Celiac.com - Celiac Disease & Gluten-Free Diet Support Since 1995

Everything posted by sc'Que?

  1. I care. As do other gluten-free folks I know who wish to support companies that align with their values. That Celiac<dot>com offers this unbiased news is important to Celiacs who wish to make the right decisions for themselves and for their community.
  2. A point to note: Yuca is a root starch that is edible. Yucca is a wild and/or decorative plant native to subtropical climes that is not considered to be edible. The former (edible, root) plant is pronounced [YOO-kah]. Because these plants are not readily available enough to be considered "native", Americans confuse the terms, but they are not the...
  3. Great question. I came here to ask basically the same question--though, your verbiage is far better than I might've been able to muster!
  4. @Jefferson Adamsthis misconception needs to be corrected across all categories of distilled spirits that are not flavored after-the-fact. Also, the broader category of Asian-made spirits--specifically because of colloquial nomenclature--needs to have special attention paid so that all consumers (Celiac, or non-Celiac) are properly informed. I rarely...
  5. *sigh* While brandy is made from wine [eg. cognac, VSOP brandy] and/or the leftovers of making wine [also marc, grappa...], ALL BRANDY (as a category) IS DISTILLED and must, therefore, be categorized as SPIRIT. This very recently became a legal issue in Pennsylvania, where soju had been erroneously labeled as "wine"--due in no small part to...
  6. Kinda funny: I made basically this same thing for myself last week, a week before receiving the newsletter! However, I added chipped fresh apples to the mushroom gravy, accented with fresh greek oregano and coriander seed. Highly recommended! A point of caution with this recipe, as it's written: if using cornstarch, be sure to make a slurry first...
  7. These statements are somewhat contradictory. Just sayin'. Also, it amazes me that I never hear discussion of other allergens being screened in association with IBS. After extensive food-challenges starting in 2007 over the course of 24 months, I became 100% certain that Celiac disease was the culprit for me. However, about 5 yrs later, I began to...
  8. Does anyone know whether any of the other pizzas on the list are also nightshade-free besides Against the Grain Nut-free Pesto? For those who don't know, nightshades include: potatoes yams and sweet potatoes are not nightshades and are, therefore, safe tomatoes (all varieties, including tomatillos, ground cherries) often...
  9. Being just 3 hrs away, I've heard good things. But I've not had the opportunity to to travel since pre-CoViD. @Guest123, thx for the reminder!
  10. Very cool. But soooo curious what ANA would say to someone like me: both gluten-free and nightshade-free, out of necessity.
  11. Cattiness? No, more like trying to remind everyone that "Budweiser" (as a concept) does not equate to "beer" as a category. If there are 150 styles of beer, pale pilsner represents less than 1%. And the companies that produce gluten-free beer/s prey on the fact that most people don't realise that. There are other styles of beer that are more conducive...
  12. It is a my profession as a craft bartender to elevate the drinking experience--not to dumb it down! American macro-pilsners (on which most gluten-free beers are based) are not attempting to mimic the quality of pre-Prohibition beers: they're simply trying to make a buck from people who forgot what beer is supposed to taste like... and Celiacs are a super...
  13. @trents, you seemed to ignore that @Dina Wrightwas suggesting a (purportedly) 100%gluten-free beer. Dina, where have you found BrewDog here in the States?
  14. Always "amuses" me that when people say they miss beer that Celiacs recommend gluten-free "beer" that taste like clear-fizzy water (aka American pilsner)... or worse. Mass-produced, American light lager is the farthest from satisfying the beer craving for people who miss beer. Why can't Celiacs recommend gluten-free beers that have more flavor, more texture...
  15. We all sure-as-sheize hope so! But, like Keith, I'm not holding my breath!
  16. This concept can also be prepared "a la minute" by simply plating your grilled pineapple... topping with gelato/sorbet/ice cream (I prefer coconut sorbet/gelato)... packing a bit of brown sugar around the ice cream... drizzling with overproof rum (Smith & Cross works best, for it's butterscotch complexity)... and finishing tableside with a culinary torch...
  17. There still seems to be some confusion about whether Kewpie mayo is gluten-free. The image I found on Amazon showed a pretty inoffensive ingredient list... with the exception of "natural flavors" and "spices". As someone with both Celiac disease and nightshade allergy, I really wish the FDA would require full-disclosure on all ingredients.
  18. As someone who tries to make the world a better place, I do not mince my words. This is not about someone being offended, insomuch as we can all strive for more and better information. (I will absolutely call out incorrect information. I did not do so in this instance. Why are you offended?)
  19. But I do stand by my statement that the explicatory "margarita" part was a bit much. It was simply the wrong focus for the intended audience.
  20. @trents do not put words in my mouth. I never said Jefferson was not a good writer. What I implied was that he needs to maintain his status as a good writer by researching and including this in (an updated) form of this article. Holding a journalist to task is not necessarily degrading them; rather it's suggesting a way to elevate them further.
  21. The reason, tbh, is that Red Bridge is modeled after a more Budweiser profile, which is not likely to be carried in bars that offer American Light Lager/Pilsners as their go-to... and craft beer bars and restaurants typically want a beer with more flavor to satisfy foodie palates. This is the reason why exactly zero bars carry Red Bridge where I live (central...
  22. Why does this article not talk about THE BEER? I mean, saying it's inspired by a Margarita... and then telling me it has lime, orange and salt in it is like, "No frakkin' duh, man!" (Truly, this article insults my intelligence.) What are the grains? How is it produced? What strain/s of hops and yeast are used? Are there any other adjucts other than...
