  1. I use McCormicks right now. However, I called Safeway 2 days ago on a different item and the customer service rep told me they were going to start labeling their spices gluten free. I don't know when that goes into effect.

  2. If this is DH it must be from cc. I help my in-laws quite a bit and there is gluten everywhere. I wash my hands a lot, but it may have been from kissing them.

    AZ is nice right now, but I would trade it in the summer! I haven't been to Flag in a long time, but hear that it has really grown.

  3. Happy Birthday to you! I'm so sorry you had no one to celebrate with. When I was first dx'd my friends weren't sure what to do either. I didn't say much about it because I didn't want it to always be about me. But, 6 months later, they know it's not totally weird and we do stuff again. They have even told me about some restaurants that I didn't know about.

    Let your close friends know what celiac is. It may take awhile for them to get it, but I think they will. I'm sure your friends love you, just don't know what to do with you right now.

    So, make some wishes and have a wonderful year!

  4. OK, I went to the store and bought a bunch of cooking/baking supplies. Rice flour, potato starch, xanthum gum etc. How do these need to be stored? Do I refrigerate them or just store in airtight containers.

    I'm still going to buy the better batter flour too. How is that stored?

  5. When I was first dx'd I could not drink coffee, even decaf. I've been gluten-free for about 6 months and have started drinking decaf again. I use Lactaid milk with it and so far so good. For me, I think things just needed to settle down a bit.

  6. Great ideas everone. I'll have hubby make the guacomole and chips and salsa are always good.

    WendyG, in the Buffalo dip, what is Buffalo sauce? I have never heard of this. The dip sounds good though. Is Buffalo sauce a brand name? Think I can sub ranch dip for the blue cheese? Ooh, rotel dip is good too. I haven't had that in a long time.

    Darn 210, what do you use for the corn chex? I haven't made this since going gluten-free.

    These are all such great snacks. I think they are afraid of what I'll make since I never eat anything when I'm at someone else's house.

  7. I think it depends on the kind of roux you are making. I made gumbo a while ago and used flour. But, I did it on the stove top without the butter (we didn't want the extra fat). My aunt in New Orleans told me how to do this. Anyway you cook on low stirring constantly (PIA), until it gets that pretty caramel color. Then I added the chicken broth. It was one of the best gumbo's I've made including the gluten version.

    That probably wouldn't work for your white sauces though.

  8. Thanks for posting. I love, love mac n cheese. I'm going to try this. By the way your directions on the milk made me laugh. "not above the noodles but not too much below the noodles level either". I'll do my best on this. No measurements? How do you know how to do this. Wish me luck.

    I just saw the banana nut recipe. Looks good, but I have to go get a few more ingredients that I haven't tried yet. Thanks for the heads up.

  9. Thank you all so much!! Everyone is so nice to help. I'm going to make another one this weekend and see what happens. It was so funny when I made this one. It came out of the oven so pretty and smelled so good. Hubby and I both just stared at it (he was practically drooling) and I thought, this is easy. Then later in the night it deflated. We both laughed about it because it was about 1/3 of the height, but really heavy.

    I'm going to order that Better Batter to keep on hand too.

  10. Thanks for the info. I'll order the flour and see how it does. I was using a flour that I got from a gluten-free bakery here in AZ, but that didn't work so well for me. Happygirl, maybe we could put a hotline in to your mom's phone (hee hee :P. I'm so jealous that you have your own personal baker! Does your mom use the smaller pans as Purple and wonka mentioned or does it matter with this flour?

    In the meantime, I'm going to use Susie's recipe to see what happens.

  11. I should also add to this that because of Mike's testing, I will be switching my OJ. I'll still read the label each time I buy it. I always, always read labels. As I mentioned in a previous post, I think the strips can be beneficial if I am trying to rule a food out. I don't want to go through a challenge and get sick again. Yeah, I know they may not be perfect. A lot of testing isn't including the celiac panel. So, to each his own.
