biopsy can tell you the extent of the damage. It can also give an official dx "for the record". There are reasons that you might want the record to state Celiac. But there are other reasons you may not. It could effect her future ability to garner health insurance....."Pre-existing condition". Whether or not to biopsy is up to you.
If she has a positive result with the diet, she will need to declare herself "Celiac" and follow the diet for the rest of her life. She may rebel when she is a teenager....this is normal. And as an adult she decide what she wants to do with her life.
You have only a narrow window of control right now. It might make you feel better to get the biopsy so that if it is POS you know for sure you are doing the right thing with a gluten-free diet (no question!!) and you have the paperwork to show her when she is older and wants to rebel. She wont be able to say....."Show me the proof Mom that I have to eat this way and be a weirdo.....blah blah blah teenager junk".

Ohhhh....tread lightly Jessica. If your body is just "building up T3" in the blood because you dont have enough cortisol (adrenal hormone) to get it into the cells (where it works and makes you feel better) when you add an adrenal glandular there is a possibility of a "thyroid storm". Google that. They are NOT fun. I had it shortly after my daughter was born when my thyroid and adrenals dumped all of their hormones at once before I went hypo on both.
You really need to be working with a practitioner that understands the connection between adrenals and thyroid and can instruct you on how to support your adrenals best. Often you have to "cut back" on thyroid when adding cortisone or glandular. It is a tricky tight rope.
With that said, it is safer to take measures to heal and support your adrenals. A cup of licorice tea everyday (if you dont have high blood pressure) 2000-4000 Vit C, 1000 Panteothenic acid, Full spectrum B vitamins, etc.
Google "Heal the Adrenals" or "Natural" + "Adrenal exhaustion". There are also books that can help. Just dont throw darts in the dark.
It may be that you are like my sister. She was on Synthroid alone with poor results, but when she added 30 mg of Armour (natural thyroid) to the synthroid her world opened up. She lost weight. The depression lifted and she feels human again. They first tried increasing the Synthroid but that just made her feel worse. It was the magic of the natural hormone that finally helped her.
Ask your doctor about adding a tiny amount of Armour to your Synthroid.

1) Does she have a high Antigliadin IgG? What does this mean? I personally would say it is high. I learned with my thyroid that "in range" doesnt mean "right for my body".
2) Would Celiac sprue show up in a person so young (11)? It can show up at any age.
3) Is there some other serum test, such as tTG IgG, that we can do to confirm Celiacs? I would ask for those along with Genetic testing to see if she has Celiac genes.
4) Could an upper endoscopy and biopsies be helpful, even if she is negative for sprue? It could diagnose Celiac. But biopsy is only as good as the physician administering it and the person evaluating the slides. She could still be Celiac even with Neg blood and Neg biopsy. BUT she already has a Pos. blood.
5) Is the Enterolab stool test helpful, even with an IgA deficiency? No....she deficient and Enterolab uses IgA. It would only be useful for further genetic testing.

From EVERY reference range I have seen for total IgA that is either rock bottom or down right deficient. What this means is that he will NEVER get a positive antibody with IgA (even if he is so severely Celiac that he develops lymphoma) because his body simply does not product much of that antibody. When this happens astute doctors then test IgG. Which has already been done and it is POS.
Will he have a biopsy?
Or a trial of the diet? The diet is really the ONLY true measuring stick.
You could also opt for genetic testing as just one more check mark to make you feel comfortable going gluten-free.

How does moisture get in.....We sweat A LOT at night. More than you might think....
Me and my hubby solved our bedding issue by buying 2 twin extra longs. We each picked out the bed we wanted. I like a firm and he likes a soft. We each got what we wanted. They are pushed together with rubber disks to keep them in place. The dont move unless we really work it. We each have our own bedding as well because one of us steals all of the covers....wraps up like a sardine he does. The covers match exactly, so when the beds are made it looks perfectly nice.

I read some feedback on those beds....A few people actually liked the bed. Most hated them. And a few on that particular site mentioned finding black mold. One lady simply called the company and they sent her new foam parts. One lady suffered through a few years of respiratory illness of "unknown" cause that got better after she ditched the bed.
Thank goodness you have gotten rid of it!!!

He could just say. I have Celiac. It is kind of like an allergy. I cannot eat wheat, barley or rye and most oats. If I do, my whole body can be affected and I get sick. And even if I dont feel sick, my body can be damaged.

Im gonna have to "tweak" it Kathy. It tasted really good, but the consistency was odd. My husband took some bites and said....I think I like it....but it is weird. And we all laughed. Im eating leftovers today for lunch. Maybe sitting in the fridge overnight will make it better (like soups and chili). Will let you know!
I just made grain free, sugar free (used honey), egg free, corn free, dairy free sugar cookies. They are too die for. Even the dough. Throw chocolate chips in for a real treat (I made those last week).
2 1/2 cups almond flour (suggest to order from digestive wellness dot com - there's is the best I have found)
1/2 tsp fine sea salt
1/2 tsp baking powder
1 Tlb real vanilla extract
1 Tlb almond extract (optional)
1/2 cup oil (I used grapeseed but canola would work)
1/2 cup honey (could use agave)
If you want chocolate chip cookies add 1 cup gluten-free chocolate chips. I use Enjoy Life brand because they are also corn, dairy and soy free.
Mix dry ingredients. Add wet ingredients. Mix till well blended. Roll into little balls then press on parchment paper. Bake at 350 for 7-10 minutes. You want a nice light golden brown.

I also purchased some Lo-Han sweetener. Anyone tried it? It says no calories and no glycemic index just like stevia. It will have a "mild" fruit flavor......

I coped by buying a bunch of gluten-free cookbooks and started experimenting in the kitchen. I also kept myself active to keep my mind off the things that I couldnt have. I found I loved gluten-free foods.....it didnt take me long to forget about bread. I dont even eat ANY grains anymore and I feel great and not deprived at all. Hang in there!

My daughter loved the challah when I worked for the Jewish Community Center in town. She went to pre-school there and they had it every week so I understand. Let's see if we can find some gluten-free challah recipes:
