  1. She may be picky because her tummy hurt her a lot before when eating. So as she feels better, she may be willing to branch out.

    Have you tried sweet potatoes? You can make them like french fries, bake them or boil and mash them.

    My daughter will eat "roasted" veggies....carrots, zuchinni, sliced and roasted until soft and lightly browned. I do onions too and also slices of sweat potato.

    Acorn squash with a little cinnamon and brown sugar

    Will she eat soup? My daughter will eat veggies in soup.

    Fruits...you can make gluten-free banana bread, blueberry muffins, etc.

    Zuchinni bread...gluten-free of course.

    I recommend "Cooking Free" cookbook. Simple and yummy recipes.

  2. These really helped me in the beginning with "hitting the spot". I used almond butter, but if you can eat peanut butter, probably even more yummy!

    Teff Peanut Butter Cookies

    1. Preheat oven to 350 degrees.

    2. In a large bowl combine without sifting:

    1 1/2 cups of teff flour

    1/2 tsp. of sea salt

    3. In a food processor blend:

    1/2 cup of maple syrup

    1/2 cup of corn oil or canola oil

    1 tsp. vanilla

    1 cup of peanut butter

    (This recipe works best with peanut butter that is not fresh ground).

    4. Mix the wet and dry ingredients together.

    5. Shape into walnut-sized balls, then flatten them gently with a fork.

    6. Bake for 15 minutes.

    7. Makes 2 dozen.

  3. You've had a positive response to the diet...and it just keeps getting better. My migraines disappeared when I cut the gluten 4 months ago. I dont have an official Dx. I DONT NEED ONE!!!

    And oats have to be "Certified Gluten Free" or they are likely cross-contaminated. They use the same equipment and lines for oats and wheat.

    Bob's Red Mill has "Certified gluten-free oats". Even still....some celiacs cannot tolerate oats as their protein is similar to gluten. It is individual.

    Yes, you can still have celiac. Biopsy can miss spots of damage because the damage can be "patchy".

    Have you had genetic testing? If Doc. wont do it, use Enterolab. See if you have Celiac genes.

    But personally.....I would just stick with the gluten-free diet and watch your health improve.

  4. And yes....foods can cause seizures. I had mild seizures at night for a few months. I would wake up with a weird buzzy feeling in my head. I would be totally disoriented for a bit, not knowing where I was or what was going on. I couldnt speak. A strange taste in my mouth. It took me about 6 months to figure it out. Potatoes!!! Once I cut the potatoes.....no more seizures.

    Potatoes are part of the Nightshade family. Nightshades contain neuro-toxins. Makes sense. I avoid ALL nightshades now.

  5. Google "Migraine" + "Stroke" and you will learn A LOT. Here is just one quick one....there are TONS more research available:

    MYTH: MIGRAINE IS NOT LIFE THREATENING, JUST ANNOYING.

    REALITY: MIGRAINE CAN BE LIFE THREATENING, INDUCING SUCH CONDITIONS AS STROKE AND COMA.

    Migraine can induce a host of serious physical conditions: strokes, aneurysms, permanent visual loss, severe dental problems, coma and even death.

    According to the New England Journal of Medicine, "migraine can sometimes lead to ischemic stroke and stroke can sometimes be aggravated by or associated with the development of migraine." Twenty-seven percent of all strokes suffered by persons under the age of 45 are caused by Migraine. Stroke is the third leading cause of death in this country. In addition, twenty-five percent of all incidents of cerebral infarction were associated with Migraines, according to the Mayo clinic. Most recently the British Medical Journal reported that after evaluating 14 major Migraine & stroke studies in the U.S. and Canada that Migraineurs are 2.2 times greater risk for stroke than the non-migraine population. That risk goes up to a staggering 8 times more stroke risk for women Migraineurs on the pill!

    Migraine and epileptic seizure disorders are also interrelated. The most intimate interrelationship between the two being Migraine-triggered epilepsy. Migraine affects up to 15% of the epileptic population. In basic terms, Migraine and Epilepsy are both disorders characterized by paroxysmal, transient alterations of Neurologic function, usually with normal Neurologic examinations between events (attacks).

  6. Genetic testing is not a be all end all. It can only show a propensity toward something. It cannot show who WILL get something and who WONT. Some researchers believe that DQ2 and DQ8 are not the only "Celiac Genes" and I suspect they are right. The genes you have sit right next to the DQ2 genes for Celiac. They are sister genes if you will. Gluten sensitivity can cause damage to the intestines as well even with NEG bloodwork.

    Did you son have genetic testing for Celiac genes??? He should.

    Perhaps his father carries a Celiac gene. Is it possible to get Dad tested??

    As for you, you have to decide if your symptoms are bad enough to go gluten-free. And understand that if you are gluten sensitive as the Enterolab results suggest, then you can be doing untold damage to your body by continuing to eat gluten. Perhaps down the road you will be addressing much more serious symptoms (like me). Only you can decide what to do with your health.

    I have 2 gluten sensitivity genes according to Enterolab and no Celiac genes. I even did Kimball labs as well because they finish the spectrum of genetic testing combined with Enterolab. My symptoms started out mild.......loose BM's everyday...fatigue.....depression.....eventually migraines......neuropathy.....and ataxia....they have progressed. Mine are neurological now (they didnt start that way). I wish I had quite eating gluten years ago before my thyroid got damaged....and my nerves......

    You have gallstones and psoriasis......many are surprised at other "symptoms" that they did not even realized they had (that disappear after going gluten-free).

  7. You will want to check out the "Island Bakery" on Siesta Key sometime. Gluten Free bakery with french bread that tastes like real french bread. They also have normal sized sandwich bread loafs that actually taste good and are light not dense. Take the kids. They have ice cream too. They will have a handful of things to sample (breads and goodies), but you can order ANY of their gluten-free items and they will deliver.

    You dont need a Dx to know that gluten is a problem for you. Congratulations on having the courage to try a gluten-free diet. Some cant even do it even tho they get a Celiac Dx.

    There are wheat free soy sauces like Tamari and some brands. But I dont eat soy, so dont know them. Others can chime in.

    Not knowing your financial situation, if you can afford it, there are many ready to go options. This bakery ships. The bread is super yummy and some better than gluten breads. The sandwich bread is regular size. They bake to order and ship. It will be fresh when it arrives. They put wax paper between the slices so you can freeze them and use as needed. Their french loaf rivals gluten. :)

    There may be others. These options are for the "dont even want to think about it" and "luckily I can afford it" people. If I was single, I would be opting at least for some of these.

  10. I let me 12 yo fill them with whatever she likes. I keep little tins of salmon and tiny shrimp. She then adds shredded lettuce, carrots, etc. Avacado is good. Could do a tex mex wrap with beans, lettuce, salsa, etc.

    Really anything can go in them. They dont have any flavor on their own.

    You can even fry them and make them crispy after wrapped.
