I like La Tortilla Factory Ivory Teff wraps. They are good with sandwich fillings and also good as a super thin crust pizza.
I also make more dinner than I should so I can have leftovers the next day. I make stuff like slow cooker chicken cordon blue, borscht, Shepard's pie, pizza soup, jambalaya... pretty much anything I can make with the local sale ads. But I keep the teff wraps on hand so I don't get bored.

I made these cookies today and they are so good. I had never made gluten free sugar cookies before and surprisingly, they were a success! And they are so darn cute for autumn!

I used a rice and tapioca flour blend instead of regular flour. I also used walnuts instead of cashews.

Ahh The joys of Gluten Withdrawal...now no longer am I just hungry I feel WIRED and JITTERY...
How many of you have felt that way when withdrawing from gluten????
I definitely did. It has gotten better with time, but now when I get glutened, about a day or two later I can eat pretty much anything in sight - usually it is chocolate though

my favorite thing to make fun of is when i tell people i can't have wheat they say say "oh! so you can have white bread then right?
people apparently don't know what is in the food they eat.
I seem to get this with just about everyone... people I work with, family, my fiance's family...
Like last night I went out to dinner with my fiance (Adam) and his brother and he said "you can have flour tortillas because they aren't whole wheat, right?" Adam and I just looked at each other and laughed

thanks for shaing your experience with me. It puts my mind at ease. It is difficult to do both and I didn't want to give in but I think that I might. So I can focus on my health. I guess I'm a little scared bout dropping because I hope that I'll be able to go back to school. I want to accomplish something but maybe that something isn't school right now. Iv been in and out of school because of the mysterious sumptoms of celiac and depression before I figured out what was making me sick. Kinda sucks that I hv to sit on the sidelines for a little longer while I heal:) one day at a time right?
Exactly. The myriad of complications - ie, depression, anxiety - that come with celiac disease is really what kept me down. My doctors thought I had bipolar disorder, yet it was what the medications did to me that made them realize that it was something else. Eventually after I had searched high and low for a solution, I mentioned to my doctors celiac disease and was eventually diagnosed.
The anxiety is really what made school that much harder for me.

The only Dannon yougurt that is gluten-free is the plain......Hope you like the greek yougurt....
Yeah that was kind of the trouble. It was one of those products that, right after my diagnosis, I figured couldn't have gluten in it... then I sent an email and found out that most flavors did in fact have gluten. Now I've gotten in the habit of emailing or calling when in doubt.
After receiving this email I did try vanilla flavored Oikos... it was good (but not as good as Chobani)!

Hi I was diagnosed in august and been gluten free for six weeks. I am still learning what I can and can't eat. It's taking a while. Did any other college students hv to dropp classes or stop going to school because of their symptoms? Just wondering cause I see alot of post where people are able to continue one way or another with being productive through the day and accomplishing things but for me it's different. Brain fog, fatigue, Weakness, eating every two hours, anxiety, and depression holds me back. It's frustrating for me because I'm not used to feeling like this I am usually a the opposite from this. It'd be nice to hear other stories of how recovery went when you first found out. If you had a hard time. Basically right now all I do is stay home rest watch tv, read, play games, research celiac, and cook sometimes when I feel good. It's such an up and down thing. Feel good then feel crappy. I really love to draw(fine art major) but the brain fog messes me up can't even think of simple things being creative usually comes instantanious but it's a stuggle right now. Iv written off the "arist block" cuz it's jut been so long. Anyway if anyone else in college feels the same way or going through similar things it'd be nice to hear from ya.
I had to drop out. I got through 2 1/2 years of college and the doctors visits, inability to get out of bed, ER visits, depression/anxiety, inability to sleep/sleeping all the time... it just got to be too much. I did not even know what my problem was until a little more than a year after I quit school. But, in retrospect, leaving school was the best thing I did -- but this is just in my experience. After quitting school, I got a job that started out part time and eventually I started working full time. My boss has been extremely understanding when it comes to my health.
There is no definite answer to your question - take the time to get better. No two people are the same in this situation - what worked for me may not necessarily work for you. Some take longer to feel better while others feel better the next day. It took me quite a while to be functional again - but I did get there

Put half of my family and myself of the IBS list. I was diagnosed with IBS-C at a very young age (age 12).
It is definitely a catch all diagnosis, IMO. Kind of infuriating, in retrospect.

I saw Oikos (Stonyfield Farms) yogurts for the first time at a local store yesterday. Since I have had trouble with Dannon yogurt in the past and don't care too much for most Yoplait, I emailed Stonyfield Farms. Not one hour after I emailed them, I got this:

Candy Tree makes gluten-free licorice (but I've only ever seen it online - never in any store). Also, Orgran makes molasses licorice.
Also, if anyone is in the Chicago 'burbs, there is a candy store in Skokie that makes gluten free candies (including licorice) called Raising the Candy Bar. For those outside of Chicago, I believe you can order some of their goodies.

I second the EnviroKidz recommendation. They are quite tasty - especially the peanut butter variety (kind of reminds me of Reese's PB cups cereal).

La Tortilla factory teff wraps + Sweet Baby Rays + leftover chicken + onions + shredded cheese = mini BBQ chicken pizzas. Takes about five minutes to throw together and heat in the oven. I like the teff wraps as pizza crust more than the frozen pizza crust (taste better and aren't chewy).

Panic attacks are definitely common around these parts
For me, it is one of the longest lasting side effects of a glutening.

Part of the problem is I cannot find an ingredient list. I did not purchase a package of them.

I have searched (and emailed the company)... does anyone know if Vienna Beef Hot dogs are gluten free? I ate one today (and was told it was gluten free) but I feel like crap now. I can't even find the ingredient list. I can't imagine that they have gluten in them, but I just want to rule them out.

A little update:
I have been almost corn free for a few days now and WOW. I feel 110% better! My reasoning for not eating corn was a touch superficial in the beginning (I did it because of bloating), but I have come to realize that other maladies have lessened: I didn't need a nap when I got home from work the last two days! That may or may not have anything to do with corn, but I'm a glass half full type of gal

My scalp ALWAYS itches. And I randomly get bumps on it - albeit not pus filled ones. That being said, I always thought it was DH (like on my arms, legs, and chest), but maybe it has to do with corn, too?? My mom gets them, too, and one thing that helps her is Nizoral (I'm not sure how to spell that) - but that particular shampoo did not help me. It could be worth a shot, though.
Anyway, thanks for the tips everyone! They were very much appreciated!!

I take Enzymatic Pearl probiotics (Walgreens). Sometimes, I also take Lifeway brand kefir. To be honest, I like the kefir better, but both do help with bloat and gas.

Have you tried exercising? I still get major bouts of C - I still get them at 1 year gluten-free - I make sure to work out and it seems to really help - but again, make sure to drink enough water.

I like Tinkyada brown rice pasta and Ancient Harvest Quinoa pasta. Tinkyada was a lot easier for me to find. Corn pasta (DeBoles) was too mushy for my liking.
