  1. Yeah, I know about geographic tongue. But the descriptions that I've seen of it seem a little bit different than mine. So, who knows? Glad I'm not the only one with a weird tongue though. :P

    Mine changes when I don't feel well too. It's nice and flat everytime I feel good. As soon as I feel a little bit "off", it's back to being curly.

    I just ate both of them (feeling snacky) and kind of feel a reaction coming on. I was SURE both were gluten-free...now I'm not so sure. <_< Does anyone know?

    P.S. The sunflower seeds are still in the shell. Could they have dusted them with flour?? I read the ingredients on the planters, and all looked gluten-free (they are owned by Kraft, so it should be clear as mud).

  3. This is something I've made up. I eat it because it doesn't have anything spicey and always sits well.

    2 Cups Minute Rice - cooked with salt and pepper and gluten-free boullion to taste. I usually add a little bit of butter to prevent any sticking.

    2 large cans tuna (whichever brand you prefer)

    Butter

    Grated mild cheddar cheese

    Cook the rice and seasonings, and lay in a casserole dish. I put three or four little slabs of butter on top of it. Place the drained tuna over the rice. Then sprinkle with cheese - however much your little heart desires. Salt and pepper. Put in pre-heated 300 degree oven, just until the cheese is melted and the tuna is warm.

    This always sits really well with me, and I eat it a lot when my tummy is upset (often!).

    The posting on hamburger rice casserole made me think of this. :D I can't have the tomato sauce on that recipe, so in case there are others who can't either, I thought I'd share this. Hope it helps somebody.

    Just wanted to share my new find of the day. Celestial Seasonings has a tea called Madagascar Vanilla Red. It's ingredients are Rooibos (pronounced "roy-bus"), natural French vanilla, and vanilla bean. Says right on the bottom that's it's gluten free too. Anyway, I just poured a cup, and it is REALLY yummy!!! So if you're bored of your same ol' teas, and want to venture out, give it a try!! Don't get it if you aren't fond of vanilla though. ;)

    I appreciate Celestial Seasonings labeling their teas as gluten free. Some of their teas don't say whether they are or not, so I stay away from them. And some say "may contain gluten." It's nice to have a company that is specific. :D

  6. Here's a stupid one for you.....

    My son drinks rice milk (Rice Dream - yes, I know it's not gluten-free....neither is he). I drink soy milk. Since I am the only one who drinks the soy milk, I just drink it right out of the jug. Well, Rice Dream and my soy milk look quite a bit a like, and I went to take a swig of soy, and got the wrong jug!! I don't really taste it until I've already swallowed it, so it was too late. Felt yuck for two days over one little swig. And the "funny" thing is.....I've done it twice since going gluten-free!!! What a nerd I am!!! :unsure:

    LOL...see....we're all dingy sometimes. :blink:

    Thanks for the recipe!! It sounds delicious. I had wondered about the lack of bulk in recipes that call for stevia. Adapting sounds kind of hard....but worth a try. :rolleyes: That's a great idea to substitute coconut for sugar. I love coconut!

    I have seen that book for sale online. I will most likely purchase it at some point....after I try a few recipes to see if I like the way stevia tastes in baking.

  8. Stevia is an herb that is used as a sweetener. But it doesn't have the negative side effects that artificial sweeteners have. It's ten times sweeter than sugar, but does not raise blood sugar levels at all. A great find for those of us that really need to watch our sugar levels. :-)

  9. My tongue is getting its tastebuds back. I hadn't realized I lost them, but I looked in the mirror the other day, and noticed them perking back up. Has anyone else had that experience? I've been gluten-free for about two months...with a few oopsies.

    Also, ever since I got REALLY sick, my tongue curls on the sides. The only time it's not curly is when I feel good....which is not often (yet). Does anyone know what would cause a curly tongue? :P

  10. Has anyone had any experience with Stevia? Do you cook with it? I just discovered it a few days ago...I knew about it, but had never tried it. When I looked it up on the net, I discovered it nourishes the pancreas and actually helps stabilize blood sugar. WOW!! What a find!! :-)

    If you've cooked with it, how did the recipes turn out??

    Thanks for all the info you posted. I thought the acid info was particularly interesting. I have terrible acid problems with my stomach....but if I eat vinegar, (pickles), it just makes it worse. However, I haven't eaten pickles since going gluten-free....so maybe it was the gluten?? I'm so sensitive, I'm scared to try just taking a swig of vinegar! :o Do you have any info on the net that I could read about this? Would taking Betaine HCL help? Seems like a dumb thing to do if I'm already on Aciphex. :unsure: ??

    I will definitely try some chlorophyll. I seem to be low on my estrogen - even though I'm only 32, but very high on the progesterone (ovarian cyst problem). Had no clue chlorophyll could help that. Thanks again for the info!!!

    The herb I am on is gynema sylvestre. It supposedly does the same thing as metformin/glucophage that docs put diabetics on. The reason my doc put me on it is because i have polycystic ovarian syndrome. If you have that, then you are also most likely insulin resistant. They are putting women with pos on these insulin drugs, and it is getting rid of the cysts on their ovaries...and it regulates their cycles. I am finding that if I'm on the herb, I can eat more sugar, but if I'm not, then just eating a high protein diet, no refined sugars, and very little carbs does just as well. So I will probably go with the diet/exercise route instead of the drug. The reason I thought maybe I was full blown diabetic is because I have gastroparesis, which many times is associated with diabetes. I am positive I have blood sugar issues, but I don't have a lot of the symptoms of diabetes.

    If you consider 32 young, then I guess I AM young. :D I do have a doctor, but I can't just pick up and go to him whenever I want.....he's six hours away. I have tried many doctors where I live, and NONE of them would help me. Don't even get me started on that! :angry: So I go to my previous doctor. He has not tested me for diabetes, but would if I wanted him to. I have family where he is, and whenever I'm over, I get an appointment with him. We also do phone consultations if I need him pronto. But they are more expensive as the insurance doesn't cover it. Yes, I do have insurance. My husband has a great job and the insurance is great, so no problems there. My grandma does have a meter....but she's also six (really seven) hours away. The reason I am on the herb is obviously explained up above. I try to figure these things out on my own because I have HAD to do it that way. I don't want to go into all my physical probs and how sick I was (who needs to hear another sob story....besides, it's incredibly LONG). But trust me....I would get to the doctor if I thought I was diabetic and it was out of control. I would like a meter, because I am wondering if my bs goes high, then low, then high, etc. I feel like I am at two ends of the spectrum a lot....so I was curious if I was right. However!! I AM getting it under control with diet. I am eating every two hours, limiting refined sugar (almost none) and very little carbs. So far it is working, but I haven't been doing it for long. I think when I had that episode yesterday, my blood sugar was very low, plus I ate some cooler ranch Doritos. And I DO think I reacted to them. Bummer!! So I think it was a combination of things.

    I left the question "open" like that because I wanted a wide variety of answers. :) I like the health benefits of green tea, but can't handle the caffeine...or the taste really. :unsure: So I usually (before going gluten-free) would mix the green tea with some other flavored tea so that I couldn't taste it. I love peppermint tea, echinacea is wonderful but I hear I'm not suppose to drink it due to the autoimmune disease. Can't stand anything ginger....I take ginger pills for my stomach, but I have to crush them up and put them in capsules....yuck! :D

    Thanks for the suggestions. I get tired of drinking water only.

  14. But I wouldn't think the insurance would pay for that if you didn't have a prescription from the doc. ??

    You know what happened to me today? I was washing my dishes, and I started getting really bad intestinal cramps, then my ovaries started hurting really bad, then I started shaking, then I felt like I was going to pass out, then I thought I was going to throw up, and it ended with me sitting on the toilet with my head in a trash can, breathing very slowly to try and get it to go away. Yes, it went away....but I'm discouraged. I haven't had anything like that happen in forever. I've felt so much better lately. I don't know what happened, but maybe it was low blood sugar??? It was not an uncommon time of the day to have wacky blood sugar. Maybe I need to pay closer attention. I tend to just live with the yucky sick feelings I have....maybe not such a good idea when it's blood sugar related. :(

  15. I have literally run a low grade fever for three years (not a typo either). :D It's getting better since I went gluten-free and have gotten my blood sugar under better control. If I get "glutened" or have a wild swing in my sugar, it's an immediate fever.
