Vitamin D promotes calcium absorption, among other things (so even if you're taking calcium it may not be absorbed properly if your Vit D is low). You may be able to have the endoscopy without adding gluten back, especially since you've only been gluten free for a month (my endoscopy was a couple months after going gluten-free and still showed extreme damage and confirmed celiac disease) - contact a G.I. doctor and see what they have to say about it. I'd like to suggest that (even though you wipe everything down that comes into contact with gluten) you get in the habit of NEVER putting any of your food down on a counter -- instead grab a plate, or paper plate, or piece of wax paper, etc. It's a good habit to get into and adds a pretty foolproof layer of protection in your food handling.

If they're not, you're still ingesting gluten, from somewhere (be it the gum, an old toaster, shared kitchen counter space, medications, or products that aren't safe).
