  1. 2 weeks is def. too short. AND most have to eliminate dairy for awhile too until they heal. I would eliminate both for a good 3 months and then re-evaluate. Ferritin can take a long time to improve. I started at 11 and am now at 19. You will likely need supplements. But focus on gluten-free and CF for now.

  2. They have Triumph Dining Cards. But as I learned today....sadly....that you shouldnt just talk to the server. You MUST ask for the Manager. The Manger will make sure it is done right. Servers generally wont.

    It is basically a crap shoot when your health is the hands of others. For instance, today, I ate out with my family. They miss it so and I wanted to feel "normal" for a day. So off to Cheescake Factory we went. I brought my own dressing and meat and dessert. Initially I was just going to get a salad and toss my own meat on it (I've done this before without issue). BUT I mentioned Celiac to the server and she said....oh...yes...our General Manager has Celiac so we are VERY AWARE and TAKE EVERY PRECAUTION. He eats here......I said...so you know I need fresh pans....YES....So I ordered sauteed spinach and asparagus cuz I had meat. So I am sitting there eating my asparagus and it dawns on me that I didnt say....no pasta water. When she check on us....I ask her if she made sure my asparagus was cooked in fresh water. Nope. She comes back and takes the plate away and says that ALL of their veggies are cooked in pasta water. mad.gif

    Then the Manager comes to our table and asks who he just "poisoned". He knew of course knew the consequences. He felt terrible. Apologized profusely for his server not being trained well enough. So he paid for all of our food....about 60.00 worth for my DH and DD with dessert. Now....I wait.....and pray.......

  3. Sometimes it gets so overwhelming doesnt it? You think......what will it all come to.....me in waders out catching my own fish for goodness sakes!!! Grow my own vegetables and fruits....buy some chickens....raise some pigs.....

    I dont know if rinsing them off will be good enough. Only you can decide if you want to risk it. I agree, that you should get to know your local butcher. You might find him quite accommodating. Like if you tell him in advance what you want, he might wrap yours up from the boxes they get in fresh off the boat before putting them in the case. You also might get fresher fish this way. :)

  4. Biopsy is NOT necessary. The only real way to tell if you have a gluten problem (when you have symptoms) is to go on a gluten free diet. For the lucky (like yourself) you can get a Dx with just bloodwork. Biopsies are often neg. because damage can be spotty. If they dont take samples from the right places, it wont show villa damage.

    You are SMART and RIGHT ON to start the diet right away.

  5. Yes, they can be damaged from other food sensitivities as well. The big culprits are: Gluten, Dairy and Soy

    If you are that sick, I suggest eliminating these foods for awhile to see if you get better. It sounds like you have nothing to lose right now. You can challenge them at a later date to see if they cause symptoms.

  6. Yes, they should request a copy of the bloodwork. It is always a good idea to keep a file of your own medical records at home.

    Then let us know what they were.

    And yes, you can def. have negative blood and still have Celiac. It is EXTREMELY difficult to dx Celiac in young children as there are often false negatives. If they can afford it, they can use Enterolab and also do the genetic portion of the test.

    A gluten free trial is another way to find out.

    With your family history, I do have to ask why you dont get annual pap smears?

    Cervical cancer is the easiest to treat when found early.

    He may not know jack about Celiac, but I think his advice to get your cervix checked wasnt something he "mentioned in passing".

    Go get it checked!!!!

    If you feel better off gluten, then stay off of it. But dont ignore your cervix.

  8. This is interesting.....Based on Tim's post...Let's say...Your doctor tests blood for Celiac and it comes back NEG. But you get a biopsy anyway and it comes up POS. So your go on a gluten free diet.....maybe you have little improvement....maybe none at all. You find this forum and everyone says.....Give it time....Or you might need to cut out dairy or soy because a lot Celiacs cannot tolerate them either. So you cut the dairy and get better. Was it the gluten or the dairy? Or you cut out all three and get better. Was it the soy?

    Which one caused the villi damage? NEG blood POS biopsy are you Celiac???

    Or just intolerant to something else....The only way to know is a challenge. And that can be pretty scary.....

  9. I have warm peach cobbler on my stove right now. :)

    I cant have so many things right now, but can eat this. My recipe is very simple:

    Crust:

    1 1/2 cups almond flour

    6 Tlb almond yogurt (could use any kind)

    Dash of salt

    2 Tlb honey

    Mix all together and press into pie pan.

    Filling:

    2 cups Fresh or frozen peaches sliced.

    2 Tlb Coconut oil drizzled.

    Honey for drizzling to taste

    Layer peaches, coconut oil and honey over crust really pressing the peaches in.

    Bake at 375 for about 20-30 minutes. Watch for "golden brown" edges.

  10. Along with B12...Your Vitamin D levels might be low. You can get them checked or it is perfectly safe to take 1000 - 2000 IU daily and GET SOME SUNSHINE which naturally relieves depression. If you are able.....a little exercise can go a long way too. Just a stroll if it is all you can muster.
