  1. I love the two i have by Roben Ryberg. Gluten Free Kitchen and You Won't Believe It's Gluten Free

    each of these has its benefits. Gluten Free Kitchen has some of the basic recipes for transitioning like biscuits pancakes gravy meatloaf...etc. things that you've made for years that you suddenly have to relearn. and the newer one has a lot of recipes that are based on one flour/grain for those with multiple sensitivities. for example it will have fried chicken-corn based, fried chicken- potato based... you get the idea but i sometimes go ahead and mix them anyways for different textures. She really know what she is doing. you wont be disappointed.

    also Carol Fenster's Wheat Free Recipes and Menus is a very good one. It has the best noodle recipe EVER and a cheesecake that my husband even remembers months later and asks for lol. She has very good flour blends in there as well.

  2. Hello, I have been there!

    i was diagnosed at 16. before that my life was exactly as you described. after eating i would feel bloated, nauseous, and i would almost always get D. I always had D and C issues. go three or four days wth nothing and then something would trigger D and i would be sick for days. and i began losing weight in high school. at the end of sophomore year i weighed 135 (im 5'8) and two months later -100lbs. my doctor said i had acid reflux and then looked to my mom and said she's probably just wanting to lose weight to get more attention. well nexium proved to be useless.

    so by some work of god my doctor went to a conference and one of his little doctor friends told him about a patient he had... and the lightbulb came on. he put me on a gluten free diet along with a couple of medications. one of which he told me was to make my body feel hungry because the last two months before diagnosis i could not eat AT ALL. i survived off of 1/4 of an individual sized jello cup a day. two months later i had gained five pounds and was eating small meals every 2 to four hours. it took four months before i was "regular" and at 6 months i learned what it is like to feel good.

  3. yeah it just started a week or so ago. but i didnt know if it was just something that irritated my eyes. but it wouldnt go away so i called as soon as the clinic opened this morning. toda has been cloudy and no lights in the house have been turned on so i feel perfectly fine today. im not putting contacts in again until i know whats going on. thanks for all the responses. i feel better hearing from others

Everyone has told me you're having a migraine but i didnt think it was possible to have a migraine and not have a headache. the only migraine i ever had before was 7 years ago and i was SICK for hours. this isnt anything like that. could it still be a migraine? I will look into a magnesium supplement asap because i need to get my eyes back! i hope yours stop giving you problems too. if my opt tells me anything useful i'll post it on here. maybe we are having a similar issue?

  5. I have been having some odd symptoms with my eyes in the past week or so. I have an appointment for wednesday of this week with the base opthamologist. I guess I just hoped maybe i could hear from someone before then that may be able to tell me if this has happened to others...

    i got home from work on a monday night and had a pretty bad headache, i couldnt focus on anything and my eyes just felt so tired so i went to bed early. the next morning my eyes couldn't focus on anything and it was like they would barely stay open even though i wasnt sleepy because i had slept for over nine hours (which is a lot for me). i also noticed that every light in the house was hurting even worse, even my computer screen. and upon trying to put my contacts in my eyes burned very badly and the light sensitivity became worse. i havent been able to put them in since then. now i am noticing that i can read just as well with my glasses that are an old prescription from over four years ago. the light sensitivity will not go away. whenever i go outside i have to look at the ground. my pupils arent dilated and my head doesnt hurt at all. i just dont know what it could be. i have been on the gluten-free diet for three years this month so i dont think the diet could have caused this.

    Any thoughts? I really just want to know if this is something i should be worried about? anyone ever go through vision problems like these?

  6. you are NOT alone! Soo many people hear have a similar story..

    I was recently glutened because of my own forgetfulness to label. my symptoms include all the yucky stomach ones which meant i had to rush myself home from eating dinner at hubby's fire station. i made it in time just barely and then was very sick. for me it also means extreme fatigue and slight depression for hours. i cry and cry every time i am glutened. the soreness the next few days also gets me tired but i haven't ever felt swollen, though many people do get slightly bloated...? maybe that is what is going on.

    i can also say that the longer you stay away from gluten and allow your body to heal, the more sensitive you become to gluten and thus your reactions may seem to get worse.

    i hope you begin feeling better soon! always come here to vent. we understand and you wont hear any "its all in your head" from here

I have considered this opic before.. i worried that whenever i was glutened, taking the pill may not be effective since gluten prevents your body from absorbing nutrients. however i have been glutened a couple tiimes and my bc still seems to be working so that theory doent seem to be true. maybe your body just doesnt absorb the pill as well or just being glutened throws your whole system off balance. ieither way i hope this doesnt happen to you again! good luck

  8. I want them to at least replace it with something that can be called nutritious! Although anyone could point out that a gluten-free snack is much healthier for us celiacs than regular glutenful menu items. so they just arent looking at the health aspect from the right point of veiw as far as i'm concerned. but good luck to them i guess. if they can create a healthy gluten free snack i may reconsider frequenting our location. until then i'll get my hot chocolate somewhere else

  9. My first thought was red velvet too! i miss that stuff so much. i never even bothered with frosting on it because i just love it plain

    My second thought.... sara lee's frozen cakes. mmm <_< if i could recreate that... or if someone else did... ;) i'd be in heaven!

    What a good role model for young celiacs to have.

    Do they have talent competitions and things like that? it would be really neat to see her bake gluten free goodies on there if that's her thing!

    keep us informed. especially if its televised on a news station.. i can always search youtube for it

  11. I would go both gluten and dairy free. Go back to a safe diet of whole inprocessed foods. rice, corn, veggies and fruits, meat (plain or with little seasonings like salt and pepper). Everyone will recommend this as a good idea. you can see how much better you feel and then after a few months (it will take time and patience) you may start adding things in one at a time to see what the problem is.

  12. there is one i particularly like. its kinnikinnick quick bread mix. it is very easy! 3parts mix with 2 parts liquid. stir well and bake. and its probably the best i have tried. others i like are pamela's bread mix and gluten free pantry sandwich bread. both of those taste good and have a decent texture. i like these better than prepackaged breads

    there are good recipes out there... i, however, have not yet been able to bake one i was content with. in time though i hope to learn to do this more successfully. i hope you find one you like though!

  13. I agree with Trillumhunter on this one.

    I eat rice chex with no problems but eating the chocolate and honey nut chex made me pretty sick. but my symptoms did not follow y normal gluten symptom timeline. honey nut gave me really bad headachs and stomach cramps and the chocolate just made me extremely nauseous. i do not blame gluten ot CC rather it may just be one of those things i just cannot agree with. i have looked over the ingredients and didnt find anything that would be questionable for me.

    i thought about making a marshmallow treat with one and seeing if i could eat it in another form. if not, feed 'em to my hubby and his friends!

  14. there are some gluten free brands of beef jerky out there...

    also dried fruits mixed with nuts and homemade granola would be good. enjo life and bakery on main both have gluten-free granola. bakery on main is AMAZING! i absolutely love that stuff..i would eat it before desert any day haha. also i believe nature valley makes granola bars that do not contain wheat or oats. i think almond and peanut crunch. make gluten free crackers and you can have a lunchable type box to take with you. (if you dont have the time or desire to make crackers, i highly recommend glutino and schar brands for lunchable type crackers...yum). and kinnikinnick have pretty decent graham crackers.

    Its doable. you just have to put a little more thought into it than your peers, which isnt necessarily fair, but hey at least you FEEL better :D

  15. for me that was normal...for the first few months. at about four months i started feeling notably better for longer periods of time and by six months i felt well enough to finish a gluten free sandwich, for me at that time, that was a huge feat. your intestines are healing right now and some things are easier to digest than others. aso your vitamin absorption is probably changing drastically. a good idea, that everyone suggests is to eat mostly whole unprocessed foods for the first couple months to make this transaction as seemless as possible. stay away from dairy if you notice any worse feelings at times you eat those foods. it does not mean you are allergic, your intestines just aren't healed enough yet. i had to wait four months for milk products and a year and a half for oats. but it does get easier and you should definitely feel better in time.

    i used to go through the line in a deli or at a buffet and grab a dessert just so could visualize eating it. and i totally smelled it too! i do that all the time. i would bake a loaf of homemade gluten bread just for that scent of a yeast bread baking. mm... :)

    and of course those delis with the chicken strips... you know where you can taste it because the scent of fried food is SO strong. i used to ask my hubby to breath in my face after brownie fudge sundaes and the like. no embarassment there. he's seen me at my weirdest.

When i as my sickest i was 16. i started dropping pounds at a time and my stomach constantly hurting. i would have my hand pressed up against my abdomen just because some warm pressure relieved it for a moment. so here i am this 5'8" tall girl who barely weighs 100 pounds and simply is in too much pain to swallow anything more solid than water.. i got diagnosed two weeks before school....

    and the rumors start. "hannah is anorexic" "spent the whole sumer pretending to be sick so she could lose weight" blah blah blah.

    and i'll admit i was embarassed, as silly as that seems now. but i was so happy i could actually EAT. i decided i didnt care. if high school girls are really that petty, thats fine. i just enjoyed those times the girls were brave enough to ask what my problem was...

    half of them thought white bread wasnt made with wheat flour! hehehehe

  18. how about a mixed fruit tray.. you could buy some almond bark to dip strawberries in. pure heaven and easily made gluten free

    also you can do a cheese tray... if you can find a health food store Schar and Glutino have good crackers that you probably wouldnt even ind eating with her. no weird taste or anything. and how awesome would it be, in my opinion, to have a friend eat a gluten-free snack WITH me. most people wont because they prefer to eat what they're used to or they dont want to eat my stuff because it costs more. but hey how often do you girsl see each other?! one day, one box of crackers, i think that would be do-able :D

  19. i had been going through the same concerns this past week. i got glutened on last monday..and was sick with that for a couple days. then i was sick again just a day later and i was so worried. i had never had gluten symptoms last that long and i began to question if i had another health issue. the symptoms are so similar it is hard to tell a difference. when i am glutened i will have the upset stomach symptoms, fatigue and brain fog...when i have a stomach bug, almost identical.

    i have decided that if i cant figure out what i could have eaten or if it last longer than normal or i have a fever than i leave it at a stomach bug. also when im stressed i just get stomach pains that make it tough to eat instead of any if the more severe symptoms.

    maybe others have more insight though. i certainly hope so because earlier this week i felt so awful i was beginning to think i was going to have to go get my gall bladder removed or something. luckily it hasnt actually come to that
