My name is Eric, I am 17, I speak (of course) English, but also French and a little Japanese and Persian. I found out I had celiac disease in after my whole family got tested and we all had it. It's very difficult for me because my mother and I are the only ones who try to stay gluten-free in the family. My favorite foods are ebelskiver, a traditional Danish stuffed pancake, and okonomiyaki, a type of Japnanese pizza (that's the best way to describe it) they both contain flour so the transition has been very difficult.
