Thanks for the info and dont worry about grossing me out i've had bad days (weeks) too
my symptoms are not quite so severe..i havent ever passed blood. i have been having breath taking stomach pain in the upper right side but it doesnt spread to my back. it just burns and feels like a knife being twisted around. and D but im not sure about that.. that hasnt been chronic so much. i will be talking to my doctor after i finally get my dentist appointment out of the way.. i was down thirty pounds before diagnosis and my tooth enamel was weakend= two broken teeth in back

I would eat there if i was within driving distance mmm...a hot ham and cheese sandwich on homemade bread that i didnt bake or get angry at!!! how fabulous would that be?!
i think you could do all gluten free to be safe but they better be yummy for gluten eaters to pay extra for a sandwich or personal pizza. but it is definitely do-able

I dont have chron's though i have been having stomach issues lately and wonder if it could be the cause. tell me more about it and your symptoms please.. it may just be CC for me but its been a week and no progress so im exploring possibilities.
also i have made grilled ham and cheese with gluten free store bought bread and homemade. the store bought does not brown it just becomes crispy so that makes it easier once you figure this out. homemade bread that i used required more butter than what i was used with regular bread...and i also use real butter now instead of margarine so that would have something to do with it. the best thing is to apply a thin layer and let it cook through..if i pick up the bread before the butter is cooked on it i always always mess it up. it gets mushy and wont cook right for some reason
it just takes getting used to! good luck
Oh yeah kinnikinnick and pamela's have wonderful bread mixes. i have used and LOVED both.

I was glutened last monday... i went to carabbas and had a grilled chicken caesar salad... i was sick within thirty minutes with identical symptoms of my last glutening. cramps, D, gas, fatigue and slight fuzzy feeling in my head. the next day my husband's family was in town and wanted to go to the beach so i went but wasnt feeling well enough to eat. i eventually did eat a pear. the next day i was so nauseous i couldnt sit up. i didnt eat until about 2 and could only manage a couple kinnikinnick grahams. the next day i was okay until after dinner. i ate nachos with the same brands i have always used and again got the cramps and D. i rechecked all labels and company webpages. nothing suspect. friday i woke up feeling okay and went to my first day of work and had plain rice for dinner that night. saturday i woke up back to my old self...until i ate my breakfast cereal..then mild D. i recovered quickly though and ate dinner that night with no issues
here's where my questions come in:
today is sunday: i ate an apple and peanut butter for breakfast and got serious cramps and D. are stomach cramps and D signs of a peanut allergy? or could the gluten still be in my system? could the peanut butter cause me problems without necessarily being an allergy? it wasnt a gluten pain, it was more like sharpand burning pains today. no fatigue or fuzziness...
i just want this to be over with! i finally got a job after looking for almost six straight months and i dnt want to start off by calling in sick all the time and have them all thinking im a hypochondriac or just lazy!
any thoughts are welcome? feedback and comments appreciated

i made a gluten free bread from bob's red mill that contained these bean flours and it upset my stomach too...and made me naseous! i think those bean flours just dont agree with some of us... not like a glutening like you pointed out, but just an upset feeling like something isnt quite right
doesnt help much either, sorry. my only advice is to try to find a sub or try a different brand of bean flour, though they are pricey to buy and use only a small amount of

i ordered cinnamon rolls from the Silly Yak Bakery and those were good. i like them better than those pillsbury ones that come in a can BY FAR!
eventually try to make some of your own though! cinnamon rolls really arent hard to make.

these are really good and are very light. not dense like the gluten ones i had in my gluten eating days. to me this is a plus but every person is different.
everyone craves things after beginning this diet. at first they are nearly overwhelming but everntually that will fade. but every once in a while you'll see something and sigh to yourself. but then if you have baked and cooked this way a bit more, you should take that as a chance to experiment.

i totally agree.. i almost never say celiac disease if i dont have to. i leave it at "im gluten intolerant" usually
i think if it was ever a trait it would be like having a risk for heart disease..that's still a disease but noone is going to look at that like a trait either... either you're at risk (your family has a history of it) or you HAVE it... or you dont at all. i hope what i am saying makes sense...

EE sounds like a definite possibility.
also those pills to increase acid should be a huge help. i have been reading up on low stomach acid because there for a while i was getting really bad cramps and i am very strict in my kitchen. i read that low stomach acid means some proteins cannot be properly digested which leads to cramps, diahrrea and bloating and all kinds of other issues. indegestion and heartburn. i dont think i read anything about vomiting though but it is a possibility. but you seem to already be on the right track! good luck and keep us updated on how your little one is

I would put all her food on foil in the toaster oven.. there shouldnt be anything wrong with that as long as her food doesnt come into contact. and of course wash your hands and the counters and everything else really well
now the toaster... she will need her own one of those. you can't get those completely clean and there are ALOT of crumbs.
but i have cooked gluten free and regular food in an oven at the same time and never had a problem. if she is extremely sensitive i wouldnt recommend that though!

If you are what we call a super sensitive it is a good idea to call the company about cross contamination. I have used gluten free labeled products without any adverse reactions thus far..
you may not see any real improvements for months if you suffer the digestive symptoms. It was a solid three months before i felt okay with eating. six months before i felt BETTER. not good, but better.
for now plain easy to digest foods may be a better idea for you if this is the case and then later you may add packaged foods back in and see what you can and cannot tolerate

I read that you used all the same cheese sauce and things. did you double checks those? like companies say in their disclaimer they can change their ingredients at any time without public notification. I would look into that, Kinnikinnick is one of those products i trust completely and they havent ever burned me. im not totally discounting what you're saying. every company can mess up. but it could be one of those other products

get on the betty crocker website and look for the rice chex recipes. there are some really good ones that goa long way and look very yummy and kid friendly... i have a kid's appetite haha love sweets! and of course you wont spend a bunch of money and you'll be able to eat it!

I recently noticed the same thing. I will go ike you said in large amounts and sometimes within minutes i will have to go again. its the kind of urge that cannot be ignored and it can be very irritating! i havent been able to ascertain whether ir not it definitely is gluten but i have noticed when i get glutened i usually lose three of four pounds and i am sure part of it is water weight because i also will feel dehydrated

My kitchen isn't completely gluten free but im not super sensitive. i'd say im somewhere in the middle. crumbs and such will get me but i can cook with wheat if i was my hands ALOT!
my recommendation is have gluten free cabinets and non gluten free cabinets. designate which counters he will use and which you will use.
Remind him not to double dip in the peanut butter, butter, etc. i think it is very feasible if you take precautions and always label!!!! we have separate butter. i use real butter and hubby uses margarine so no confusion. separate toasters. don't get discourage. it could just be one specific flour or starch that you use. my hubby suggested maybe its the xanthan since none of the non gluten free stuff has it at all. but i dont know that is possible

the only gluten free thing i have made that was rolled out were cinnamon rolls so i'm not sure. usually the texture is slightly different but i imagine it will be doable. maybe the better batter will mimic the texture but i havent used it. i think it is worth a shot though!! and there are ways to improvise so dont be afraid to

do you mean before we got diagnosed where did it hurt?
if that is what you mean there wasn't one spot for me...it was like i could feel it in different places in order. first would be right under my ribcage on the right side, a slightly sharp feeling. next would be about an inch above my belly button and to the left, that was the worst, a kind of ache only every few minutes it would feel like someone was squeezing and twisting. then would be my lower abs and that would be the moment like you said "i had to go right then and there"
my doctor firs said "oh that is acid reflux" and gave me nexium. absolutely no help whatsoever! so i went back and re-explained te different places it hurt...and he said give it a while longer and gave me something else.. still nothing. then one day he called me in and said he had gone to a seminar and heard something that made him think of me and handed me a packet of info briefly described what was going to happen. then voila! i was diagnosed. nothing official.. but with the diet change in two months i had gained back 5 of the 30+ pounds i had lost

Friday I bought the cookies, brownies and yellow cake mix (I couldn't decide and I was headed to my grandparents for the weekend in a tiny town where I didn't think I would have any choices). Well, today I made the cookies. Very good but my turned out a little crumbly, may have to try it again and see if it comes out better.
I also walked into the tiny local supermarket and found all of the mixes where there. I picked up the chocolate cake and now have a cabinet full of dessert mixes. Time to try the rest but since I live alone it may take me awhile to work through the mixes (wait, who am I kidding). I gave half the cookies to my grandparents (who surprisingly don't mind gluten free things) and am nearly through my dozen. Hopefully the rest of the mixes are just as good (or a little better).
What state are you in and what store did you buy them from??
i havent seen any in our part of NC!!!

The biggest group of people i have fed was a group of five so i obviously don't know about a large dinner party group. I would probably allow gluten, my house is not gluten free and my husband is very good about not double dipping in the peanut butter. he uses margarine and i use butter. we have it worked out fairly well. if you're having an outdoor cookout just put the gluten free stuff on one table and the other stuff on a separate one and as people show up make sure they know which is which and what to do to keep you safe. i wouldn't ever provide enough of my hamburger buns for a large group they're expensive and i would much much rather keep the regular ones around and be careful myself. the only big issue would be if the food will be sitting out while people are just going back and forth. having one meal as a group would definitely seem safer to me. then you can kind of see what's going on.
But i also don't see anything wrong with doing all the food. it would truly be awful to be glutened at your own party. absolutely no fun.

There are flour mixtures you can buy that can be used cup for cup in place of all purpose flour. (ie better batter-there are others but i can't think of them at the moment)
otherwise you can use a mix of flours you have or can easily find at your local health store and/or regular grocery store... then just add about 1 tsp of xanthan gum for every cup of flour.
everything else seems like it would be fine to me but of course there are other people here who are much more advanced in their baking skill than i am. but just glancing at it i am positive this recipe can be altered nicely

What about a fruit tray? or dried fruit. i like granola bars too
bake a loaf of gluten free banana bread. that stores really well and its delicious. they wont even mind it doesnt have wheat.
