  1. I did a search on the boards looking for reviews on the Kinninnick pie crusts but haven't found anything. So, has anyone tried these?

My hubby wants pumpkin pie and I told him I would make them. He was going to get the whole wheat crusts, but came back with the Kinninnick pie crusts. So sweet, but now I want to make sure the pies taste really good. I'm not a pie person, even pre gluten-free.

    Thanks so much.

  2. NotMe - I did use frozen spinach. I thought it would be easier. Next time I will go for the fresh spinach. I pretty much went the easy way on all the ingredients except the parmigiana cheese. I bought good cheese and grated it myself.

Kareng and Pricklypear - thanks so much for the strainer info. I will get one.

As you can tell, I'm not the most advanced cook, but I can usually follow a recipe. Thanks to all of you for being so patient with me!

  3. We just got through eating and it was wonderful. My husband really liked the dumplings and so did I! I think he was surprised since there was no pasta in it. I only used a marinara sauce since I wanted to save on the fat and it was exceptional. I can't imagine how good it would be with the bechamel sauce too. Just sinful.

Also, the ricotta cheese was only 15 oz. I used the Lucerne brand. What brand did you use that came in a container of 1 lb 2 oz?

So, thanks for the recipe. This is a keeper and I'll probably have it for lunch tomorrow.

  4. Pegleg, for me my eyes were not able to see at the same point together. One eye seemed to see a little higher than the other. The prism sort of tricks the eyes to see at the same point together. I had gone to a neuro also for possible MS. I had many problems besides the dizziness. I had a stiff neck all the time and when I walked I felt like I leaned to the right. After I got the glasses I felt so much better. I don't know how long before my stiff neck went away, maybe a month. But I didn't feel like I was walking so weird anymore.

Please look at her website and see if any of those symptoms pertain to you. She is the nicest doctor and will take the time to talk to you. She is in Michigan. Her website is vsofb.com.

I was dizzy for a year and it had to be the worst year of my life. So debilitating (sp?). I had a lot of anxiety when I was dizzy.

Good luck to you in finding the right answer.

  5. As other posters have mentioned, there are many reasons for being dizzy. Mine turned out to be my eyes. My doctors thought it was neurological.

I was dizzy for about a year. It started when I rolled over in bed onto my right side. This was called BPPV. Everything was spinning and was horrible. After that episode I had both vertigo and dizziness for about a year. I went to numerous doctors including eye doctor, family doctor, two ENTs and a neurologist. I had 2 CT scans and an MRI. I was basically homebound for a year. Driving was impossible.

Then my sister told me about this doctor in Michigan (I live in Arizona). She gave me her website (vsofb.com). I looked it over and it talked about this doctor (Dr. Debby Feinberg) that treats patients for vertical heterophoria. I had never heard of it. The more I read, the more it sounded like me. I called the doctor and she called me back and spoke to me for at least 30 minutes. She faxed me over a questionnaire and had me fill it out. I sent it back and she called me back that night. She also told me about another doctor in Houston that does what she does.

Dr. Debby is an optometrist and specializes in this eye condition called vertical heterophoria. This is a condition where one eye sees higher than the other. It was an easy fix. I had to wear glasses with a prism in them. I couldn't believe I suffered with the dizziness for a year and it could be fixed with glasses! I'm so glad I went to see her. I went to several specialists before seeing Dr. Debby and not one of them could figure out what was wrong.

It turns out the best doctors to diagnose this are optometrists, not opthamologists. Also, it's best to go to one that specializes in vision therapy.

Just for history purposes, this dizziness happened before I was dx'd with celiac and was gone before I was gluten free. I was dx'd with celiac about 6 months after I started wearing the glasses.

I just wanted to put out another option if you have exhausted all others. I hope you feel better soon!

  6. There are a few support groups that I know of. One in Phoenix, one in I believe Gilbert and one in Fountain Hills.

Here is some info on a meeting this Wednesday in Phoenix that you may want to attend.

This month's program: **THE RESTAURANT TABLE**

    When: Sept 7, 2011, starting at 7pm

Who: CDF: Greater Phoenix Chapter Members, Guests & Friends

(INCLUDING: Youth ages 10-19 y/o interested in forming a Youth Group!)

Where: Paradise Valley Retirement Community' s Community Room, 11645 N 25th Place, Phoenix, AZ 85028 (Please park in the street.)

All of us can be very grateful that more & more restaurants are paying greater attention to our gluten-free dining needs. Our September meeting, to be held this coming Wednesday Sept. 7 @ 7PM, will celebrate some of these delicious dining options.

Join us at one of our most popular programs of the year..."The Restaurant Table." Meet representatives from 4 Valley restaurants and learn about their gluten-free menus. Newly invited guest restaurants include:

"The Melting Pot", "Outback Steakhouse", and "Blue Wasabi". And, returning guest "Picazzo's" is excited about sharing information about their new, expanded gluten free menu.

Join fellow CDF-Greater Phoenix Chapter members & friends as we learn about these restaurants' gluten-free options, ask questions about their menus, and gain insights into gluten free dining in general.

If you can, please bring a favorite gluten-free item for our refreshment table to share with fellow attendees and our restaurant guests. Samples of protein drink mixes have been provided by "Growing Naturals"; and, "Jovial Foods" has donated some pasta and filled cookies. For concerns or questions about treats to share, you may contact our Chapter's Activities Chair, Charlene at:

    bcerpelding@cox.net

As always, please bring a list of ingredients so that fellow attendees can check for possible food allergies.

    AND ANNOUNCING....youth ages 10

  7. The multi-vitamin I take is by Solgar. It's called Formula V VM-75. It says it's free of yeast, wheat, soy, gluten and dairy products and are formulated without the use of artificial preservatives, flavors or colors. I take the Iron free one because I am now menopausal.

Some other brands of supplements I use are by Bluebonnet, Source Naturals and Vitamin Research Products. I usually have to order The Vitamin Research Products online.

I try to find supplements that are both gluten free and soy free.

  8. Ravenwood, I'm so sorry about the loss of your beloved Pooh. It is so hard to lose a good friend. As many people have already stated, there are all different kinds of friends. You have so many on this board alone. And, you have been a great friend to more people than you can imagine. It's not just the posters, but the lurkers too that have benefited from your advice. You are always kind and gentle in your responses and so many people appreciate you.

I will say some prayers for you and send some positive thoughts your way.

  9. 1. I had many different issues dating back to at least my 20's (was dx'd with IBS then)

    2. I had the following issues: UTI's, chronic sinusitis, allergies year round, anemia, gluten ataxia, migraines. There were probably more issues, but that's all I can think of right now.

All of the above issues improved greatly after going gluten-free. I have not had a UTI or sinus infection since going gluten-free. Very few allergies. I don't think I'm anemic anymore (haven't been tested again), no more gluten ataxia. I have only had a couple of migraines since going gluten-free. I still get headaches, but not as often and not as bad.

I'm not sure how long it took to resolve the above. I used to have to carry tissues with me all the time because of the allergies and sinus problems and now I hardly ever need to blow my nose. Overall, just a huge difference in my life.

  10. I don't know the Queen Creek area that well, but there is a gluten free store in Gilbert. It's called the Gluten Free Country Store. They also carry gluten-free baked goods from local gluten-free bakers. My favorite baked goods are by Julia - good cupcakes and cinnamon rolls. Their website is gfcountrystore.com if you want to check them out before driving over.

  11. Yes, I am very sensitive to caffeine. I can't drink regular coffee (boo hoo)- it makes me too agitated, but do drink decaf. If I have a headache and take an Excedrin, I feel all revved up from the caffeine. Tylenol just doesn't work for me.

What's odd is that I can eat chocolate. I don't eat a lot of it, but I have one piece of Dove chocolate almost every day without any side effects.

  12. It's been a while since I've posted, but thought I would add my experience as well. I was dizzy for about a year. It started when I rolled over in bed onto my right side. This was called BPPV. Everything was spinning and was horrible. After that episode I had both vertigo and dizziness for about a year. I went to numerous doctors including eye doctor, family doctor, ENT and a neurologist.

Finally someone told me about a condition called vertical heterophoria. This is a condition where one eye sees higher than the other. A year later I went to an optometrist doctor, Dr. Debby, in Michigan who specializes in this (I live in Arizona and was desperate to get my life back). I still didn't know if I had this or not but when I went on their website, Vision Specialists of Birmingham.com, I had most of the symptoms. It was an easy fix. I had to wear glasses with a prism in them. I couldn't believe I suffered with the dizziness for a year and it could be fixed with glasses!

I hope you are able to feel better soon!

  13. I take Alprazolam, the generic for Xanax. I still have some by Mylan, which they have told me they are not making anymore. I recently filled a prescription by Sandoz. I called and they told me it was gluten-free, however they cannot guarantee. My prescription is for .5 mg and I usually split the pill in half.

I don't have to take them often, but when I do have that anxious feeling, it works great. I have also let it melt under my tongue to get in my system even faster. Very bitter though.

  14. I had to read this a couple of times because I couldn't believe someone could do this. I am absolutely disgusted. It's hard enough to eat out just worrying about CC. Now there's some jerk deliberately giving people gluten when they have requested something gluten free. I did google him, but not much info came up on him. I am still in disbelief and saddened that this guy deliberately lied to his customers and put their health at risk.

  15. Ok, it's been a while since I have posted, but here goes.

Restaurants in the Phoenix area that I frequent. I think most have gluten-free menus:

Tonto Bar and Grill - in Carefree. Really good and pretty view of golf course. Love this place. Pricey.

Pizza Picazzo's - I usually go to the one on Frank Lloyd Wright in Scottsdale. Also have great salads and gluten-free pasta dishes

Indulge Burger - On Scottsdale Road and Shea (SWC) Has gluten-free buns. Unfortunately, on 2 times since I have been there they were out of the buns and substituted a gluten-free english muffin. Too small for the burger. I get the turkey burger. I think the burgers are around $10 give or take. They have gluten-free fries that are baked.

Havana Cafe - Have been to the one on Bell Road. I've always had a good meal. The gluten-free menu warns you of the cc if you get something fried. Hubby, not gluten-free, did have a bad meal once. It was the Paella (sp?). I've always had a good meal there. Ambiance is so so.

Fogo de Chao - Yum. Just the best experience. Ask for the manager. He will go over everything that is gluten-free and most everything is. It's a Brazilian meat place. Close to $50/meal including huge salad bar. They have great little Brazilian cheese rolls, polenta and fried bananas - all come with the meal.

White Chocolate Grill - Located in North Scottsdale @ Mayo Blvd near the 101. Has good gluten-free menu. I would say it is similar to a Houston's.

PF Changs - I go to the one on Scottsdale Road in Kierland Commons

Outback - I don't go there much, but there are a few

    Flemings Steak - Has a gluten-free menu

True Foods - I have been to 2 locations. I think the one on Camelback is the best. They have a gluten-free menu and healthy options.

Nourish - Have gluten-free menu. I have not been there yet.

Fry's at Tatum and Shea. They have a nice gluten-free section. If you like sweets, look in the freezer section near the gluten-free section and try Julia's cupcakes. Local baker and the best I have tried.

That's all I can think of for now.

I used to go to Cantina Laredo, but learned recently that their chips are not made in a dedicated fryer and the corn tortillas are pressed or in come contact with the flour tortillas. There is not warning on the menu. Not worth the risk to me, but for someone else may be fine.

  16. I take NatureThroid and a compounded T3. The combination seems to work well for me. NatureThroid is a dessicated thyroid pill, much like Armour.

I also supplement with Vitamin D.

My Ferritin level 2 years ago was around 8 or 9 and is now way up, around a 100 which is in the normal range but seems high now. And, I don't have to take a nap everyday anymore.
