Wow what a great question and one that brought a realization for me! About 2 years ago my ankles and feet started swelling really bad and no one could tell me why. The doctors prescribed me water pills and they didn't make much of a difference so I just suffered through it. Just about 3 months ago I was diagnosed with celiac disease and you know what I have not had any swelling anywhere with the exception of the 2 times I have glutened myself over the past 3 months!! What great news and it feels good to know I will most likely not face that again!! I hope it gives you hope to know that this may subside for you too eventually. I am one of those people that it only took a few days of being gluten-free before noticing no bloating and stomach pain after eating it was like a miracle of course it is taking a while for the lower parts of my digestive system to heal up but I am still miles ahead of where I was just a few short months ago!!!

Just take it slowly and take your favorite items to eat and find a way to make them allergy free for you. In the beginning I was overwhelmed and did not know how I was going to do it! After a few weeks I took a step back and began checking for my fave recipes gluten-free online I was surprised to find that many people have found ways to take the food allergies out of some of the most common items. I hope you are able to keep some of your fave foods and get through this. You will feel so much better that you will eventually not feel as if you are "missing" out on things.

Well I can't eat most of KINNIKINNICK brand stuff because of the egg content or the risk of egg cc as I am allergic to egg as well as gluten. I looked at the difference in ingredients and noticed there is A LOT MORE STUFF in the KINNIKINNICK brand in comparison to Bob's and Pamela's bread mix! I am not sure which ingredient but if you look... the risks are alot more to choose from. I have problems with many of the prepackaged breads.

I am not sure about the "cleaners" but be sure to watch hand sanitizers they have alcohol in them and that is bad. I know Purell is gluten-free and as far as hand soap goes soft soap and Dial are gluten-free but of course you always want to check the ingredients and with the manufacturers as the recipes and solutions can change without notice. You for sure need to get a new toaster for just her and I too always make sure I wipe out my microwave before I use it myself. You should also keep a set of pans that you only make her food in as pans tend to absorb what is cooked in them over time.

No one likes to nag or to be nagged about anything but this is your health and all of us here know what you will go through if you get cc'd and it is horrible. Although it is impossible for your family to remember the hand washing all the time and for them to think about cc everytime they go into the fridge for some food or the cupboards we can ask them to be thoughtful.
My kids/husband their own cupboards I don't even do shelves. I have about 3 cupboards that are mine and they have about 4 that are theirs, the rest are used for dishes ect... I keep all my food, pans and dishes in my own gluten-free cupboard. I also have my own silverware/drawer and the counter above it is never used for preparing normal foods. If my family prepares food they do it on the table and then wipe if off immediately. I pretty much prepare my own food and as far as my food in the fridge goes I have a snap tight container that I keep my items in. All these things help to eliminate the possibility of being cc'd.
The only issue that I worry about is our oven as of course we don't have two of... we just make sure we clean it out a couple times a week. Our microwave oven I am just sure to wipe it out before I use it... a bit time consuming but worth it to me

It has been 3 months for me after spending at least 3 years killing myself and I still find myself needing an afternoon nap a few times a week. It is getting better but of course when I have an accident with gluten it sets me back for about a week. I have been doing good though only 2 glutens in 3 months so I am getting there lol.
Good luck to you and your husband, just be patient and continue to support him through the beginning months I think you will be happy when you get to the other side!!

I agree that it's probably a mental memory thing too which literally has to suck! I know when I see food that is not gluten-free my first thought is "ewww no way am I gonna touch that stuff" I hate that pain and sickness so bad that the inexperienced people I deal with will put fresh fruits right next to gluten filled items and I refuse to eat them in fear of cc!

Guys, pleased have your dr check this. My friend just had surgery last week for a cancerous thyroid. Her main symptom was trouble swallowing pills and food. She pushed her dr and he agreed to a sonogram of her thyroid. That showed enlargement which caused them to take a needle biopsy then to surgery. Just make sure you are not in her shoes. At first her dr didn't want to do anything about it. Get it check thoroughly.
This is very interesting Ang again you are very informed and a great asset of information. I too have trouble swallowing sometimes and with some foods if they aren't super moist I have problems swallowing them. I have no problem with cereal and saucy stuff but if my chicken isn't really moist I will have problems and then at other times I will just be sitting not eating or anything and will try to swallow and I have to use a lot of effort to get that initial swallow. Weird I think but I really hadn't thought much of it, just figured it was from my GERD... maybe I will have the thyroid check.

Possibly a yes on the spices. I usually avoid anything that lists natural flavors but does not identify gluten-free. I'm just lazy about calling the company. I know some of those are OK but without a call to the company, I'd rather skip it. You need to be cautious about spice mixes. As an example, I use Lawry's Seasoned Salt but the generics of that product contain wheat in my area.
You can call the company and get more info. It could contain barley malt or another grain derivative. Talk to them before you use it again. Your chicken looks OK.
Thanks Ang I appreciate the information I was not aware that mixed spices are bad I was careless and read that all McCormick spices were safe and another place that all spices are generally safe. Interesting that it is usually barley malt I react VERY badly to that and it hits me fast as this attack did. Today feels like a turning point for my system but I will continue to eat basic and bland foods while slowly introducing other things back into my diet the rest of the week! All of you have been great I am so glad that I found this website it has by far been the best I have found and most helpful.

stick to naturally gluten free foods, and it's easier. "cooking" can take all of 15 minutes to chop veggies and meat and make a stirfry. and fruit, vegetables, meat, rice (gluten-free grains in general) are all naturally gluten free.
Agreed 100% I too felt very overwhelmed and still do I am only 3 months into my gluten-free way of life but going through the attacks is not worth even one bite of gluten!! I have slowly started finding other gluten-free foods as well as learning to make my old recipes gluten-free. Do your best to relax and when you feel overwhelmed find a quiet place and try to relax through it and remember you are not alone!

When I first was diagnosed (5 years ago), I would get sick within 10 minutes of eating gluten. Which made it easy to figure out where I slipped up as I was just learning. But, after I was gluten free for a long time, the symptoms took longer to show. Like sometimes an hour. Now if I get accidentaly gluten, I get severe (and I mean severe) heartburn. Then the day after, the neurological problems kick in. I stagger around like I am drunk, hit the walls, because I can't judge the distance and wind up with a black and blue body. I have even fractured my arm during one of these episodes. I have had them last from a week to 3 months. So, for me, the recovery time depends on how much gluten I have accidently ingested. The neuro problem that lasted 3 months, was from one pill that was suppose to be gluten free.

I've been gluten-free for about 3 months now and have been cc'd and just made a bad decision and not read a label. Within 30 minutes to 2 hours after I eat gluten my upper stomach starts twisting against my ribs the pain is just horrible and makes me feel like puking (although I don't I thenbecause I immediately pop a Bentyl), then my bowels start rumbling, twisting and just horribly cramp up on me. I end up in the bathroom with "D" usually 4 or 5 times in the first 4 hours until the Bentyl starts to work. Then for the next 36 hours I face bloating, gas and pain on my left side. Usually about 30 hours later I am able to start an intake of very bland foods and by the 4th day I am back to my gluten-free normal diet. Then for up to 7 days I face severe fatigue as in I can barely make it up and down the stairs it just feels as if my muscles have shut down, that along with muscle tremors in my hands and calves and an intense irritability, I really have to think before I speak and react to things during that time.

Kraft will list all gluten on their ingredient listing. Dole canned fruit is gluten free and Cool Whip is gluten free. Pecans in themselves are gluten free.
Dairy might bother you if you are new to the diet and still healing.

Thanks for the info... I should be pretty safe if I use moderation as in maybe just a tablespoon or two of it.
I do notice that if I eat "too much" dairy in one day or over several days that I will get upset a little bit. Also some dairy items will bother me while others will not. I can eat the heck out of mozzarella cheese
and I can also eat colby/jack combo chunks (great value brand because it is labeled gluten-free) safely. Perhaps
their is an ingredient in the Cool Whip or perhaps it is more rich? I'm not sure.

You mentioned chicken breast. Was that a frozen chicken breast? Sometimes those are coated or injected with broth. You have to check the package to see if it is or not and if it is what are the ingredients.
I'm sorry you're feeling so bad. Maybe you can go back to a very simple whole food diet for a few days until things calm down. Have you checked all your spices? Some spices, especially mixes, contain gluten. Also you want to throw out any you might have double dipped a gluteny spoon into.
I eat Schwans Unbreaded Chicken Breast Filets they are individually sealed and the ingredients read as follows:
INGREDIENTS: BONELESS, SKINLESS BREASTS OF CHICKEN WITH RIB MEAT CONTAINING UP TO 12% OF A SOLUTION OF WATER, SALT AND SODIUM PHOSPHATE.
I eat them all the time and never have an issue with them.

I have this recipe that my mom has been making us for the 4th of July ever since I was a baby and I am wondering if the items are gluten free?
Kraft` Jet-Puffed Miniature Marshmallows (colored or white)
Mandarin Oranges (Dole)
Pineapple Crushed (Dole)
Pistachio Pudding `dry mix` (Brand suggestions??)
Cool Whip (I've heard this is safe but last time I bought the `Lite` Cool Whip it upset me a bit so I thought I would verify here)
Pecans (Brand suggestions??)

Some pre baked gluten free items just are not going to agree with you.
You may have noticed I posted on Saturday night as I was dealing with a contamination and couldn't figure out what it was I ate. After about 36 hours of cc I am able to start back on my normal diet with a little help from meds too. I am wondering though why is it that pre baked gluten-free items won't agree with me? This may answer my question as to what set me off because I ate Kinninnik chocolate sandwich cookies and that was the only thing different I did that night and within 2 hours of eating them I was toasted!! I did mention in my other post that these cookies are labeled gluten-free, egg, casein, dairy free yet if you look on the back it has a warning about equipment processing eggs... I am allergic to egg as well.
Could you please explain this thought?

I remember how overwhelmed I felt as I started trying to go gluten-free and realized just how complicated it was. I began slowly with things marked gluten-free and then gradually added other things in by reading labels. It will get easier and you will within a couple months be able to build up a variety of choices back into your diet. Just don't give up because once you spend a few weeks without feeling all the bad effects of being contaminated you will never want to feel sick again. Keeping a written food log is very important so you can track what you react good and bad too it helps in eliminating things that may not agree with you.

I know from experience and a homeopath that I have a wheat sensitivity and dairy sensitivity. I also experience fuzzy thinking when I don't eat 'clean'... so I'm here to learn what I need to do and all the topics seem advanced, for people who are already 'in' the scene.
My question - the topics seem advanced, I am looking for something like 'Newbs Start Here', particulary:
* Simple place to begin - maybe a short list of gross offenders to avoid right away
* Simple reference for what has/doesn't have gluten (types of food mostly, brands as a secondary priority)
* ADHD- and neuro-specific tips
I'm not threatened by the idea of changing my eating dramatically; I'm daunted by not having a simple place to start!

Bread products, BBQ sauces I have not found one that I haven't reacted to yet!
Avoid most alcohols- check labels and call the manufacturer!
Most cereals you can NOT eat there are a few though like the Chex brands, Fruity Pebbles and Cocoa Pebbles
have been proven to be safe.
All Pasta is a big NO unless you get Rice or Corn based. I have been eating DeBoles brand and find
a lot of other selections at our local health food market and larger grocery store chains.
Avoid most potato chips, crackers, and snacks unless they are clearly marked gluten-free
(You can check out Glutino Brand for gluten-free snacks and cookies)
Avoid any and all cookies, cakes, donuts, prepackaged tator tots/french fries -unless you make them from scratch.
Walmart's Great Value brand clearly marks their foods Gluten Free and a lot of their stuff is including pizza sauce, spaghetti sauces. Most classico sauces are Gluten Free and the ones that are clearly label it. Walmart also carries noodles by DeBoles that are Gluten Free and inexpensive a 3 serving box= 1.41 all other stores you will pay 5.00 plus for that pasta. These stores also sell mixes, rice flowers and stuff to use as alternatives in cooking.
I too am a newb just a few months into it and make mistakes still sometimes I am not sure where those mistakes are but more and more manufacture's are beginning to label their foods and giving us alternatives.
Good luck and when in doubt read the labels if it doesn't say gluten-free then don't risk it!!

It could be the dairy. I didn't know I had a problem with dairy (casein not lactose) until I went gluten free. Cheddar popcorn and cheese maybe setting you off. Most times the GI will say no dairy in the beginning and the lucky one's get to add it back after awhile. I can't do soymilk. A little soy in foods seem okay but liquid soymilk makes me very gassy. Also, in the beginning, our intestines are so sensitive that really anything can set them off until some healing takes place. I still can't do grapes or most fruits....everyone is individual. Keep tracking everything you eat for awhile, that will help you discover a pattern.
You know back when I was about 6 I was diagnosed as having a milk allergy and was told I would outgrow it. Around age 20 I introduced milk back into my diet without any issue over the years. Dairy and high fat foods will set off my GERD so I do try to watch how much I consume.... I really hadn't thought about the cheese flavored snacks irritating me but that WITH the Colby/Jack slices perhaps was too much.
I have checked with Sunkist company and they stated that it is gluten-free as well as:

What stood out to me in your list was:
Quakes Rice Snacks Cheddar -- If this is Quaker Rice Snacks you could be having a problem with it. The ingredient label may look safe but they cannot guarantee their items are not CC. Some people have posted on here that they can eat their products and others can. I stay away from the brand due to possible CC (a lot of their products contain oats).

I have been eating these for a long time with no problems at all I am aware of the possible cc but since I had not had an issue with them I continued to keep them in my diet. If after eliminating some other things I still have a problem I will for sure consider this!!!
Corn -- In the beginning some people have a problem with corn. This may or may not be part of your problem.
I have not had an issue with the corn/corn on the cob but I absolutely can not tolerate corn tortilla chips in any form whether they are gluten-free or not... from what I am reading as I am healing other things can start to bother me that haven't before... this concept confuses me since I am "healing" but can one form of corn hurt me and another not? Is there something else in the corn tortilla (chips) that could be upsetting me... I do NOT eat them anymore though.
A handful of cheesecorn (Chester's) -- If these are the Frito Lays brand... they have a list on their website of gluten free items but also state that they cannot be guaranteed gluten free due to possible CC. I personally stopped eating Frito Lays brand mainly because I was getting sick a lot. I would get a bag that I was fine with then a bag that I got sick from then pretty much any chip I tried with that company I was getting sick so I just stopped buying them (this was over a period of time where I would try a bag then stop for a while then try it again and pinpointed that it was the problem).
This is interesting as I had not been eating cheesecorn or cheese twists until just a couple weeks ago after eating them successfully I started keeping them around... however knowing that it is a dangerous food I will probably start with eliminating this item FIRST unless others post something different.
The Soy Milk you are drinking -- Have you been okay with Soy before?
I tried Soy a long time ago seemed okay with it then tried it again after going gluten free and could not handle it.
I started drinking soy milk about a month after I went gluten-free a friend of mine drank it and I do notice if I eat too much dairy or intake too much fat for my days that I get gas and IBS but it usually takes alot or something very very rich. I did forget to mention that I had eaten a hot fudge sundae from McDee's on Friday evening but I would think I would have been ill faster than 24 hours after? I know I am super sensitive to Barley Malt but not sure about dairy or a small cc if there is such a thing. So anyway using the soy and non dairy creamer has improved my digestion for me.
I know milk products in the beginning bother some people while your stomach is healing not positive about soy since I do not drink it.
I hope you figure out the culprit(s) and feel better.

Thank you for the input I know for sure that I had to have glutened myself I ended up on the sofa all night and not able to sleep until 4am that was with all the meds. I woke this morning at 10am took my prilosec like normal but had to take another Bentyl because my system is still twisting and rumbling. No fever though so I know this is gluten and possibly the peanuts stirred my IBS! I am just desperate to figure it out because as you all know here feeling sick this way is not something I want to repeat and this time has taken a day from me
Oh and for the day I will be sticking with my cream of rice, Rice Chex, steam fresh white rice and maybe a chicken breast for the day...that's if I get to the point that I "want" to eat! I hear lots of water is good too!

I was diagnosed with celiac disease 2 months ago. I immediately started a gluten-free diet and within the first few days I noticed drastic improvement in my Acid Reflux, Bloating, IBS and fatigue. I was at a bbq and there were Lays BBQ chips there and I had read that Lays chips are safe... dumb me I did not read the label until I had eaten two handfuls of them. There it was clearly labeled... Barley Malt I felt my stomach go to crap with the twisting and cramping within an hour of eating them. I was so sad and disappointed after spending 2 months with very mild symptoms to then be thrown into a full blown attack. Anyway that was about two weeks ago.
Today I woke up and had major IBS symptoms I ended up taking a (Bentyl/Dyclomine) which helps to take the edge off of the horrible stomach and bowel twisting that was going on. Then by the end of the evening I had to run to the bathroom 3 times within 1 hour and ended up taking another 20mg of Bentyl. My problem here is as I look back at what I ate over the past few days, the things I did differently was to use ===MRS DASH: Onion and Herb=== Is this gluten-free? I also ate grapes and I do not usually eat them. I also bought pre-sliced mushrooms and got them at Walmart instead of Food Lion. Could any of those suddenly irritated me?
Here is the list of foods I have consumed in the past few days do any of you see something I haven't?
Fruity Pebbles or Rice Chex with Silk (Plain) soy milk
Quakes Rice Snacks Cheddar
Carrots, strawberries, grapes (all fresh)
Schwans plain chicken breast cooked gluten-free pan, with PAM cooking spray ( I normally do not spice it)

Colby/Jack cheese Great Value brand labeled gluten-free
A handful of cheesecorn (Chester's)
About 5 to 6 almonds/cashews from Planters mixed nuts

Schar Chocolate Sandwich cookies
Sunkist soda 1 can
If not since I am still in the early recovering phase could something as simple as a mild spice set me off? OR could I still be feeling the effects of the gluten I ingested almost two weeks ago? It seems to me since I got over that incident with several good days before tonight it would not be from that bbq but obviously I am typing here because I have NO IDEA!
I am very concerned because I know how important it is to figure out what it was because I do not want to deal with this pain can anyone help me please!

So I started a thread in the recipe section and had commented on how cool whip last time I used it with my strawberries it gave me yukky heartburn (which my GERD has improved a LOT since being gluten-free for 3 months). Someone mentioned that perhaps I am allergic to caesin which is in cool whip even though it is dairy free. Then someone mentioned that the "lite" isn't dairy free. Anyway I am not sure how to figure this one out because I can eat pure cheese, cheese cubes, cream cheese without any problem at all yet cool whip and sour cream tend to set me off a bit again nothing like a gluten attack but more like my GERD with some gas and spastic "d" the next morning.
So is there a difference between "casein" and "dairy" if so can you explain what the diff is and why one may bother me yet the other doesn't?
Second part of this, I had noticed that I was still suffering from stomach issues at night, again nothing as severe as I get when I gluten myself, it's more of an intolerance reaction instead just rough digestion. When I looked at my diet I looked to the obvious... corn I was eating it every night I LOVE corn on the cob but I eliminated it from my diet at least in its most obvious forms and I have to say that it's made a big difference in how I feel at night. I first noticed this intolerance in the form of the corn tortilla chips when they made me reflux even in the gluten-free form. So I am guessing that /sigh this is another thing that I will have to avoid in large subtle doses and all together in it's pure form! Good thing I like carrots, green beans, tomato's, and mushrooms!! Garsh I sure am getting frustrated!!
Any other suggestions are MORE than welcome!!
On a positive note! I made myself some spaghetti today using Deboles Rice Pasta and Great Value traditional sauce and it was yummy and did NOT make me sick at all!!! YAY I haven't been able to eat spaghetti in over a year when I first started getting severely sick!!!!
