It was me.
I used a different brand and do not know if that would make a difference. I wouldnt think so.
Note....I would start out slowly. One pill on day one. 2 on day two and so on. There was a little war raging inside for a few days with me. Bloating was a tiny bit worse for about a week and then it went away.
It is an anti-microbial so you could have die-off. It is supposed to kill parasiates as well. Maybe start on a Friday after work.
Also, I was/am taking probiotics at the same time to replace what gets killed.
Good luck!!

I think strictness might be dictated by symptoms. If you have IBS, then it behooves you to be very strict. I dont. I just thought the diet made some sense to me, so I am trying it with a few modifications.
ONe thing I have noticed is stable blood sugar.

I say you can eat at "better" restaurants and be extra careful. I do take Glutenease.....dont shoot me people. I only eat out about once a month. I keep a bottle in my purse just in case.

It wasnt THAT BAD for me either. I have been eating healthy whole foods for years (15 or so). I just dropped the wheat/barley/rye. The later two I rarely ate.
I love eating out. But I also love to cook.
I think the hardest thing for a lot of people are the ones who are very sensitive to CC and those of us who have MULTIPLE sensitivities.
For instance in your recipe I cannot have the tomatoes. Nor can I eat rice. I dont come in here and whine though because I look at every challenge as an opportunity to learn and grow.
I actually made curry today in the crock pot. The chicken was sooooo tender. It was a coconut milk base (not tomato). Since I dont do well with grains, I served it over steamed cauliflower. It was delicious.
I ended the meal with a grain free spice cake (that rivals any gluten ones I have ever had).
People in general want EASY. It is the way our society is structured now. If you cant have it delivered, pick it up or microwave it, then it just seems TOO DIFFICULT. But I dont think it is kind to criticize these people. LEARNING isnt an easy thing. Not everyone knows how to cook. And some can cook but they arent very good at it. Even following a recipe it just doenst taste good. We have friends like this. She cooks food. It smells good......but tastes BAD. She uses good organic ingredients. She just has NO TALENT for cooking. It was a relief for me to be able to take my own food to their house.
Anyway......dont be hard on the people who whine. That is EXACTLY what this forum is for. And over time those whiners get on with it. And many stick around to help others.

So you were trying this just to see if you have a reaction so you will know when you are glutened.
I know you have not been at it very long. Many say that over time their reactions to CC get stronger. So hang in there.....might get a strong reaction out of you yet.
Now that you have experimented, I HOPE you will stop eating the gluten and poisoning yourself.

Did you test positive with blood and biopsy Beth? Or are you self-diagnosed?

Violet....I make delicious fries out of sweet potatoes....yummy!! Cut like fries, sprinkle with sea salt and pepper....drizzle with olive oil and bake at 350 until starting to turn brown.

A LOT of things these days are "fortified" with folic acid. Cereals, breads, sports drinks, nutrition bars, etc.

I dont think it is a stretch if he eats gluten and then you kiss him. New relationships often involve A LOT of kissing. He could also be using toiletries with oats/gluten that you lick off.....not trying to be crude.....but if it is done right......this could happen.

If you are gluten free substitute the "Whole Wheat Flour" in that recipe for a gluten free one.
-
Yes....she meant well. It isnt easy for anyone. Poor Gabe. I hope he is better soon.
Im invited to a dinner party Friday....our host said, I will fix a gluten free dish for you. And I just have to say.....It is always better for me to cook for myself, so I can relax and enjoy your good company. Im coming to see you guys....not for the food. But fix something yummy for DH and DD. I just dont want to even let them try........

I can honestly recommend Neem now and there are a lot of studies on Grapefruit Seed Extract.
Add coconut oil into your diet. It kills candida. NO SUGARS at all for a few months. Just low sugar fruits until it is under control. And not too many starchy carbs either. Nuts and seeds will give you nutrition and calories without feeding the fungus.

Pamelas mixes are very good.

Dessicated thyroid will ALWAYS suppress your TSH. Always. Doctors who really understand thyroid DO NOT go by TSH when Rxing Armour/natural. TSH is useless once you start taking it.
My last TSH was .008 and I am fine. I feel best when my Free T3 is at the very top. Last one was 4.1 and the range goes to 4.3 (my labs ranges).
I have no symptoms of hyper. I hit the pillow at 10 and am asleep within seconds. I sleep through the night and feel refreshed when I wake. My temperature runs around 98.4 - 98.8 at any given time of the day. BP is consistently 110/70. Heart rate is 80. No sweating. No anxiety. No weight loss. No D.
MOST doctors would look at my labs and say that I am severely hyperthyroid. I am not.

Im really thinking about this one. I always aced interviews because I come across as very pro-active and competent. I believe that is what employers are looking for.
If it were me, I think I would say something like:
I am really looking forward to my interview with you on whatever date. And I appreciate your gracious offer of providing my lunch. Due to certain dietary restrictions, can you provide the name of the restaurant where we will be dining? This will allow me to contact them ahead of time. Thank you again for this opportunity.

Yeah...I wouldnt allow gluten flour in my house at all. It is easy to breath it in. And when your wife cooks with it, it gets everywhere unfortunately.
Would they be willing to use gluten free flours for dregging meats and such and buy pre-made other gluten stuff so that there doesnt need to be any gluten flour in the house at all?
I dredge in amaranth flour for pork chops and they are delicious. Sorghum would be good too.

ut still, would a tiny bit of gluten every once in a while reverse this abominable weight gain?
Are you really willing to risk your health/life to lose weight? And no it would not work his way. Likely just give you D for a few days......water weight lost.
DO get your Thyroid checked. Your TSH should be between .3 and 3 (new ranges). Most doctors and labs still use the OLD ranges. My TSH was 2.8 and I was severely hypo. So find a doctor that treats by "symptoms" and not just "labs".
And there are natural products you can use to stimulate the thyroid.
Coconut Oil
Seafood
Both of these foods will get your metabolism going.

Your blood does not suggest Celiac. You can see if you can get a biopsy to see if you have damage. OR you can try the diet to see if you improve.
BUT your high folate can be masking a B12 deficiency. B12 can look "normal" with a HIGH FOLATE when you can be severely deficient and causing neurological damage (to the point it is permanent). Most doctors do not know this......=Google this and print out and take to your doctor ASAP!!

Seafood and shellfish are major sources of iodine and trace minerals. Go with it!

Your last post sounds like someone trying to justify something they are going to do anyway. If you have decided that maybe you dont have Celiac and maybe you can eat gluten, and you have DEFINITELY decided to not worry about it on vacation, then I think you should go ahead and eat LOTS of gluten (no matter how bad you feel) for 3 MONTHS and get blood tests and biopsy. It sounds like you are one of the people who would benefit from a GOLD STANDARD dx in order to comply with the diet. For some, results from the diet are just not enough (no matter how good). They always have that little doubt and therefore "cheat" often. Maybe for you it would be better to know for SURE. Your gene tests did not diagnose you as Celiac or Gluten Intolerant. They merely showed a propensity.
You said in your first post you were having GREAT results from the diet. Now it is up to you to decide if you want to stay diligent even on vacation and stop looking for a reason to go off the diet. Or just go off the diet, eat gluten like mad and go through all of the PROPER testing.
With this said, keep in mind that you can still be GLUTEN INTOLERANT even if all of the "proper" tests come back negative. After 3 months of eating tons of gluten and feeling sick and they come back NEGATIVE. Will you keep eating gluten?
If the answer is yes, what can we say.
If the answer is no, then why would you bother poisoning yourself now?
You have to be honest with yourself.
-
Hopefully not. But get it done ASAP!
Again, the diet is the only true diagnosis. And you are feeling better. Yeah!!
-
Honestly, I think it would just be asking for trouble. White flour gets everywhere....such fine particles. You can easily breathe them in and they get in your throat and down into your stomach. Very risky at best. I hope you have other opportunities for jobs.
-
Yes, all of the gluten-free processed foods are very carby and empty.....a recipe for weight gain.
You are better off foregoing the pre-made gluten-free stuff (or the once a week idea is good). And stick to real foods like meats, veggies, fruits, nuts, eggs, brown rice, etc.
Whole grains only and in moderation (serving size).

Anna the writer....another great story.
I have discovered the yumminess of coconut milk and shredded coconut. It helps with the boredom. I can eat almond flour (meal) which is also good. Whole nuts are very hard to digest.
But like you, I am mostly meats, eggs, veggies and fruits. Thank God for spices!!

I concur....get all of the testing done as soon as you can. Then start the diet and see if it helps you. There really is nothing to lose.
