I have read that coconut flour has high fiber. and i make gluten free granola bars with certified gluten free oats and peanut butter and semisweet or dark chocolate. oats have fiber...not a lot but eating a granola bar could help you out somewhat. and they're delicious!!!

haha she is my fraternal twin...and the only symptom i would guess she's ever shown is extreme moodiness
i've suggested she get tested but she is quite stubborn. she loves her fast food. i personally don't miss it!

i worked at wal-mart for over six months. one day they put me in a bakery...and i thought nothing of it because it was only a few hours and i would be wearing gloves. stil i got sick the next day and had not eaten any suspicious foods. now i dont know for certain this is what caused it but i suspect it did. being in that environment daily would greatly increase her chances of being glutened. i wouldnt risk it!

most of us can understand what you're going through. it all hits you so suddenly and you dont realize how drastic a change it is until you actually cut those foods out. you will probably get your energy back but you may consider eating more protein to give yourself more energy. maybe nuts and more chicken? i dont know much about nutrition though so maybe someone will have better tips.
before i was finally diagnosed, i had completely stopped eating because the pain was so bad. when i found out i could start eating but just leave out the wheat i thought wow this will be easy. but that first grocery shopping trip...and the week seeing my family eat oreos and BREAD and stuff like that...it all added up fast. i know its discouraging but it gets easier once you're used to it. go to the baking forum and you'll find some good recipes and websites with gluten free dairy free and egg free recipes. hope it all gets better

I love pamela's! i made the rolls out of it and a small loaf so i could have both. i loved the taste and the texture and best of all it didn't harden over the first night. it tasted fresh for a few days. i also like gfp's sandwich bread. it has a different texture to me but has a very good flavor. i dont like bob's. i hate bean flour. taste like the bread is rotten or something.. yuck! but everyone has unique taste buds so you may want to try it. over all i would say that pamela's has been my favorite bread so far

and matt- i completely agree. i have tried to tell her to quit taking her kids over there, because her youngest is showing signs of celiac. and if she wont prtect herself she needs to keeo the little one from it. she needs to grow!

thanks for the encouragement all! i am feeling it so much better. i went through the worst of last night. the D and then fatigue and fogginess. then cramps...like even my legs and arms. i told my sister who is also Celiac and she has gotten sick that fast too. her i laws made beer chicken and didnt let her know. they pretend its all in her head so when she asked about ingredients thye lied to her. it makes me so sad that people do that...
and i used kellogs flakes for a long time before i caught on too! back when i was first diagnosed i thought malt was okay... three years later though and im good about reading labels. i have been kicking myself today though. that was a big mistake!

dont feel too silly. i always thought msg was the same thing as gluten because i read somewhere that some people react. then i heard a few people on this site say it wasnt the same thing. so i have tried it a couple times to see if i am sensitive to it. i am so i still avoid it but at least now i know and wont tell others to avoid it if they dont have to

Let us know if you find out about the granola bars!!! i have been wanting a good granola bar for so long now. i also cant wait to try those cookies. i havent had a chocolate chip cookie recipe turn out well yet

thanks for that. i never thought about becoming more sensitive. that makes sense though!!! i guess it is easy to feel so confident that you slip up. it certainly doesnt happen very often

Okay today i made calzones for my husband and I for dinner. I usually make dinner and on nights that he works i drive up to the fire station and eat with him. Today i made them and i took them up there. about ten minutes after we ate i began feeling stomach cramps. at first i thought maybe its just a bit of gas...then i got really tired so i told him i wanted to sit. as soon as i sat down it got worse so i told him i needed to leave earlier than i normally do. he asked if it was gluten and i told him i didnt think so because it started so quickly after i ate. nevertheless, when i got home i looked through my ingredients. i checked the pizza sauce and the cheese but nothing looked questionable. then i remembered that a few weeks back i had bought a small bag of wheat flour while my sister was visitng (she doesnt like gluten free ) so i looked at my bags of gluten free flours to see if they had gotten contaminated. upon opening the bag i thought had been brown rice flour, i smelled at and no way was that rice flour. whats really is when i used it earlier i looked at it and smelled it to make sure because i hadnt labeled either bags of flour, and when i looked at it looked exactly like brown rice flour. butmy nose must have been stuffy or something because it smells like wheat now!!
anyone ever done anything like this? ive been kicking myself since i got home because i am almost three years gluten free and should know better!
also, has anyone ever been glutened and gotten sick with five to ten minutes of a meal? it was like my stomach didnt even try to digest it, it was so fast!

I'm not sure what brand you were looking at... and i dont have any on hand to confirm it.
Either way I have used jello cook and serve and jello instant pudding without ever having gotten sick.

This link has a list of manufacturer's statements. Kraft about halfway down includes jello so that can confirm at least one safe mix. Other than that, I have never used another brand. Good luc in your search!

i want to say almost all of gfp's mixes are upwards of $6.00 but i could be wrong. i will definitely be willing to pay $4.50, espwcially since they have gotten awesome reviews. check this one out:

and the enjoy life bars are good and mostly allergen free...i think they'd be suitable except they do contain dried fruits. i read there are 8g of sugars per bar and they're pretty yummy

What about gluten-free oats? Those are well tolerated by some
I bet you can make some granola bars with that... just that and maybe a small amount of fruits, chocolate, or nuts like peanut butter. i have seen many recipes with just oats (or a granola mixture with rice cereals and such) and dried coconut and raisins. then there is a mixture with corn syrup and brown sugar. I will have to look up the specific ingredients and amounts if it sounds do-able. of course there are so many ways to adjust a granola bar.
and rice chex have many posiibilities as as well. granola and bars. I can only imagine how tough all these different intolerances must be.
I also just found a sugar n spice pan bar mix from 123Glutenfree
its gluten, corn, dairy, nut, and soy free. it sounds more like a desert though...so maybe thats not what you're looking for? probably quite a bit more sugar

I can't find them anywhere! I'm in NC and looked in a harris teeter and a food lion. When i didn't see them on the shelf I went to customer service and asked if I could request a product and they basically told me no I would just have to keep coming back and checking. grr...i was so hoping to make cookies this week

Hello all! My husband and I recently moved to Fayetteville from Oklahoma. You would not beleive the differences I have noteiced. In Oklahoma there was so much less of a variety. Now I am so spoiled. My husband is in the Air Force so we will porbably be moving again in a year or two but I would love to hear from others. I haven't seen anyone from Fayetteville but maybe some of the other cities are close?? I don't know my way around yet. Biggest shock I have had is seeing gluten free stuff at the commissary on base! When hubby was in school in texas the base had NO gluten free stuff so when i visited i brought my own stuff
Anyway I'd love to hear from others that are close...or not even close haha. I just want to hear from others to see what NC is really like. If you have been through fayetteville you can probably understand why

glad to hear his trip went so well. I am newly married and every time we talk about having kids i worry a little. it runs in my family and i know its a possibility but now i am thinking maybe it won't be so bad. it is becoming easier and easier to deal with as it becomes more widely known. I have eaten at golden corral a couple times but was never brave enough to try anything beyond salad and fruit. one day though! one day! we'll all be able to eat anywhere safely

I am wondering if anyone has found a muffin recipe that acts like a regular gluten flour muffin recipe. I made gluten muffins the other day for my sister and husband. I want muffins that look like those. You know, the crusty outside and light airy middle. The top actually kind of gets brown. Maybe I just haven't found it but I have yet to see one out there. The muffins I have made have been dense and kind of moist. They don't really darken and they just dont have the crust from the muffin tin. Any thoughts or tips are appreciated. Especially recipes that have been proven!

haha he did that for me too. and he made sure he assured me it was glutren free when he brought it out to me. it was sooo good. i made my husband try it to see if there was a difference between that and the regular. like i said he like ours better
i love that! i sent the company an email giving them a very warm thank you from those of us in the raleigh area. the office said they would pass on the note to the staff there

I would suggest preparing something that is naturally gluten free. like a pot roast with just carrots and potatoes. if you have a crock pot clean it thoroughly and stick to natural seasonings. salt, pepper, etc. check the labels for wheat ingredients of course. maybe even look up what seasoning brands are gluten free on their websites. you can make mashed potatoes with just butter, milk and salt and pepper and as long as your materials are clean you should be okay. as far as dessert, the easier the better because gluten free baked goods take a much longer time to master. maybe something simple like a chex treat (recipes on the rice chex website) some yummy ones out there like my newest fave :

That will be a hit with the kids i promise. other than that my best tips are:
before you start wash all your counters.
use only metal pans that don't have that nonstick surface.
avoid wood utensils and boards.
with meats check the labels if it is not fresh meat. chicken may have broth added (however i haven't seen a fresh pot roast with anything added)
i avoid MSG also but i don't know if he has to.
Any others questions feel free to ask. I know how to cook both gluten free and normally and have learned to convert many things. Good luck and thank you for being so understanding!

I have read that like six tiimes and it makes no sense. "wheat can have gluten but gluten can not have wheat" ?? that doesnt make sense to me at all! apparently im not the only who found that statement completely assinine. i dont think they know they're allergens very well
