I thought I could tolerate corn again after omitting it from my diet for a whole year. I don't get GI symptoms from it anymore except for bloating. Like Jestgar, I don't cook with it (I do most everything from scratch) or eat it at home but do get the Lemon Chicken at PF Changs occasionally in which the chicken is dredged in cornstarch.
I did so this weekend and was bloated for 2 days but it was worth it
Yeah I am just worried that it is going to be that much harder to eat... especially since after going gluten free fairly successfully (I'm human - I've made my share of mistakes along the way ), Mexican food was a staple in my house, along with polenta. I know I can handle it but I am so intimidated!
Does anyone else have BM problems with corn?

So I have searched this forum for information on corn intolerance. And while I have gotten very good information, I still have questions for some of you who have this. I think I am corn intolerant. I keep a food journal and after I eat food with corn in it, I get bloated, sleepy, and I get stomach pain. I know it is not soy or rice. It still may be milk, but I doubt it (my mom and other members of my family also have difficulty with corn).
So I guess I just need a little guidance on where to start. It just seems like corn is in absolutely everything and I am kind of overwhelmed.

I get a migraine almost immediately after being glutened, but the majority of the symptoms don't start until later. Gut pain, bloating, and brain fog are about 12 hours later, usually. For me it depends on the amount ingested, really. My reactions never seem to be quite the same and that is what made it difficult to diagnose.

I was wondering if anyone knows if Hempz is gluten free - in particular, the regular lotion, the lip balm, and the styling glue? I emailed the company but have yet to get a response.

I have had horrid panic attacks for as long as I can remember. I saw a therapist for a very long time and only stopped seeing her after 6 months of being gluten free - that is how long it took me to feel somewhat stable. I still have those panic attacks, but they are much better now than they were pre-diagnosis (one of my longest lasting symptoms of a glutening is anxiety). It takes a different amount of time for everyone, so don't be discouraged if you are still feeling anxious. But I definitely support seeing a therapist and "talking it out" - it truly does help.
But I definitely agree with your post - anxiety is a big part of celiac disease. In the beginning, the overwhelming task of planning, whether it be meals or, like you, vacations, can cause anxiety BIG TIME. For me, it was the frustration and I would get extremely ornery when I would go grocery shopping because I had no clue how to shop.

I've made a similar casserole with the corn tortillas like juliebove... but I did it this why because I can't make regular enchiladas without the tortilla cracking open! Still tastes good though.
Can anyone successfully make enchiladas without split tortillas?
I really like the cornbread idea... it would be like that Amy's frozen enchilada pie thing.

4. Teabags. Yep. I got glutened by tea. Always read the ingre3dients-- never assume.
I second you on the tea bags. They didn't happen to be the Tazo green ginger bags, did they? Best tea ever... and now I can't have it.
Also: salad dressing. I was an airhead and forgot to read the label, thinking "Caesar dressing should be safe..." WRONG. I paid for that one... big time.
And lastly, grapefruit shampoo.I wash my hair the morning after I buy it, thinking "Wow - this smells really good". I started to get sick later in the day and couldn't figure out why. I tell Adam, my fiance, and he says "Uhh... your shampoo clearly states "wheat"" (he is allergic to SLS).

I finally got an email back from Aldi about the labeling on some of the products I either have purchased or have been interested in purchasing, but did not know if they were safe. Anyone else find it odd that mayonnaise is not safe?

I was told, by a Culver's employee, that their fries are safe. I got really sick after eating those. I also got sick after eating one of their Ande's concrete mixers, so now the only thing I order there is the banana milkshake and haven't gotten sick from that.

I am in the same boat... I have had symptoms since birth. My mom told me the only thing she could feed me when I was a tot was meat and veggies/produce. If she tried something else, I was absolutely unbearable - screaming, crying, etc. Well yeah... I was in pain! And my pediatrician just told her I was "finnicky". Yeah... that didn't provide much comfort. Then, I started getting migraines at 8 years old. I have had 6 MRIs for migraines in my life. At 8, they told my mom I had migraines because I was ADD. So I was put on a medication that made my panic attacks come out from hiding. Ten years later, at age 18, still on this ADD medication, I was told my panic attacks were caused by Bipolar disorder. Well... four more medications. AT age 20, I stopped taking everything. I knew I didn't have ADD or Bipolar disorder. Finally, at 21, I saw ANOTHER new doctor and she almost immediately ran tests for Celiac disease. After all that time, pain, and medicine, I FEEL BETTER.
But with all of that aside, I am not going to lie, I still get angry (and so does my mom), but I am glad, extremely glad, that I know now. I feel better now than I did as a child. I appreciate things more. I learned how to cook and bake out of this - dishes that I never would have imagined I would have liked. I learned how to grocery shop and how to pick the best produce available. So in that sense, I am grateful.
But seriously... people need to know about celiac and need to get tested for it if they suspect that it could be a problem.

One thing I do is write every symptom down that I get during the 5 miserable days - I do this because (1) I like to track stuff like that and (2) I think my sister and my mom have undiagnosed Celiac disease and this info may help them someday (or someone else who is newly diagnosed - who knows?). I also eat very simply - lay off the corn, soy, and milk products (I try to not eat too much of any of these as it is, but after a glutening I find that these make me SUPER bloated... among other things ). And drink a lot of water and bring Advil and Pepcid with me everywhere because the biggest symptoms for me are migraines and stomach pain and back pain.
Oh, and I warn my fiance and my family - they actually appreciate that.

Ya know, I just got back from my fiance's parents house and I was talking to his mom about it (who has absolutely NO understand of celiac, by the way... she thinks it is a choice, not something I need to do). She loves her rum, but only drinks it with soda. She tells me that the sugary soda mixed with liquor is a big problem for a lot of people (including her) and drinking water while imbibing helps her a lot, especially if she drinks a big glass of water just before bed.
Who knows? I guess I'll just revert back to not drinking often like I always do.

My fiance is allergic to sulfites (anaphylaxis, asthma attacks, etc.) but the only things that bother him (and by bother I mean send him to the ER) are wines, premade mixed (like margarita mix), frozen potatoes, and grapes.
Do sulfites in frozen potatoes and grapes bother you, too?

I don't drink very often. And when I do, I very rarely get drunk - it takes kind of a lot for me to get drunk and it always has (which is surprising because I am a pretty small girl). Anyway, I have noticed that, lately, whenever I drink alcohol, no matter how much, the next morning I wake up with a pounding headache and just feel crappy. For example, last night I went to a wedding reception for someone I work with. I had a few whiskey and cokes (my drink of choice). I was not by any means drunk at any point in the evening. Compare that to when I was in college two years ago and I could drink A LOT more and be visibly drunk (not some of my proudest moments), but feel ok enough to go to 8am class the next day.
Even before my diagnosis, I could never drink beer without almost immediate vomiting (hello foreshadowing!). I've stuck to wine and hard alcohol. But ever since going gluten free, I cannot even have ONE drink without feeling like absolute crap the next day.
Anyone else have this problem? If you do, is there a way to remedy it (besides the obvious don't drink)?

ugggh, I saw this too. The worst new walmart labels are the ones that say "naturally gluten free" then says on the same label "WARNING- may contain wheat"...drives me bonkers!
WOW - that is absolutely unreal. Is that even legal? I'm not too clear on the laws regarding labeling. If it is legal, then that is just moronic, IMO.
What kind of products at Walmart say that?

WOW -- good for you for being a big enough person to realize that she needs this diet to feel better. I can think of quite a few people close to me who really have no desire to understand (if someone truly does not understand that is one thing. But if someone is ignorant enough to know what is wrong and make a point of to ridicule/humiliate/guilt me... shame on them). It is quite admirable to do that.
I really enjoy reading other people's situations in terms of one partner has celiac and the other does not. I definitely think it is an issue of "do what works for you". For me, I make 90% of the meals and my cooking repertoire includes no gluten (I am the one with celiac). My fiance rarely cooks, but if he does it is gluten free. If need be, he will have a glutinous hotdog/hamburger bun (but usually goes without). If he needs pizza he orders the regular kind and picks up something for me to eat from the grocery store on the way home.
All in all, thanks for sharing that

My favorite crockpot recipe is potato leek soup:
4 cups sliced potatoes
3 cups sliced leeks
1 bunch green onions
2 cups chicken broth (I use veggie broth)
6 slices bacon
1 1/2 cup milk
1 cup shredded cheese
All the ingredients except the last two go in, cook on low for about 8 hours. In the last 1/2 hour of cooking add the milk and cheese. Then mash or use a stick blender to make smooth.

It was the "Coup de toe" episode (I don't know if that was what it is called - but I remember that phrase). Anyway, George is talking about how the second toe outgrows the big toe and becomes captain of the foot. I think it was earlier on in the show's run, if I remember correctly...

That reminds me of George Costanza on Seinfield! The one where he breaks up with the woman because she is wearing flip flops and one toe goes over the edge of the flip flop...
Yeah... in addition to my second toe being longer than the first, it is curved (I took pointe lessons at a very young age and my feet paid for it).

I was diagnosed (very unscientifically) with lactose intolerance at birth. I believe my doctor saw symptoms of celiac disease and put the "lactose intolerance and IBS" stamp on me. The I was diagnosed with celiac about a year ago. For me, after six months, I could handle lactose again, in small amounts. I can put real skim milk in my chai latte every morning and not embarrass myself - but I still can't just drink a glass of milk.
I think your gut just needs to heal for awhile & I think that is very common during "recovery" - in the beginning, for me at least, too much fiber would do more harm than good.
