As a recovered bulimic, I can attest to my bing foods being very high in gluten. My favorites were: Pizza, Captain Crunch, Donuts and Pasta. Very high gluten!! And I never threw up. I used laxatives/exercise to purge. I will say that these foods made me feel horrible. But I wanted that pain to mask my emotional pain. It was a very deliberate thing. Perhaps I, on some level, picked these gluten foods because they made me hurt the most.

I have read that it is the other way around.....a gluten sensitivity can lead to anorexia/bulimia. It could be because gluten causes upset and a person develops an aversion to certain foods...and then food all together....or they binge on gluten foods and then throw up. OR anorexia/bulimia has been tied into certain vit/mineral deficiencies. So if you are deficient because you are gluten intolerant...this could lead to these diseases.

I have been craving "creamy" and since I am dairy/soy free....I am turning to coconut milk.

Prep Time: 10 minutes
Cook Time: 30 minutes
Ingredients:
* MAKES 4 Individually-sized Desserts
* 1 can good-quality coconut milk
* 2 eggs
* pinch of salt
* 1/2 cup rice flour (available at Asian/Chinese food stores in small plastic bags)
* 1 tsp. coconut extract
* 1 tsp. vanilla extract
* 1/4 cup sugar (or more to taste)
* TOPPING:
* 4 dollops of coconut cream (or thick coconut milk from the top of the can), whipped cream, or ice cream
* 2-3 Tbsp. toasted dry shredded coconut (see toasting instructions at end of recipe)
* OTHER: oil to grease the ramekins
Preparation:
1. Place 1 cup coconut milk in a mixing bowl. Crack in the eggs, and add a pinch of salt. Beat well with a fork or whisk until smooth (30 seconds to 1 minute).
2. Sprinkle the rice flour over and beat until smooth.
3. Add the extracts plus the sugar. Beat until smooth.
4. Taste-test the batter for sweetness, adding a little more sugar if desired.
5. Grease 4 ramekins (individual baking dishes) with a few drops of cooking oil (or you can use butter). Ladle the batter into these ramekins, filling to 3/4.
6. Place ramekins inside a long baking dish (the type you would use for lasagna). Pour some water into this dish so that it reaches 1/3 to 1/2 up the sides of the ramekins.
7. Place carefully in the oven. Bake at 375 degrees for 30 - 35 minutes, or until pudding/cakes are set. A fork inserted into the center should come out clean.
8. To Serve Pudding Cakes: Either leave them in the ramekins, or loosen with a knife and remove by turning upside-down over serving plates. Add a dollop of the coconut cream (or whipped/ice cream) and a sprinkling of toasted coconut, if desired. Note that if you have refrigerated your coconut milk/cream, it will have hardened - not to worry, it will slowly "melt" over the warm pudding, making it delicious!
9. To Make Toasted Coconut: Simply "dry fry" (no oil) the coconut over medium heat, stirring continuously until the coconut turns golden brown and is fragrant. Remove coconut from the pan immediately, or it will continue toasting. ENJOY!!

If I cant get the tests I want from a doctor, I order my own. If you can afford it, there are many labs online that you can get tests through without a prescription. I use DirectLabs and HealthCheck.

I can imagine it is hard for people who are used to easy and pre-packaged foods.....not to mention take out.
But I have been cooking my own foods for the most part for as long as I can remember. Even in my early 20's I would make vats of lentil soups to eat during the week at work.
I just prefer home cooked foods. They taste better to me.
This whole thing has been made easier for me by keeping it simple.
One of my favorite meals is to bake a chicken. It takes about an hour and 1/2....but all you have to do is put in a pan and sprinkle with salt and pepper and bake. It makes the house smell soooo yummy. Throw some acorn squash cut in half when there is 30 minutes left to the chicken. Buy ready to go salad...and SUPER EASY meal. I sometimes throw some rice in the rice cooker for this meal. THIS IS MY DEFAULT MEAL. And there is always left over chicken for me to have for lunch the next day.
I also have a dutch oven and make pot roast. If I want it to cook faster, I buy thick steaks instead of a huge pot roast. Then it can be done in an hour and 1/2. Buy pre chopped veggies to throw in the pot with the meat. And throw some cut up potatoes in there 1/2 way through cooking.
Another family favorite is "stir fry". You dont need a wok. I have a huge pan. They sell pre cut baggies with the veggies. And you can get pre cut up meat too. It cooks super fast on med to med/high heat. Uncle Ben's boil in the bag rice (10 minutes) and a ubber fast yummy meal.
Quiche!! If you can have eggs is easy to make too. Buy gluten-free pie crusts. Mix up eggs with a tlb. of gluten-free flour and add whatever meats/veggies/cheese you like and bake.

Everyone has said Tinkyada is the best....this forum...my celiac support group. So I bought some....the spirals with rice bran.
The package says very clearly that it holds up VERY WELL TO OVERCOOKING. And the package said to cook for 15-16 minutes in boiling water.
Well after about 10 minutes it started looking very cooked to me. So I drained it. Rinsed in cold water like they said. AND IT ALL FELL APART!!
I tasted them. They taste good. But I ended up with a pile of bits...not spirals. If I had cooked them for the 15 minutes they suggested, I would have had a mashed potato consistency.
The only thing I can think of is to cook for only 8 minutes next time. Am I missing something??

Although Freecycle is a great place, there are also some strange people on there. I have known a few people who had uncomfortable experiences with other Freecycle users.
I used to like craiglist, but then I saw my coworker's situation when selling a ride-on mower, there was a buyer in Maine and he was going to send her a check and then someone else would be there to pick the mower and she was to give him a portion of the check....it was odd. She did not complete the sale.
That is the oldest Internet scam around. As an artist I get hit with it ALL of the time.

***The way the scam works is that the cashier's check is bogus. But cashier's checks cannot be verified until it is too late. Banks just cash them. But when 6 months later, it is found to be a fake check....you the person that cashed it through your bank will have to pay your bank back for the fraud........

I felt worse before I felt better. So it is possible that it is withdrawal/detox symptoms. But also keep in mind that if you ate gluten regularly, that removing it all from your diet is a major change and your body will need to "figure" out the "new deal".
Also, what have you replaced the gluten with? Corn? Rice? It is possible that you increased another grain that you are sensitive too that is causing these symptoms.
It takes some sleuthing to find out the foods that bother you. I am a WIP myself.

I reacted to pre-sliced fruits about a month ago. Figured out that they were cut up right next to the baking area at Whole Foods. All that flour.....settles everywhere. So now I cut my own fruits and veggies after washing them.

Hi Lesley and welcome!
First of all, you will want to eat simply. Make out a list for each day of different foods. For instance:
Monday - Chicken, Broccoli, Rice
Tuesday - Beef, Green Beans, Quinoa
Wednesday - Pork, Salad, Corn
Thursday - Turkey, spinach, potatoes
Friday - Fish, brussel sprouts, buckwheat
Something like this might make it easier to plan meals. I have found soups very helpful. I use gluten-free broth and then throw in whatever meat and veggies I have around. I add spices and sometimes rice or rice pasta for the last 10 minutes of cooking. Soups freeze very well and you can easily make them serving size and microwave for a quick meal.
A lot of people on here like things like tacos, chili, etc. too.
I do not know of any formal eating plans. But a trip to the bookstore sounds in order!

Magnesium and Vit C can get things moving (in supplement form). You should take a good gluten-free mulit plus added magnesium and C.
Everyone is different with regard to time to see results. Make sure that rice drink is gluten-free.
There are certified gluten-free oatmeals out there. However, if you are craving something badly, it is a good sign that you shouldnt be eating it right now. Carbs can be quite addictive and we also tend to crave foods we are intolerant of.
Try quinoa flakes in place of oatmeal.

Ask him how he would feel about getting a little extra estrogen everyday in his body. If he bought a new aftershave lotion and discovered that he started growing boobies and such that the cream contained just "a little" estrogen in it. Would this bother him?
Also, please really think about this relationship. If he would "freak out" by you sending a salad back at a restaurant, what would he do if the baby threw up on the table someday at a restaurant? I am sure you love each other, but he needs to be compassionate to your needs if he is ever expected to show compassion elsewhere. You should be his number one.
The truth is that other people do not want to be inconvienced. No one does. But withe Celiac this is just a reality for the rest of your life. He needs to understand this.
If you were suddenly thrown into a wheelchair.....would he get upset every time you wanted to go out because he would have to push you?
I would personally ask him these types of questions. Better to know the truth now.
And just stick to your guns and protect yourself. Without your health, no relationship will be completely satisfying.

Did you change shampoos? Facial cream? Lipstick? Body lotion? Sunscreen? Anything you apply to your body that has gluten could cause this......

I agree. Positive labs + positive dietary response = celiac
I would not believe the GI doc if he says you do not have celiac based soley on the biopsy. You could cause yourself years of suffering and set yourself up for cancers, auto-immune diseases associated with untreated celiac.

Let me know about the cake. I am avoiding eggs right now, so I am trying to figure if my regular egg subs will work for the cake.
